黑馬小廚 2023 新開幕的台北義大利餐廳, 也是台北餐酒館推薦之一, 除了招牌 Chorizo 炒小卷, 黑馬小廚菜單也有手工義大利麵與單杯酒.
Heyma Restaurant is 2023 new Taipei Italian Restaurant. It is one of the Taipei Bistro recommendation. Besides Squid with Chorizo dish, they also offer home-made pasta and single glass of wine.

Heyma Restaurant Reservation and Minimum Charge

黑馬小廚地址是台北市松山區寶清街71號, 離南京三民捷運站1號出口約 10 ~ 15 分鐘路程, 店內有單人高腳椅與適合朋友聚餐的多人座位區. 黑馬小廚訂位是用 inline ( Link ) . 黑馬小廚低消備註在菜單上, 黑馬小廚是以單點為主, 2023.7月的低消是 NTD $300/人, 非常地合理與平價.
Heyma Restaurant address is No. 71, Baoqing Street , Songshan District, Taipei City. It is about 10 ~ 15 walking minutes from Exit 1 of Nanjing Sanmin Station. There are counter seating area and table seating area. You will need to reserve via inline (Link) . Hayma Restaurant offers al la carte dishes. 2023.July minimum charge is NTD $300/per person, which is quite reasonable and price-friendly.

Heyma Restaurant Corkage Fee

黑馬小廚並沒有開瓶費, 只有洗杯費 NTD $80/杯. 黑馬小廚也有販售單杯酒與精釀啤酒.
Heyma Restaurant doesn’t charge corkage fee. However, there is a cleaning fee NTD $80/wine glass. They also offer single glass of wine and craft beers.

Heyma Restaurant Menu

除了紙本菜單與飲料菜單, 也有不定期更換的黑板菜單, Chorizo 炒小卷 與西西里白帶魚卷是在黑板菜單, 換句話說, 去用餐不一定會有那兩道受歡迎的菜餚.
Besides regular menu and drink menu, there are also daily menu at the black board. Squid with Chorize dish is also one of the daily menu dishes. In another words, there is a chance that you might not able to order the famous squid dish.

在台北義大利餐廳吃過蠻多“型態”的小卷, 例如 “RADICI TAIPEI “ 的燉煮小卷. 端上桌時, 小卷數量比預期地多出許多, 適合 2 人分享. 此道菜餚與 “花滔廚房” 的東北角小卷菜餚概念有點相似. 小卷的軟鮮風味令人印象深刻 , 橄欖油突顯 Chorizo肉末賦予的鹹香, 麵包片搭配橄欖油是經典組合 , 整體好吃的程度極高, 我非常推薦這一道菜餚.
I tasted various types of squid dishes in Taipei Italian restaurants, for example “RADICI TAIPEI “ stewed squid. When serving, there are more squids than expected, which is perfect for sharing between 2 people. This dish has a concept similar with the “Baby Squid dish” at “La Cucina di Flora”. The tenderness and fresh flavor of the squids leave a lasting impression.The olive oil highlights the savory taste of the chorizo. When eating together with the bread slices and olive oil, it creates an incredibly delicious combination. I highly recommend this dish.

牛臉頰肉醬波浪寬麵

黑馬小廚菜餚皆是採用手工義大利麵, 波浪寬麵是緞帶形狀義大利麵的一種, 在台北義大利餐廳比較少見, 相比一般的手工寬蛋麵,波浪寬麵更能完美吸附醬汁. 端上桌時, 堆疊成小山的麵條已與肉醬均勻攪拌, 夾起波浪寬麵即可聞到炒牛臉頰肉醬的濃郁肉香, 撒上的起司增添了口感的豐富度, 非常美味, 我一訪時就是點這一道, 自己可以獨佔這一盤, 如果你是肉食者, 我個人會推薦點這一道菜餚.
Heyma Restaurant chef always make the homemade pasta. Mafaldine is a type of ribbon-shaped pasta, which is less commonly seen in Taipei Italian restaurants . Compared to tagliatelle pasta, mafaldine is able to absorb more sauce. When this dish is brought to the table, the mound of pasta is already evenly mixed with the meat sauce. As lifting the pasta, you can immediately smell the rich aroma of the sautéed beef cheek ragu. The cheese adds a richness to the texture. It is delicious. I definitely recommend this dish if you love the meaty aroma and flavor.

羊膝義式麵疙瘩

傳統米蘭燉羊膝在義大利的餐廳很常見 , 在台北的義式餐廳反而不常見, 我上次吃到羊膝是在 “Saveur 歐洲風味餐坊”. 朋友輕鬆地將骨頭與羊肉分開, 肉質保持著鬆散而不乾柴, 徹底地入味. 經過長時間燉煮的醬汁是最令人著迷的部分, 搭配麵疙瘩更是令人想一再品嚐, 香料點綴與酸豆口感不可少. 若是喜歡吃羊肉, 我個人會推薦點.
Milanese-style Braised Lamb Shank is commonly found in restaurants across Italy, but it is relatively rare in Taipei Italian restaurant. The last time I had lamb shank was at “Saveur Restaurant”. With ease, my friend separated the bone from the tender meat, which remained moist and flavorful. The most captivating element was the sauce, simmered for a long time, which perfectly complemented the dish. Paired with the gnocchi, it was a delightful combination that made me want to savor every bite. The addition of spices and the tanginess of the pickled beans added the perfect finishing touches. If you are a fan of lamb, I personally recommend giving it a try.

生胭脂蝦/鮪魚/粉紅青醬雙槽麵

Casarecce with Pesto alla Trapanese

我一直很喜歡以生食級胭脂蝦為主角的歐式菜餚, 之前最喜歡的是 “Oli 餐酒館”. 也在我在“Fogant 法式餐廳 ” 吃過生食級鮪魚塔塔 ( Tartare ) . 黑馬小廚的生胭脂蝦與鮪魚頗新鮮, 粉紅青醬 ( Pesto alla Trapanese ) 源自義大利西西里島, 與雙槽麵一起入口, 味蕾感受番茄與羅勒的風味,橄欖油和杏仁則為這道菜餚增添了更多層次的風味. 每個食材都是這道菜餚中的主角, 缺一不可. 如果可接受生食級海鮮, 我會推薦點這一道菜餚.
I have always been fond of European dishes featuring sashimi-grade red prawns (For example at “Oli Bistro”). I have also enjoyed tuna tartare at “Fogant French Restaurant.” The red prawns and tuna at Heyma Restaurant are equally fresh. The Pesto alla Trapanese, originating from Sicily, Italy, pairs wonderfully with the Casarecce. The palate can sense the flavors of tomato and basil classic combination . The olive oil and almonds adds further layers of flavor to this dish. Each ingredient plays a crucial role. If you like to eat sashimi-grade seafood, I would suggest you to order this dish.

橄欖油大蒜蝦

Shrimp with Garlic and EVOO

這一道算是經典也在歐式餐廳常見的菜餚, 雖然沒有 “Jarana“ 西班牙蒜味蝦的熱騰騰視覺感, 蝦 Size 適中, 蝦肉充分吸收初榨橄欖油 (EVOO) 和大蒜風味, 很適合當下酒菜.
This dish can be considered a classic and is commonly found in European restaurants. This dish might not have the sizzling visual appeal of “Jarana” Spanish garlic shrimp. The shrimp absorbs the flavors of extra virgin olive oil (EVOO) and garlic beautifully. It makes for a perfect appetizer to enjoy with a drink.

炒軟絲

吃了一口,微辣的辣椒香氣在舌尖上蔓延, 橄欖油與米型麵的結合讓整道料理不會過於鹹香與油膩, 我替這一道菜餚取了綽號- 義大利版本的熱炒花枝下酒菜.
With each bite, the subtle spiciness of the chili lingers on the palate. The  combination of olive oil and orzo pasta ensures that the dish is not overly salty or greasy. I’ve given this dish a nickname – the Italian version of a flavorful appetizer to enjoy with drinks.

 

牛舌綠醬汁

Beef Tongue with Salsa Verde

牛舌已經不再僅限於台北的日式燒烤店或中式餐廳, 近期更成為許多台北西式餐廳的重要食材之一, 例如 “Masa Taco” 的煎牛舌 Soft Taco. 更久之前在 “山男”也吃過另類的牛舌拌麵. 這次在黑馬小廚吃到一整片厚度適中且嫩度極佳的牛舌. 橄欖油與巴西利醬調製的青莎莎醬比預期地多, 足夠搭配這一盤牛舌, 建議多人一起分享這一道菜餚.
Beef tongue is no longer limited to Japanese and Chinese restaurants in Taipei. It has become an important ingredient in many Western-style restaurants, such as the Grilled Beef Tongue Soft Taco at “Masa Taco.” I’ve also had a unique beef tongue noodle dish at “Yamasan Taipei” in the past. This time at Heyma Restaurant, I enjoyed a thick and tender slice of beef tongue. The Salsa Verde, made with olive oil and basil, was generously portioned and perfectly complemented the beef tongue. I would recommend sharing this dish with others.

日本茄肉醬千層

Eggplant Parmigiana

當品嚐到黑馬小廚的日本茄肉醬千層時, 可感受到麵皮微厚嚼勁口感, 並沒有感受到茄子軟爛口感, 搭配莫札瑞拉起司菜餚設計是經典組合, 這一道菜餚遠比 “慢慢弄民生店”的炙燒起司茄子美味許多.
When tasting this Lasagna, the slightly thick and chewy texture of the Parmigiana is evident. I didnt sense the overly soft texture of the eggplant. The combination of mozzarella cheese is a classic pairing. Overall, this dish tastes better than the Grilled Cheese Eggplant dish at “Cucina Man Mano.

佩科里諾起司松露直麵

Pecorino Romano Pasta with Truffle

我個人喜歡這一道裡的佩科里諾起司 ( Pecorino Romano ), 這款起司是綿羊奶乳酪, 搭配著切塊培根,為整道菜增添了豐富的口感和風味。相較於松露的風味,佩科里諾起司更加突出. 如果在小黑板菜單看到且接受羊奶起司, 我會建議點.
I personally enjoy the presence of Pecorino Romano cheese in this dish. Pecorino Romano is a type of goat cheese. Paired with diced bacon, it provides a delightful combination of rich texture and salty flavor. Compared to the taste of truffles, Pecorino Romano cheese stands out more. If you see this dish on the today’s special menu and like goat cheese, I would recommend giving it a try.

 

香煎章魚甜椒醬

Pan-Fried Octopus with Romesco Sauce

章魚腳在台北義大利餐廳很常見, 而且通常是搭配薯泥. 章魚搭配甜椒番茄辣醬( Romesco Sauce ) 則是在 “串串 23” 餐廳吃過. 黑馬小廚的香煎章魚好切易入口, 辛辣風味在微焦的香氣下展現, 我個人依舊最喜歡 “Solo Pasta”的拿坡里燉章魚.
Octopus ingredient is commonly found in Italian restaurants in Taipei, often paired with mashed potatoes. I have also had octopus with Romesco Sauce at “23 Grill Restaurant” . The pan-fried and seared octopus at Heyma restaurant is tender and easy to cut. There is spicy flavor that complements the slightly charred aroma. Personally, my favorite preparation of octopus is still the stewed Octopus dish at “Solo Pasta.”

布拉塔無花果醬沙拉

盤底鋪滿新鮮生菜,而布拉塔乳酪則放置於中央,頂部則覆蓋著美味的無花果醬。當朋友們切開乳酪時,可以隱約感受到進口起司般的彈性口感。搭配甜美的無花果醬,這道開胃菜味道相當不錯。如果正值無花果季節,我希望像「Wild Donkey 野驢餐廳」一樣能使用新鮮的無花果。如果有四個人以上的聚餐,我個人會推薦點這道菜來共享,可以一邊品嚐一邊等待主廚為我們準備其他的菜餚。
The plate is generously layered with fresh lettuce, with the creamy burrata cheese placed at the center, topped with delicious fig jam. As friends cut into the cheese, they can appreciate its imported cheese-like elasticity. Combined with the sweet fig jam, this appetizer offers a delightful taste. During fig season, I hope to see the use of fresh figs, just like at “Wild Donkey Restaurant” . If dining with a group of four or more, I personally recommend ordering this dish to share. You can savor it while waiting for chef’s dishes.

義式香腸貓耳朵

我目前在台北吃到最滿意的貓耳朵是在 “微巷義大利小餐館”, 黑馬小廚的貓耳朵麵體不錯吃, 因為當天有喝酒, 我比較希望香腸肉末或是醬料調味更爆香一些.
The most satisfying Orecchiette dish I have had in Taipei so far was at “Vicolo Trattoria”. This dish at Heyma restaurant is also delicious. But since I had drinks that day, I would have preferred the sausage and meat sauce to be more flavorful.

The abalone tastes above average, however, it is just personal preference.

在台北只在 “十方長私廚“ 吃過紙包魚. 在黑馬小廚, 我個人還是建議點其他義大利海鮮料理 – 例如 炒小卷.
I only tasted Poisson en papillote ( Fish in Foil) at “Kitchen 10 Taipei”. At Heyma restaurant, I would suggest to order other seafood dish, for example, the squid with chorizo.
