The Ukai Taipei 》在微風南山 46 樓美食餐廳品嚐日式割烹料理

THE UKAI TAIPEI微風南山美食景觀餐廳之一, 分為 Ukai 日式割烹Ukai 鐵板燒兩區, 我與朋友網路預約到 Ukai 割烹午餐時段.
The Ukai Taipei is one of the restaurants with views at Nanshan Breeze Mall. This restaurant is separated into two areas – Ukai Kappou and Ukai Teppanyaki.

The Ukai Taipei 為無菜單餐廳 The Ukai Taipei only offers Omakase Menu /Carte Blanche

2019 年新開幕 的 The Ukai Taipei 是台北微風南山 46 F 景觀餐廳, 與其他高空景觀餐廳一樣要搭獨立星空電梯直達 46 F, “新葡苑中餐廳 Shin Pu Yuan” 和 “番紅花 Saffron 46” 都在同一層樓. 出電梯後即可看到 Ukai 招牌. 進入餐廳後, 右邊是 Ukai 日式割烹區, 左邊走到底則是 Ukai 鐵板燒區, 兩區距離非常遠, 並不會互相影響. 店員會先安排至右邊的沙發等候用餐且遞上熱茶. 從 The Ukai Taipei 看出去皆是山景, 符合日本料理簡單樸實, 而非像 “和牛 47” 可看到台北101的時尚感.
The newly-opened The Ukai Taipei is located at 46F of Nanshan Breeze Mall. The customer would need to take the independent elevator to 46F. Both “Shin Pu Yuan” and “Saffron 46” are at the same floor. Entering the restaurant, the right hand area is Ukai Kappou . The left hand area at the end is Teppanyaki. Both areas won’t interfere with each other. Before seating, the staff would guide the customer to sit at the sofa to wait and enjoy a cup of tea. From The Ukai Taipei, you can see the mountain view instead of Taipei 101. The view is completely different from “Wagyu 47”.

The Ukai Taipei 訂位與包廂

The Ukai Taipei Reservation & Private Dining Rooms

與 “Logy Taipei” 一樣, Ukai Taipei 訂位可經由網站預約 ( https://www.ukai-tpe.com.tw/book/ ) , 無法直接 Walk-in. 若想訂包廂也可在 2pm ~ 5pm 電話預約 ( 02-7730-1166 ). 既然都來了, 就也順便來看 Ukai 鐵板燒區與包廂. 在輪椅可出入的走道區旁, The Ukai Taipei 鐵板燒區如圖一只有 10 個座位, 難怪如此難訂. 鐵板燒包廂則是與“晶華酒店 Robin’s 鐵板燒” 一樣隱密, 用餐時皆可看到山景, 以下短秒影片有更多包廂細節. Ukai 日式割烹區的板前位置只有14位, 可惜並不是靠窗無法看風景. 日式割烹區開放式區域座位較多, 而且是靠窗. 若是預算許可, 也可選擇小包廂, 如圖三.
Same as “Logy Taipei”, you could reserve seats via Ukai Taipei website ( https://www.ukai-tpe.com.tw/book/ ). No walk-in is accepted. If you need to reserve private dining rooms. You can call in to reserve between 2pm ~ 5pm (02-7730-1166). The teppanyaki public area has only 10 seats (no wonder it is difficult to reserve). There are also private rooms that can see the mountain view. The following short video has more details regarding private dining room. UKai Kappou has 14 seats, but facing the chef instead of mountain view. There are many public seats near the window. If you have enough budget, I would suggest to reserve the small private room (pic 2)

胡麻豆腐 Tofu with Japanese Sesame Sauce

這ㄧ道是當天最具爭議性, 也是朋友和我最喜歡的一道菜餚. 最具爭議性的原因是網路上有兩種說法, 第一個說法是 Ukai 胡麻豆腐並沒有任何豆類, 是以日本葛粉混入蕨餅粉製成, 第二個說法則是現場師傅告知這道 Ukai 胡麻豆腐是用日本北海道,佐賀及台灣高雄 9 號黃豆混合, 老實說, 我個人覺得比較像第一個說法, 因為口感吃起來像慕斯卻不時會有 Q 彈口感, 反而並不像大眾一般所認知的豆腐, 因為每口都太美味, 我就沒有繼續追問. 胡麻醬與濃郁花生醬堅果香氣裡藏著微山葵辛香, 誰能想到這道菜餚看似平凡卻吃起來驚豔.
This is the most interesting but yet the most delicious dish of the day. There are two sayings. The first one is this dish doesn’t contain any soybean at all. It is mixed with warabi mochi powder and root starch. The second saying would be this tofu is made with three types of soybeans from Japan and Taiwan. However, the mousse texture is unique and perfect.  I would assume it is the first saying. The thick flavor of sesame sauce and peanut sauce is perfect. My friend and I both like this dish.

 

四段重 Four Dishes

The Ukai Taipei 店員將已事先疊好的四道菜端上桌, 盛裝容器上的竹子代表節節高升, 隨後將每層方形飯盒展開放在桌上. 從右上方順時鐘開始介紹, 當天魚料是看日籍料理長決定, 生魚片包圍著洋蔥泥, 視覺呈現具有美感, 洋蔥的微嗆並沒有奪走主角生魚片的風采, 右下飯盒顯得有些擁擠, 原本以為鮪魚壽司是重點, 吃完這格後, 我最後最喜歡的反而是酥炸鮮蝦蓮藕餅,而且熱度和軟硬口感皆有. 左下烤鰻魚口感類似 “小倉屋”的薄且酥脆, 左上的花枝, 秋葵與山葵風味晶凍相當有創意. 每一款飯盒裡的菜餚皆是細緻.
The Ukai Taipei staff places each box on the table. At the upper right hand corner, it is the sashimi with refreshing onion paste. However, fish/seafood could be vary. At the lower right hand corner, I like the fried shrimp with lotus roots pastry more than tuna nigiri. The eel at the lower left side corner tastes a bit like the crispy and thin eel at “Kokuraya”. The upper left hand corner is the combination of squid, okra and wasabi jelly. Every dish is quite elegant.

蛤蜊絲瓜 Clam with Loofa

Ukai Taipei 師傅先將食材端出, 將絲瓜先下鍋, 與朋友聊天一不注意, 一道料理呈現在眼前, 蛤蜊比預期中更碩大多汁, 海鮮高湯味與絲瓜不違和.
Chef brings the ingredients out at the counter and puts the loofa into the pot. A few moments, the dish is ready. The clams’ size is larger and juicy than expected. The seafood broth and loofa is a perfect match as well.

 

花枝蛤蜊丸湯

師傅解釋花枝漿是用每日限量製作, 保持新鮮, 讓客人在板前看師傅熟練地將小蛤蜊放入花枝漿裡開始製作花枝蛤蜊丸, 不負眾望爽脆花枝丸相當美味, 可惜的是蛤蜊內餡與上一道蛤蜊絲瓜有重複到.
The chef mentions that the squid paste is daily with limited quantity. The chef stars to mix small clams with squid paste. The finished dish is delicious. However, the clam filling is overlap with the previous dish.

 

台灣桂丁雞土鍋炊飯 Free Range Chicken in Rice Pot

上次吃到土鍋炊飯是在 SOGO 樓上的 “EN 和食” , 肉品剛好都是雞肉, 只是 “EN 和食“的土雞肉塊稍微乾柴, Ukai Taipei 的桂丁雞肉切得較薄隱藏在飯裡, 肉品比一般肌肉嫩度高, 台灣桂丁雞在高級餐廳裡經常吃到, 例如 “天母鳥哲““. 我必需承認我很期待日本和牛出現在當天午餐菜餚裡, 可惜當天菜單和牛缺席.
I had the chicken in rice pot dish at “EN Japanese Cuisine Restaurant “. The chicken at “EN” is a bit dried though. Kai Taipei chef cuts the chicken into thin slice  and hides in between the rice and lotus root. The Taiwanese chicken meat is tender and delicious. You would see this Taiwanese chicken breed at most Taiwan high-end restaurants, such as “TORI TETSU Restaurant”. However, I was hoping for Japanese Waygu in The Ukai Taipei Lunch Menu.

紅味噌湯
Miso Soup

熱騰騰紅味噌湯不會過鹹.
The hot miso soup is not overly too salty.

 

焦糖布丁 Flan

Foodelicious 美味程度: 👍👍👍

圖一是我點的焦糖布丁, 確實是比 “橘色涮涮屋” 美味許多, 也不時地看到香草籽. 圖二是朋友點的是抹茶冰淇淋.
Pic 1 is the flan that I ordered. It tastes better than “Orange Shabu Shabu”. You could also see the vanilla seeds at the flan surface. Pic 2 is the green tea ice cream that my friend ordered.

日本柚子酒 Yuzushu

Foodelicious 美味程度: 👍👍👍👍

餐廳唎酒師選擇鳳凰美田柚子酒, 整體喝起來屬於淡雅型, 而不會像我在 “川賀居酒屋”喝的柚子酒如此甜膩.
The Yuzushu is refreshing. It is different from the Yuzushu that I drank at Kawaga Izakaya.
