和合青田其實稱作台北市茶藝館反而較適合, 特色是用傳統燒炭火泡茶, 是一個台北泡茶與品茶的好去處, 也在我的台北茶館推薦名單裡.
HeHe QingTian is one of the Taipei Tea Houses. The most special part would be they offer traditional method to brew tea, which is burning the charcoal. This Tea House is on my Taipei Tea House recommendation list.

位於大安區的和合青田茶館在台北黃金三角捷運站中間 – 東門, 古亭, 和大安森林公園捷運站中間點, 我當時是選擇從古亭站五號出口走和平東路一段, 會路過 “在欉紅本鋪 Red on Tree” 和 “台灣師範大學“. 漫步在充滿綠意的青田街8巷, 就如同遊走在被時間凍結的日式文化特區.
HeHe QingTian Tea House, which is located at Taipei Da’an District, is near Dongmen, Guting, and Da’an Park MRT station. I chose to walk from Guting MRT station Exit 5. On the way, there is “Red on Tree Dessert shop” and “NTNU”. QingTian Street is a bit like Fujin Street but with Japanese culture atmosphere.

在和合青田茶館的Facebook 粉絲頁 ( https://www.facebook.com/HeHeQingTian/ ) , 每個月底都會公告下個月的網路訂位 Google 表單與排程. 每個人2018年包廂體驗價格為 $600/人, 事先需匯款. 請注意有很多款包廂, 店家有最後安排權利. 需注意事項皆在表單上. 若填表單有問題, 可隨時打電話客服詢問.
HeHe QingTian Tea House will post the following month reservation information and google form on their Facebook ( https://www.facebook.com/HeHeQingTian/ ). The price is NTD $600/per person （2018 price) ,  but need to wire the money prior. Please note that there are many types of private rooms. The staffs have the final decision to arrange the private room. All informations are at the google form. If there is any question, you can always call them.

和合青田之前是一家私人日式住宅, 近期被台北市列為歷史建築, 這是一家名符其實的老宅茶館, 裝修完依舊保持著日據時代風格. 首先進入前門, 彷彿就走進時間任意門, 充滿綠意外觀令都市人著迷, 打開茶屋正門需脫鞋(必穿襪子) , 木質系裝潢呈現禪意. 他們的員工告知可以體驗用毛筆將自己名字寫在在卷宗 (?) 上.
HeHe QingTian Tea House was a private property. Recently, this house becomes one of the Taipei Historical Buildings. This is the best definition of Old-school Tea House. Before entering the house, you would need to take your shoes off but wear your socks. The appearance of the house is still have the Japanese-Occupied Period style. But with the trees around the house and the wooden color indoor design, the whole tea house is full of zen atmosphere. The staff also mentions that the guests can write their name on the paper by using Chinese Writing Brush.

 

和合青田茶館的目前茶單全部都是中國雲南秘境千年古茶- 普洱茶, 而非日式綠茶或是台式烏龍茶. 身著深淺褐色裝扮的店員先奉一杯普洱茶茶給客人, 也同時介紹和合青田歷史, 隨後帶所有客人到建築外觀導覽, 逛一圈後, 在進入茶館前, 需要以活水淨手淨心, 讓心靈平靜才準備走進茶屋, 更多細節在文末影片.
HeHe QingTian Tea House only offers Chinese Pu’er Tea instead of Japanese Green Tea or Oolong Tea. The staff will make one cup of Pu’er Tea for the guests. Also, they will guide you around the house and explain a bit of history and its building structure. There are more details at the video down below.

 

 

與台灣其他茶館 (例如: “開門茶堂” ) 最不同的地方是和合青田只有日式獨立包廂, 並沒有桌椅座椅過於擁擠的狀況. 當天有另一組客人被安排至有一面特意未修復完成, 露出歷史痕跡 – 竹編泥牆構造的包廂. 當天客人不多,和合青田茶館員工安排我一個人擁有一間大包廂.
The difference between other Taiwan tea houses (for example: “Kaimen Tea House” and Hehe Qingtian is the private tea room. Hehe Qingtian only has private tea rooms. Other guests are seated at another room with old-time decoration. Interesting enough, I was seated at the large private tea room instead of small.

和合青田茶館員工會依你的喜好而推薦茶款, 最讓我驚豔的是和合青田茶館是用傳統燒炭方式來煮茶, 中間若炭火不夠也會協助加, 員工會教導如何煮茶, 我選的這款茶不會過於苦澀, 也並沒有想像中地濃, 我會推薦給偶而會喝茶的人.
Hehe Qingtian Tea House will recommend the tea due to your preference. The most surprisingly part would be they use charcoal to brew the tea, which is the traditional and professional method. The staff would instruct and check with you. This 2017 Pu’er Tea (Zen Series) is not as bitter nor thick. as expected. I would recommend this tea to people who only drink tea randomly.

 

2002 無極千年淳 (藏壽)

2002 Pu’er Tea (Age Series)

少數普洱茶就跟葡萄酒一樣是可以陳年, 也就是所謂老茶, 雖然尚未到達貯放時間至少在20年以上的老茶標準, 但一樣是價格成本偏高. 換泡第二款茶時, 和合青田茶館員工很講究地將茶壺換成紫砂壺. 這款茶尚未入喉就飄出類似小木屋的陳香氣味, 將深褐色普洱茶入喉, 深厚偏濃茶體與沈穩內斂茶韻與眾不同, 也因為太特別, 我只會推薦給平常在喝中國茶的人喝.
A few Pu’er Tea can be aged. Even though this 2002 Pu’er Tea is not qualified as 20 years old aged tea, the cost is still high. The staffs change the pot to different types of tea pot. This 2002 Pu’er Tea has aged flavor similar with wooden house. While drinking the dark Pu’er Tea, the thick tea body along with thick tea flavor is outstanding. Since it is quite special, I would only recommend to people who always drink Chinese tea.

 

茶系列點心

所謂的茶系列點心並不是像 “金舌頭食集” 是搭配茶的點心, 而是喝完茶後的點心. 每次茶系列點心都會不同. 和合青田品的點心皆是用茶製作, 這款茶凍點心並沒有想像中地單調,小湯圓相當Q 彈. 因為茶溫度偏低, 反而將普洱茶苦味減弱但茶香依舊存在.
Different from “Origins Foodist”, the tea related dessert is not a pairing dessert. It is the dessert that is made by the tea. And it is always served after drinking the tea. This dessert is regarding frozen tea ice jelly and small Taoyuan. Both ingredients are perfect.
