文火處方料理所是我的台北餐酒館推薦之一 , 最主要原因是文火處方菜單與小黑板美味且價格合理. 也在我的信義安和美食推薦名單裡.
AN KITCHEN restaurant is one of my Taipei Bistro recommendation list. The main reason would be the An Kitchen menu dishes are delicious and price-reasonable. It is also on my Xinyi Ante Restaurant recommendation list.

♛ 我的台灣餐酒館定義
1.餐廳可以單點菜餚.
2. 台北餐酒館為西式為主, 但也有少部分是中式/日式/韓式餐酒館
3.餐廳販售總共酒款超過 5 款, 不拘限葡萄酒, 威士忌, 精釀啤酒,清酒, 調酒
備註: 餐廳可歸類於餐酒館若符合以上所有項目. 由於台灣與國外用餐文化不同, 我對餐酒館的定義頗為廣泛.
♛ My Definition of Taiwan Bistro
1. The restaurant menu must have à la carte dishes.
2. Most Taipei Bistros are western style. Only a few Taipei Bistros are Taiwanese/Japanese/Korean Bistros
3. The restaurant offers more than 5 alcohol items, which applies for wines, whiskeys, craft beers, and sakes.
Remark: The restaurant is categorized as bistro if qualified for ALL above definitions. Due to the difference of foreign and Taiwan dining culture, I am more opened to the Taiwan Bistro definition.

文火處方料理所訂位方便且中午有營業
An Kitchen reservation is convenient and opens during lunch time
文火處方料理所 1.0 在舊地址時 , 我有去過一次. 這次文火處方料理所餐廳搬到新地址, 裝潢與營業模式也更新成 2.0. 新餐廳依舊靠近信義安和站2號出口. 餐廳訂位是 inline 訂位 (Link) , 在訂位的同時需要先預訂菜色. 低消是 NTD $600/人. 請注意營業時間 , 平日中午與夜晚有營業 , 但是週末沒有營業.
I visited the old A Kitchen restaurant 1.0 once. Now, they moved to a new location, which is still near Xinyi Anhe Metro Station. They also upgraded their indoor design and operation style to 2.0. You would need to reserve via inline (Link). The miniemum charge is NTD $600/person and also you would need to reserve dishes in advance. Please note that operation hour – they are opened during weekday lunch and dinner. But, they are closed on weekends.

文火處方料理所只收洗杯費
An Kitchen only charges wine glass wash fee
因為要賺酒水費, 很多台北餐廳與餐酒館都是收高額開瓶費. 只有少數餐酒館是收洗杯費 ( 例如: “黑馬小廚” 與 “Allez Bistro” ) . 在文火處方料理所只收洗杯費 NTD $100/杯. 餐廳小黑板也不定期更換酒類.
Because the alcohol margin are hight , many restaurants and bistros charge high corkage fee. Only a few bistros charges low and reasonable glass wash fee (For example “Heyma Restaurant” and “Allez Bistro”) . An Kitchen only charges glass wash fee NTD $100/glass. They also update their alcohol items from time to time.

薑燒伊比利豬

文火處方料理的老闆不定期飛到日本餐酒館用餐找靈感 , 不斷為餐廳的小黑板菜單注入創意 , 更新頻率高. 薑燒豬肉被認定是常見的日本佐飯菜餚或是酒餚. 文火處方料理所主廚則是將其菜餚升級. 選用油脂豐富的伊比利豬肉, 切成薄片, 入口鮮嫩多汁. 最令人印象深刻則是醃漬紅心芭樂 , 搭配肉入口則是有酸甜與鹹香的多層次風味. 這一道應該可以算是我 2024 年吃過最優秀且具有巧思的菜餚之一. 也是因為這一道菜餚讓文火處方料理所成為我的 Top 5 台北餐酒館之一.
The owner regularly travels to Japanese bistros for inspiration, constantly infusing creative ideas into the restaurant’s blackboard menu, which is frequently updated. Ginger pork ( Shogayaki) is widely recognized as a common Japanese rice accompaniment or drinking dish. However, the chef at has elevated this dish to a new level. Using Iberico pork with its rich marbling, the thinly sliced meat is tender and juicy with every bite. The most memorable element, however, is the pickled red guava. When pairing with the pork, creates a multi-layered flavor profile of sweetness, tanginess, and savory richness. This dish is undoubtedly one of the most outstanding and innovative I’ve had in 2024. It is precisely because of dishes like this that Simmer Recipe Cuisine has earned a spot in my Top 5 bistros in Taipei.

大蛤與小卷
Large Clams and Squid

我一直很喜歡蛤蜊類的菜餚, 更喜歡主廚們完全呈現蛤蜊的鮮味. 海大蛤的蛤蜊肉如預期非常地多汁. 現流小卷則以其柔嫩的口感與豐富的份量,為整道料理增添層次感. 運用蝦濃湯的作法跟 “又一間商行” 類似, 將整道菜餚賦予更直球般的鮮味衝擊. 我推薦點.
I have always been a fan of clam-based dishes, especially those where chefs fully showcase the natural brininess and freshness of clams. The large sea clams in this dish were, as expected, incredibly juicy. The fresh squid, with its tender texture and generous portion, added an extra layer of depth to the dish. The use of a shrimp bisque preparation method, similar to that of “ Yu Yi Jian Spaghetti Restaurant ” infused the entire dish with a bold, straightforward burst of umami flavor. I highly recommend trying it.

慢燉紅酒澳洲和牛頰
Stewed Wagyu Beef Cheek with Red Wine

我之前並不是很滿意在 “老烤箱” 吃過的紅酒慢燉牛頰玉米糕. 文火處方料理的慢燉紅酒澳洲和牛頰才是我喜歡的版本. 將綿密的薯泥擺放在一旁, 讓經典自製的紅酒醬汁能夠毫無保留地展現其精髓. 和牛頰非常嫩且美味. 紅酒醬汁濃稠卻不過鹹. 搭配牛肉很適合. 我喜歡的另一個原因是這道菜的和牛牛頰份量適中,讓整體價格更為親民. 如果有2人以上聚餐, 我會推薦這一道菜餚.
I wasn’t particularly satisfied with the Guancia di Manzo Brasata con Polenta. I had at “ANTICO FORNO“. However, the red wine-braised Australian Wagyu beef cheek is precisely the version I prefer. The velvety mashed potatoes are placed thoughtfully on the side, allowing the house-made classic red wine sauce to fully shine. The Wagyu beef cheek is incredibly tender and flavorful, with the red wine sauce offering a rich and concentrated texture without being overly salty, making it a perfect complement to the beef. Another reason I appreciate this dish is its well-portioned serving size, which makes the pricing much more approachable. For groups of two or more, I would highly recommend this dish.

乾酪櫛瓜蘆筍
Zucchini & Asparagus with Cheese

櫛瓜是我在餐酒館或日式居酒屋常點的一道菜餚. 多數餐廳採用炙烤的方式烹調,並保留明顯的烤痕 (例如 “AJ Grill” 與 “破壞者珈琲食堂“ ). 文火主廚則是保有櫛瓜的多汁與爽口.配刨絲乾酪與橄欖油,將櫛瓜與蘆筍完美串聯. 不錯吃可作為餐酒館的解膩代表菜餚之一.
Zucchini is a dish I often order at gastropubs or Japanese izakayas. Most restaurants cook it by grilling, leaving noticeable char marks (such as at “AJ Grill” and “Provider Coffee Shokudo“). However, the chef at An Kitchen Restaurant preserves the zucchini’s juiciness and crispness. Paired with grated cheese and olive oil, the zucchini and asparagus come together perfectly. This dish is delicious and makes for a great option to cleanse the palate at any gastropub.

現流紅魽魚
Red Snapper

紅魽魚是在台北 Fine Dining 餐廳常見到的魚類食材. ˊ在 “侯布雄” 吃到生食紅魽魚佐酪梨, 而在 “蘭 Orchid “ 則是吃到淺粉色生紅魽魚. 文火則是將紅魽炙燒成半生熟度, 如果吃起來更細緻會更好.
Yellow Tail Fish ingredient is quite common at Taipei Fine Dining Restaurant – For example “L’Atelier de Joël Robuchon” and “Orchid” . In An Kitchen, chef presents the red snapper to a medium-rare doneness. It would be even better if the texture were more delicate.
