元紀台灣菜是台中米其林一星餐廳. 元紀地址是台中市西屯區安和東路5號. 離台中高鐵站搭計程車約 15 ~ 20 分鐘. 並沒有靠近台中捷運站. 餐廳內的裝潢細節滿滿, 藝術品則是低調奢華. 最令人印象深刻的是一樓的寬敞開放式廚房 與專業觀感極佳的茶吧台.
以下是需注意的事項

Yuen Ji Taiwanese Cuisine is a Michelin one-star restaurant in Taichung. It is located at No. 5, Anhe East Road, Xitun District, Taichung City. The restaurant is about a 15 to 20-minute taxi ride from Taichung High-Speed Rail Station and is not near a Taichung MRT station. The restaurant’s interior design is filled with intricate details, featuring subtly luxurious artworks. The most striking aspects are the spacious open kitchen on the first floor and the beautifully designed tea bar, both exuding a high level of professionalism.

一樓與二樓皆有散客區與大小包廂區. 有圓桌也有長方形餐桌.
There are round table and long rectangle table at 1F and 2F.
3F
三樓則是可容納15 ~ 16 人的大包廂與包廂沙發休息區.
At third floor, there is a large private dining room that can fit 15 ~ 16 people and a sofa area.

菜餚名稱看似單純, 端上桌後卻能感受到深厚的料理功底與精細設計. 去骨桂丁雞翅裡有飽滿蝦漿與花枝漿.雞肉嫩香多汁,伴隨內餡帶來台灣蝦丸與魚丸特有的脆彈口感. 花椒油與乾辣椒賦予細緻的麻香與辛香, 使整道菜餚的風味更顯立體且富有多層風味. 這是當天我最喜歡的菜餚之一. 我推薦每桌都點這一道菜餚.
The deboned Gui Ding chicken wings, generously stuffed with a rich filling of shrimp paste and squid paste. The chicken meat is tender and juicy, while the filling delivers the signature texture of Taiwanese shrimp and fish balls. The addition of Sichuan pepper oil and dried chili enhances the dish with delicate numbing and spicy aromas, creating a multi-layered, well-balanced flavor profile. This was one of my favorite dishes of the evening, and I highly recommend that every table orders it.

海參食材常見於粵菜餐廳, 多以湯品形式呈現. 例如 “朧粵“ 的高湯松茸羊肚菌燉遼參和 “麟聚“的鮑參貝肚佛跳牆 .而這次品嚐的日本關東刺參, 比預期更加軟 Q, 容易切開, 少了傳統海參的硬彈口感. 細節藏在刺參裡. 荸薺丁賦予跟海參對比的脆爽口感 溫醇鮑汁串聯豬肚,豬絞肉, 餐廳自製.蝦乾, 香菇, 讓這一道菜餚更加升級,風味更顯飽滿. 推薦點.
Sea cucumber is a common ingredient in Cantonese cuisine, often served in soups and braised dishes. The Kanto sea cucumber I tasted this time was softer and more tender than expected, making it easier to cut and lacking the traditionally firm, bouncy texture. The details of the dish lie under the sea cucumber. The crisp diced water chestnuts provide a textural contrast. The rich abalone sauce ties together the pig stomach, minced pork, house-made dried shrimp, and shiitake mushrooms, elevating the dish to a new level of depth. I would definitely recommend it.

我上次吃到滿意的檸檬愛玉甜點是在 “logy” . 這次在元紀吃到的檸檬愛玉冰沙是驚豔. 讓人驚豔的是一小碗甜點裡不僅有愛玉籽 , 還融合了多種水果風味的晶凍。入口時,百香果與柑橘的果香瞬間直擊味蕾,帶來鮮明而奔放的酸甜層次,同時仍保有檸檬愛玉特有的清新微酸風味,讓整體甜點富有變化。
The last time I had a satisfying Aiyu lemon dessert was at “logy”. The Aiyu Lemon Granita at Yuen Jì truly impressed me.What makes it exceptional is how a simple bowl of dessert contains not just Aiyu seeds but also an array of fruit-infused spheres. Upon the first bite of spheres, the bright, tangy aromas of passion fruit and citrus immediately burst onto the palate, delivering a vivid and dynamic sweet-sour interplay. At the same time, the distinctively refreshing tartness of Aiyu lemon remains present, adding a delicate complexity and an ever-changing flavor profile to the dessert.

菜脯白玉燉鮮雞

老菜脯食材在台灣米其林餐廳經常出現. 之前在 “頤宮 Le Palais “ 吃到的是老菜脯龍蝦沙拉.而這次在元紀 , 主廚則是採用陳年菜脯與菜脯, 皆有類似醬瓜的口感. 雞肉、白玉蘿蔔與瑤柱共同熬煮出的湯清澈透亮,風味細緻且不顯厚重。對於習慣濃稠雞湯的人來說,這道湯品或許是一種值得嘗試的清爽選擇.
Aged preserved radish is a common ingredient in Michelin-starred restaurants across Taiwan. Previously, at “Le Palais“, I had an Aged Radish & Lobster Salad. This time, at Yuen Jì, the chef incorporated both aged and regular preserved radish, both of which share a pickled cucumber-like texture. The broth, made by simmering chicken, white daikon, and dried scallops, is clear and refined. The soup offers a delicate depth of flavor without being overly rich.For those accustomed to thick chicken soups, this lighter, refreshing alternative is worth a try.

我個人最喜歡泡菜軟絲捲 (圖二) 與紅燒牛肉凍 (圖三). 醃漬高麗菜包覆著細切軟絲、小黃瓜絲與紅甜椒絲. 清脆爽口的高麗菜與柔韌軟絲交織出層次豐富的口感,並帶出鮮明的海鮮風味. 而紅燒牛肉凍則以創新的手法詮釋經典風味. 主廚將和牛頰滷煮, 再與蔥花與辣椒碎末製成凍. 膠質豐厚且肉香四溢.
Elegant and vibrant tableware can undoubtedly stimulate the appetite and spark curiosity. At Yuen Jì, the Michelin-starred dining experience begins with a stunning Five-Colored Welcome Platter, setting the stage for a refined culinary journey.

My personal favorites were the Pickled cabbage roll (Photo 2) and the Braised wagyu terrine (Photo 3). The Pickled cabbage roll features pickled cabbage wrapped around sliced squid, cucumber, and red bell pepper. The contrast between the crisp, refreshing cabbage and the slightly chewy squid creates a layered textural experience. The Braised Beef terrine offers a creative take on a classic dish. The chef slow-braises wagyu beef cheek, then combines it with chopped scallions and chili flakes to create a savory, gelatin-rich terrine. The meaty aroma lingers with every bite.
鴨賞鹽滷豆腐

豆腐吸滿雞高湯的醇厚,入口滑嫩。鴨賞與蝦乾的組合意外契合,煙燻與海味交織,為湯品增添風味。湯品不錯喝.
The tofu absorbs the richness of the chicken broth, resulting in a silky and smooth texture. The combination of smoked duck and dried shrimp is unexpectedly harmonious, with smoky and umami flavors intertwining to elevate the soup’s depth. A well-executed and enjoyable soup.

元紀的蔥油餅現點現做 , 需等候 15 ~ 20 分鐘. 厚實且香脆的蔥油餅不會過於油膩, 每一口都飽含迷人的蔥香.
The scallion pancake at Yuan Ji is made to order, requiring a wait of about 15 to 20 minutes. Thick and crisp, it strikes a perfect balance without being overly greasy. Each bite is infused with an enticing scallion aroma.
桂花蛋香明蝦
