台北中山區有一家兩層樓的餐廳 – 香頌私宅, 也是松江南京捷運站附近嚴格採預約制的餐廳之一. 這次很榮幸有機會二訪此餐廳品嚐他們的新菜單.
There is a two-floors restaurant building at Zhongshan District. Chanson Bistro is one of the restaurants that insists at reservation policy. Now, I have the opportunity to visit the second time to try out their new menu.

上次一訪的時候是晚餐時段, 這次好奇地選擇了中午用餐時間, 按了前門的電鈴, 從炎熱夏天正午時走進香頌私宅餐廳, 店家細心地為顧客著想, 將跟 “ Duchamp Bistro” 一樣的紅絲絨布幔隔開用餐地區與前門, 讓炙熱空氣不會影響到用餐氛圍, 這次特別地將圓桌包廂和二樓室外風景照下來作紀錄, 我個人認為二樓比一樓更適合辦品酒會與宴會.
Last time I visited here is dinner time. This time, I choose lunch time. I rang the door bell as usual. The restaurant use the red curtain, just like at “Duchamp Bistro”, to separate the door and the dining area in order to keep the cold dining area. The second floor is suitable for events.

這次受邀, 餐廳準備相當多品項, 除了一人套餐外, 也有單點料理品項, 我會先從套餐開始寫.
The restaurant prepared many dishes, including one-person set and single dishes. I will start with the one-person set.

佐餐麵包

香頌私宅餐廳提供的麵包抹醬有兩種, 左是風乾蕃茄起司醬, 右是香草奶油醬. 溫熱麵包抹上香草奶油醬顯得較中規中矩. 起司醬上雖然有少許紅色的蕃茄粉末, 但依舊是以起司風味為主導,我是較喜歡風乾蕃茄起司醬.
The bread spreads have two types- Dried Tomato Cheese (left) and Vanilla Butter (Right). I personally prefer the the dried tomato cheese since the cheese is always my first choice instead of butter.

 

蕃茄蝦汁蔬菜湯與北寄蛤

Minestrone Soup with Spisula

當我在菜單上看到這一大串的湯名時, 以為這只是一碗平凡常見的法式蔬菜湯, 多數餐廳的蔬菜湯幾乎都是軟爛高麗菜配上蕃茄湯. 孰不知品嚐第一口湯汁時, 不經意被橘紅色湯頭裡的海鮮風味迷住, 就跟當初我在 “50/50 Cuisine Française” 吃到龍蝦濃湯的驚艷感覺一樣. 主廚解釋蝦汁湯頭特別加入炒櫻花蝦後, 再熬煮長達五小時, 海鮮香氣遠遠超過蕃茄與蔬菜風味, 湯裡的高麗菜相當清脆且份量多, 北寄蛤的點綴將整道湯品在視覺上升級, 相當推薦這一道湯品.
When I see “Minestrone Soup with Spisula”, I thought it is just regular tomato soup but with fancy names. However, I am very surprised that the soup stock is full of seafood aroma. The last time that I drink this kind of delicious soup was at “50/50 Cuisine Française”. The chef explained that they put fair amount of stir-fried sakura shrimps along with other shrimps to stew over 5 hours. The seafood flavor is thicker than tomato and vegetable flavor. The cabbage is unbelievable crisp. the Spisula also upgrades this soup dish into a fine dining level dish.

 

沙拉: 酥炸生蠔和紅椒醬與芝麻葉油

Salad Fried Oyster with Sweet Pepper Sauce and Arugula Oil

生蠔來自日本廣島, 視覺上並沒有像多數日式豬排店廣島炸牡蠣乾扁,與 “ㄧ膳食堂” 的酥炸牡蠣最大的不同是, 香頌私宅餐廳的炸生蠔有較薄麵衣, 吃起來並沒有過多澱粉味, 牡蠣的海鮮風味濃郁, 很難得吃到每一口皆是肥美多汁. 橘黃色的紅椒醬只帶給炸生蠔少許辣味, 但並不是很明顯.
The oyster is from Hiroshima, Japan. The size is medium size with thin breaded coating, unlike in “Ichizen restaurant”.Chanson Bistro’s fried oyster is full of seafood flavor and with juicy texture. There isn’t any extra starch flavor. The orange-yellow sweet pepper sauce only brings hints of spicy to the tastebuds.

 

前菜: 油封章魚佐芒果莎莎

Squid with Mango Salsa

當服務生上這盤冷沙拉時, 特別交代白色小石頭不能食用, 當時我原本以為是白色棉花糖, 整道料理視覺上跟 “nkụ Taipei” 一樣頗具水準, 易脆薄片與杏仁瓦片一樣皆是用蛋白製作而成, 將章魚伴隨芒果切塊放入口中, 新鮮芒果的甜在口中散開, 讓平淡的章魚多些精彩.
This cold dish is served with pan. The small white subjects are stone, which is
inedible. The dish display design level is as high as “nkụ Taipei”. The crispy pastry is made with egg white. When taking the bite, the sweet mango flavor brings more flavor into the dish than the squid.

 

主食: 橙汁細扁麵和嫩煎鴨胸與紅椒孜然粉

Duck Breast with Orange Sauce Linguine and Cumin

酥脆鴨皮, 厚實油脂, 細緻瘦肉, 一層層堆疊起來, 成為這道料理的亮點, 宜蘭櫻桃鴨肉質雖然公認肥美, 但料理手法多少會影響到口感, 五分熟的瘦肉顏色粉嫩, 咬起來如預期地鮮嫩, 孜然粉的辛香讓鴨肉吃起來並不會過膩, 義大利麵則是淋上少許橙汁, 硬度恰好並不會軟爛, 整體在鹹與甜之間平衡, 若將這道料理作為主餐也是會相當受歡迎.
Crispy Duck skin, thick fatness and tender meat layered up into the perfect main character of this dish. The Yilan cherry duck is considered the high-quality duck in Taiwan. However, the chef’s cooking skill also dominate the delicious level of a dish. The medium-rare meat is tender as expected and taste delicious with cumin. The Linguine texture is hard. with small amount of orange sauce. The dish is balanced well with saltness and sweetness.

 

 

主餐: 現流季節海魚與魚汁香草蟹肉醬

Main Course: Seasoning Current Fish with herb cup dip

兩塊鮮嫩龍膽石斑魚放至象白色蟹肉醬上, 比 “大初鐵板燒“的奶油蘑菇醬更濃郁, 輕鬆切開厚實魚肉放入口中, 其實魚肉不沾醬也相當不錯, 皎白筍與玉米筍皆相當脆, 烤高麗菜苗更是讓整道料理不會過膩.
Two pieces of Queensland Grouper are placed on the white creamy sauce. Unlike “Da-Chu Teppanyaki”, Chanson Bistro’s sauce is crab sauce instead of mushroom white sauce. The fish is tender without any fish bones. The bamboo and the baby corn are very crispy. As for the grilled cabbage, it is crisp and clear the tastebuds from the creamy sauce.

 

甜點: 檸檬慕斯塔和炙燒蛋白霜

Lemon Tar with Meringue Flambe

香頌的檸檬塔並不像 “Chou Chou 法式料理餐廳”的檸檬塔, 形狀並不是圓型, 而是長條狀, 風味並不會過酸, 帶有檸檬清香, 可惜的塔旁邊的餅乾稍微過硬, 切的時候有點困難.
Their lemon tart is different from “Chou Chou French Restaurant”. Instead of round shape, Chanson Bistro’s lemon tart is long shape. The flavor is not too sour, instead the lemon flavor is refreshing. The cookie around the tart is a bit difficult to cut though.

 

冰伯爵紅茶

Ice Earl Grey Tea

餐廳內有專業的咖啡機, 但我還是點了唐寧品牌的冰伯爵紅茶, 雖然無糖, 但不乾澀.
The restaurant has professional coffee machine. But, I still order Twining brand Earl Grey ice tea. It is not bitter.

西班牙烘蛋

Tortilla de Patatas (Spanish Omelette)
Price: NTD $380

主廚將熱騰騰會導熱的鐵鍋放在盤子上, 目測與 “PS Tapas” 的西班牙烘蛋份量一樣, 不同的是烘蛋口感偏濕潤, 適量黑橄欖讓這道料理與眾不同, 烘蛋剛開始是鬆軟, 當料理稍微降溫後, 切開烘蛋時就像法式鹹派紮實, 建議四人分享這道單點料理.
The chef place the hot iron pan on the plate. Spanish Omelette size seemed to be the same as “PS Tapas”. There are fair amount of olives inside the Spanish Omelette. The texture is moist but fluffy when the dish is hot. When the dish got cold, the texture becomes like Quiche. I would suggest to share this dish with friends instead just eating alone.

 

蒜辣炒鮮蝦與玉米煎糕

Fry Garlic & Chili Shrimp with corn Cake
Price: NTD $350

溫盤裡有5 ~ 6 隻鮮蝦, 吃起來脆度高, 但偏中辣, 刺激著味蕾, 建議搭配綿密玉米煎糕, 口感極像馬鈴薯泥, 建議這道料理要趁熱吃.
There are 5 ~ 6 shrimps with crisp texture. However, the spicy flavor stimulate the tastebuds. I would suggest to eat the shrimp with the corn cake, which is creamy taste like mashed potato. I would suggest to eat this dish while it is hot.

 

香橙鼠尾草烤蝴蝶雞與香料堅果

Orange Herbal Grilled Chicken with Nuts
Price: NTD $870

蝴蝶雞是放山雞, 整隻全雞的Size不大, 稍做調味的雞肉烤得微焦, 雞肉較有彈性且不會乾澀, 堅果深藏不露在盤底, 放置一旁的烤馬鈴薯搭配滴下的雞油相當搭配, 由於雞肉只有四塊, 建議兩人或四人享受.
The whole chicken size is not large. The chicken is grilled a bit dark, but the meat is not dry. Instead, it is a bit juicy with fair amount of fats. The nuts are hidden at the bottom of the plate. I love the grilled potato since it tastes great pairing with the chicken fats. Since there are only 4 pieces. I would suggest 2 or 4 people to share this dish.
