台北西式餐廳菜單很少看到 “紙包魚” 菜餚 , 而且幾乎都只是 “切塊的魚”. The Tavernist 的紙包魚是整條魚. 主廚 Arthur 選用油脂豐富與少刺的午仔魚. 搭配的香料與蔬果非常精彩 – 番茄 , 蒜頭, 百里香, 檸檬 酸豆. 香料並不會奪走魚的鮮味. 而且鯷魚配角更是多加一層風味. 品嚐時, 我對魚肉的多汁與鮮嫩非常滿意. 這是當天最滿意的單點菜餚. 我個人推薦點.
It is rare to find fish en papillote on the menu at Western restaurants in Taipei, and even rarer to see a whole fish presentation. Chef Arthur uses Fourfinger Threadfin, known for its rich fat content and minimal bones. The dish is beautifully accented with tomatoes, garlic, thyme, lemon, capers, and anchovies. These flavorful additions elevate but never overpower the natural sweetness of the fish. Juicy, tender, and full of flavor, this was the most satisfying dish of the day. I would definitely recommend this dish.

此為單點甜點. 甜點師傅親自推車到餐桌前準備火燒阿拉斯加甜點. 點火瞬間成為全場焦點. The Tavernist 的火燒阿拉斯加 Display 與甜點設計更具有美感與時尚感. 甜點 Size 適中. 以芋頭為主體的冰淇淋內餡綿密不甜膩,搭配少量魚子醬,鹹香中增添層次 我推薦點的原因是不錯吃, 而且這是台北少見的火燒阿拉斯加甜點.
This dessert is ordered à la carte and prepared tableside by the pastry chef. While preparing, the pastry chef instantly draws everyone’s attention with a dramatic flame. The Tavernist’s Baked Alaska stands out with a refined and modern presentation. It’s perfectly portioned for two to share. The taro paste filling is creamy and not overly sweet, with a small touch of caviar to add a subtle, savory depth. One of the few places in Taipei where you can try this dessert. Highly recommended.

深褐色的脆皮豬五花層次分明.切開時聲響清脆. 燻烤後的油脂與肉汁交錯, 可單吃也可以搭配酸甜火烤鳳梨醬品嚐.
The pork belly is beautifully caramelized and layered, with an audible crunch when sliced. The smoky, rich fat and juices pair wonderfully with the sweet and tangy roasted pineapple slices.
香料花椰菜 – 松針起士

Display 視覺如瑞士起司火鍋。花椰菜即使不沾醬也夠味,搭配瑞士 Gruyère 乳酪醬則更添濃郁奶香。
The presentation resembles a Swiss cheese fondue. The cauliflower is flavorful on its own, but dipping it into the creamy Gruyère cheese sauce adds a rich, savory note that cheese lovers will enjoy.

不僅慢燉熬煮雞湯六小時, 也運用法式澄清工藝製作成晶瑩剔透的雞肉凍. 品嚐時 , 有著膠質豐厚的口感. 再搭配塔裡的蘑菇泥, 主廚 Arthur 以創新手法詮釋台灣經典雞湯風味.
Not only is the chicken stock slow-cooked for six hours, but it’s also clarified using French culinary technique ( consommé technique ) to form a crystal-clear terrine. The result is a richly gelatinous texture. Paired with a mushroom purée tart, Chef Arthur delivers an inventive interpretation of the classic Taiwanese chicken soup flavor in a refined, modern form.

瑞可塔起司與番茄的組合,是義式餐桌上常見的開胃搭配. 主廚加入來自化應子的酸香果蜜,增添台灣在地韻味,搭配溫熱酸種麵包入口.
Ricotta cheese with tomato is a staple on Italian tables. The chef adds candied prune made from Taiwanese plum, giving it a local, tangy-sweet twist. Served with warm sourdough, it’s a balanced and charming starter.

Oyster Vermicelli
將麵線繞製成類似麻荖造型,外層酥炸至金黃酥脆,一口咬下「ㄎㄠˇ」地脆響,裡頭藏著小巧飽滿的生蠔,鮮味瞬間湧現,傳統台味轉化為令人驚喜的精緻小點。
The vermicelli is shaped like a traditional Taiwanese “ma-liao” snack and deep-fried until golden and crispy. With a satisfying crunch upon bite , it reveals a small but plump oyster inside. This is a delightful transformation of a beloved street food into an elegant amuse-bouche.
蔥味布里歐麵包 – 昆布奶油

台灣經典麵包非蔥花麵包莫屬, 搭配柔軟口感的布里歐麵包, 成功演繹出創新卻不失親切感的版本. 單吃可即可品嚐到酥香奶油與熟悉蔥香的完美融合. 搭配一旁的昆布奶油則是多一層不同的鹹香.
Taiwan’s classic scallion bread reimagined with the buttery softness of a French brioche. The taste is delicious on its own, with a harmony of buttery richness and fragrant scallions. It tastes even more intriguing when paired with the umami depth of kombu butter.

湯品呈現滑順細緻的口感. 羅勒油點綴讓整道湯品升級.入口即湧現蛤蜊鮮味, 濃郁奶油, 與絲瓜清香風味. 在台灣餐廳, 絲瓜炒蛤蜊原本就是我在台灣餐廳經常點的一道菜餚,這次以濃湯形式重現,在 The Tavernist 的詮釋下,既熟悉又驚喜,讓人一口接一口, 十分滿意.
The soup texture is velvety smooth, enhanced by a touch of basil oil that elevates the dish. A flavor blends with clam umami creamy richness, and the fresh, subtle sweetness of loofah. This soup is a brilliant reinterpretation of the familiar “stir-fried clams with loofah,” transforming it into a luxurious course that’s both comforting and refined.
碳烤綜合時蔬 – 起士白醬

時蔬會依季節不同而更換. 份量比預期地多. 次品嚐到炭火燒烤過的萵筍、茭白筍與竹筍,帶有微微炙香與脆嫩口感. 搭配濃郁滑順的起司白醬與桂竹鹽,鹹香中點出蔬菜本身的甜味,是一道不錯時蔬菜餚.
The selection of vegetables varies with the seasons, but portions are generous. This time, it featured grilled lettuce stem, water bamboo, and bamboo shoots—all grilled by fire for a hint of smokiness and kept crisp-tender. Served with a rich cheese cream sauce and seasoned with kuizhu (Makino bamboo) salt, which draws out the natural sweetness of the vegetables.

The Tavernist 的套餐設計兼具陸地與海洋風味,呈現一道名副其實的海陸盛宴. 海鮮拼盤包含酥炸屏東黑虎蝦、碳烤石斑魚與炙燒干貝三款食材. 炸蝦外層酥脆,切開時伴隨清脆聲響,入口不顯油膩.由黑麥啤酒與蘋果醋特調的沾醬賦予微酸風味.
A well-composed surf-and-turf dish showcasing three seafood elements: fried black tiger shrimp from Pingtung, grilled grouper, and seared scallops. The shrimp’s exterior is audibly crisp with no greasy aftertaste. A dipping sauce of rye beer and apple vinegar brings a subtle acidity that ties everything together beautifully.
肋眼牛排 – 花椒
Ribeye Steak – Peppercorn

主角為 3.5 oz 的美國 Prime 等級肋眼牛排,建議熟度為 Medium-Rare(約五至七分熟),最能展現其柔嫩肉質與飽滿油脂香氣. 牛排有經典美國牛排的濃郁肉香, 屏東花椒油賦予微麻辛香風味 .熟悉之中流露出細膩的變化。
The centerpiece is a 3.5 oz U.S. Prime ribeye, recommended at medium-rare to best highlight its tenderness. It delivers a classic American steakhouse flavor, subtly elevated with a drizzle of peppercorn oil made from Pingtung peppercorns, adding a mild tingling spice that enhances without overpowering.
地瓜山葵雪酪
Sweet Potato – Wasabi Sorbet Foodelicious: 👍👍👍👍
甜點呈盤有如藝術品,展現 Fine Dining 的精緻美感.敲開如金色圓頂的地瓜薄餅後,藏在其中的是由阿里山山葵製作的雪酪. 山葵雪酪不會過嗆, 反倒以輕盈刺激感與辛香氣息喚醒味蕾. 我個人覺得不錯吃.
A visually stunning dessert that evokes the artistry of fine dining. Crack open the golden dome of crisp sweet potato to reveal a wasabi sorbet made with Alishan-grown wasabi. Instead of being too spicy or over-stimulate, the sorbet offers a gentle, refreshing zing that awakens the palate.
橙香巧克力卡達拉娜
Orange Chocolate Catalana

以西班牙經典甜點 Crema Catalana 為靈感,結合橙香與巧克力兩大元素。外觀借鑑東坡肉造型,帶來視覺上的幽默與記憶點。口感近似焦糖布蕾,柔滑細緻,柑橘清香與可可濃郁交織,為餐後畫下溫潤香甜的句點.
Inspired by the Spanish classic Crema Catalana, this dessert blends citrus brightness with deep cocoa notes. Its shape—reminiscent of Dongpo pork—adds a humorous and memorable twist. The texture is reminiscent of a silky crème brûlée, with the orange and chocolate providing a warm, layered conclusion to the meal.
Wine Selection
我並沒有寫 Wine Pairing 是因為可以自己選擇單杯酒. 最值得稱讚的是可以選擇氣泡酒. 這次喝到的紅酒也是知名大酒莊. 建議到 The Tavernist 可以點 1 ~ 2 杯葡萄酒享受 Casual Fine Dining 氛圍.
There’s no set wine pairing because guests are encouraged to select wines by the glass. A major plus is that sparkling wines are also available by the glass. On this visit, the red wine served was from a well-known estate. I recommend enjoying one to two glasses of wine here to fully savor the casual fine dining ambiance.

If you’re driving or avoiding alcohol, the mocktail selection is a thoughtful alternative—perfectly crafted to complement the meal without compromising on flavor.
