Circum- 餐廳位於台北晶華酒店的 B2 . 餐廳地址是 台北市中山區中山北路二段39巷3號 B2 . 離中山捷運站大概 10 ~ 15 分鐘路程. Circum- 訂位透過 inline (Link) . 餐廳店面位置靠近林森北路的門口. 進入餐廳門口即可看到米其林一星獎牌, Tatler Best Restaurant 2025 , 與 500 盤獎牌.餐廳座位區有可看到廚房的高腳座椅 , 也有適合朋友聚餐或是約會的沙發座位區.
Circum is located on B2 of the Regent Taipei Hotel, at No. 3, Lane 39, Section 2, Zhongshan North Road, Zhongshan District, Taipei City. It’s about a 10 to 15-minute walk from Zhongshan MRT Station. You can reserve via inline (link). The dining space includes bar seats overlooking the open kitchen, as well as comfortable lounge seating ideal for gatherings with friends or date nights.

這次文章撰寫方式會是菜餚喜好排行榜, 並不是照套餐出菜順序. 這次我是吃晚餐, 中午套餐的道數較少 . 我最喜歡的梨花落雪菜餚與夜來香菜餚並沒有在午餐套餐菜單
This article will be in favorite dish rank list instead of following the actual course sequence. I tasted the dinner menu, and there are less dishes at Lunch Menu. My favorite pear dish and beef tartare dish are not Lunch Set Menu.

這一道梨花落雪的擺盤費時費工. 兼具優雅美感與精準技術. 最上層薄切水梨片透視度高. 入口感受到水梨的清脆 . 底層則是燕窩與馬斯卡彭起司的融合口感令人驚艷. 味蕾沉浸於於蜂蜜的甜美與水梨的清甜. 主廚 Leo 的 「 Mix and Match」概念非常成功. 讓這一道菜餚呈現不同層次美味與口感. 這是我當天最喜歡的菜餚.
This dish features a crafted presentation that is both elegant and refined. The thinly sliced pear on top is nearly translucent, offering a crisp and refreshing bite. Beneath it lies a surprising combination of bird’s nest and mascarpone cheese, which brings fusion of textures. The palate can sense layers of honeyed sweetness and the fruity flavor of pear. Chef Leo’s 「Mix and Match」concept is great. It creates a multidimensional flavor experience. This was my favorite dish of the day.

喜歡這一道菜餚並不是完全是奢華食材. 主廚選用日本A5 和牛上蓋作為牛肉塔塔基底 , 再將晶瑩剔透魚子醬鋪滿牛肉塔塔. 展現優雅的 Fine Dining 擺盤美學. 餐廳店員提到這一道菜餚的靈感是來自牛肉麵. 在疑惑的同時, 一入口感受到牛肉塔塔油脂在舌尖融化. 辣牛油與皮蛋黃賦予不同層次的鹹香, 勾勒出牛肉麵的經典風味. 搭配 Taco 脆片更有西式街頭美食風格.
I like this dish not because of its luxurious ingredients. Chef Leo uses Japanese A5 wagyu chuck flap as the base for the beef tartare, topping it generously with caviar. According to the restaurant staff, the inspiration behind this artwork comes from Taiwanese beef noodle. First bite revealed the wagyu’s rich marbling melting on the tongue. The addition of spicy beef fat and salted preserved egg yolk offers layers of savory flavors, which is similar with Beef noodle broth flavor . Paired with crisp taco chips, the dish takes on a playful Western Street Food twist.

這一道 「 七巧板 」是 Circum- 餐廳的招牌料理, 也是上桌的第一道菜餚. 逐一品嚐很有趣.

這七款開胃小品裡, 我最喜歡紅油螢烏賊與瑤柱烤麩. 螢烏賊是高級日料餐廳常見的食材. Circum- 主廚 Leo 選用日本富山灣螢烏賊. 我迫不及待品嚐川燙螢烏賊的鮮美. 佐以紅油炒手醬, 微辣提味, 令人回味. 另一道瑤柱烤麩則是如預期地美味. 烤麩吸收足夠紅燒醬汁, 每一口都讓人意猶未盡.
「 TANGRAM 」is the signature dish of Circum- restaurant. It is also the first dish on the set menu. The dining experience is playful

Among the seven appetizer-sized bites, my favorites were the Firefly Squid in Chili Oil and the Braised Wheat Glute. Firefly squid is a delicacy often seen in upscale Japanese cuisine. Chef Leo uses the Firefly Squid from Toyama Bay in Japan. The squid has its natural seafood flavor. The light simulation is from the house-made chili oil sauce, reminiscent of Sichuan wonton seasoning. As for the wheat gluten dish, it met expectations with its comforting familiarity—the gluten absorbed the rich soy-braised sauce thoroughly, making each bite deeply satisfying.

魚丸湯鮮少出現在桌宴,通常被歸類為台灣小吃. 但在 Circum,台南浮水魚丸以 Fine Dining 形式華麗登場. 主廚以豚骨、白蘿蔔與白胡椒熬製出清澈湯頭, 入口溫潤且尾韻微辛. 不同於常見的魚丸, Circum- 餐廳的魚丸是真鯛與干貝製作而成. 捨去傳統彈牙口感, 反倒有空氣感與細緻軟嫩口感. 整體不錯吃.
Fish ball soup is rarely seen in formal banquets and is more commonly categorized as a Taiwanese street snack. But at Circum, the Tainan-style floating fish ball makes a refined debut in fine dining form. Chef Leo creates a clear yet flavorful broth using pork bones, daikon, and white pepper. Unlike the typical fish balls, Circum’s version is made from red sea bream and scallops, offering a light, airy texture that is delicately tender. It’s an elegant reinterpretation that tastes quite enjoyable overall.

Circum- 餐廳不僅結合中式與西式料理手法, 在這一道菜餚更展現日式料理手法. 紫蘇葉包裹著日本鮫鰈 , 再以炸天婦羅型態呈現. 酥脆外層呈現細緻炸功.鮫鰈魚肉鮮嫩. 鮮紅特製辣椒醬賦予味蕾足夠的刺激感. 盤底的法式奶油醬汁( Beurre Blanc ) 扮演的角色則是平衡整道菜餚, 卻留下深刻印象.
At Circum, the restaurant not only blends Chinese and Western culinary techniques but also showcases Japanese influences in this particular dish. Japanese shabu flounder is wrapped in shiso leaves and presented in a tempura style. The crisp, delicate batter demonstrates refined frying skills, while the flounder remains tender. A house-made chili sauce provides a stimulating kick to the palate. Meanwhile, the French beurre blanc sauce at the base of the plate plays a crucial balancing role, tying the flavors together while leaving a lasting impression.

看菜餚名稱, 原本以為只是單純的明蝦西式料理. 主廚選用大尺寸東港明蝦,注入蝦漿後裹上杏仁角酥炸. 蝦漿搭配蝦肉勾勒出層次口感口感與海鮮風味, 比單吃明蝦有趣且美味許多. 盤中搭配脆口白蘆筍片與鹹香西班牙伊比利豬,為整道料理添上不同色調與豐富風味。
Judging by the dish’s name, I initially thought it would be a simple Western-style prawn dish.However, the chef selected large-sized prawns from Donggang, skillfully injected them with shrimp mousse, and coated them in crushed almonds before deep-frying.The combination of shrimp mousse and prawn meat creates a layered texture and a more vibrant seafood flavor, making it far more interesting and delicious than just eating plain prawn. On the plate, crispy slices of white asparagus and savory Iberico ham add contrasting textures and rich flavors, giving the dish greater depth and color.

此道並不在套餐菜單上, 這是每人都有的 Extra Dish. 蒼蠅頭內餡鹹香.春捲炸得細緻且酥脆. 不錯吃.
This dish isn’t listed on the set menu. It is an extra dish served to each guest.The filling, which is minced pork with chive flower, is savory and aromatic, while the spring roll is delicately fried to a crisp perfection.A pleasant and well-executed bite.

Circum- 餐廳以廣東撈飯的靈感創造這道菜餚. 主廚選用日本越光米,以蝦湯與花雕酒慢火熬煮,呈現略為偏軟的口感,與傳統廣東撈飯的爽彈米粒略有不同. 花雕酒與蝦湯所打出的泡泡酒香濃烈,略為掩蓋了日本赤海膽及其他海鮮的細膩風味.
Circum- Restaurant draws inspiration from Cantonese “lo fan” to create this dish.The chef uses Japanese Koshihikari rice, slow-cooked with shrimp broth and Huadiao wine, resulting in a slightly softer texture compared to the firm, bouncy grains of traditional Cantonese lo fan.The foam made from Huadiao wine and shrimp broth carries a strong aroma, which slightly overshadows the delicate flavors of the Japanese red sea urchin and other seafood.

菜餚概念是取自廣東傳統粽葉雞. 視覺則是像台灣人熟悉的肉粽. 竹葉包覆著雲林土雞, 紅蔥頭, 滷冬菇, 糯米. 不錯吃
The concept of this dish is inspired by the traditional Cantonese Lotus Leaf Chicken, while its appearance resembles the zongzi (sticky rice dumpling. Inside the bamboo leaves are Yunlin free-range chicken, shallots, braised shiitake mushrooms, and glutinous rice. It’s quite delicious.

主廚 Leo 採用四神湯藥材 , 老母雞 , 金華火腿, 當歸與藥酒熬煮成湯底. 油封熟成鮑魚入味且微彈牙.
Chef Leo uses traditional Four-Herbs Soup ingredients, along with old hen, Jinhua ham, angelica root (dang gui), and herbal wine to slowly simmer the broth.The confit abalone is well-infused with flavor and has a pleasantly slight chew.

除了七巧板外 , 最後登場的甜點也是Circum- 餐廳的招牌菜餚. 從抽屜裡抽出一張簽, 代表著抽出當天的甜點項目. 我個人最喜歡 帶有果香與卡士達醬的鳳黃酥 (圖三). 與楊桃錦玉羹 (圖四) .
Besides the Seven Wonders appetizer platter, the final dessert course is also one of Circum-‘s signature experiences.Guests draw a slip from a drawer, which reveals the dessert they will be served that day. Personally, my favorites were the Pastry with fruity notes and luscious custard (Photo 3), and the Starfruit Jelly Dessert (Photo 4).

✅ Circum- offers a lunch tasting menu (NTD $2,880 /person ; Total 7 courses) available from Friday to Sunday. The dinner menu (NTD $3,880/person; Total 10 courses) available from Wednesday to Sunday evenings. I had the dinner menu that day. For a Michelin-starred restaurant, the pricing is moderate.
✅ Circum- chef Leo doesn’t simply fuse Chinese and Western ingredients together. Instead, he brings the “Mix and Match” concept into the cooking techniques, ingredient selection, and plating design. For example, he successfully blends bird’s nest with mascarpone cheese. He also shows Japanese tempura frying techniques.Overall, the dishes are quite delicious.
✅ Unlike other Chinese restaurants, Circum- offers a playful dining experience that goes beyond just visual presentation. For example, the “Tangram” dish features seven different appetizers to taste at once. The lucky-draw style dessert drawer adds a fun touch to the overall experience.
