1. 千成亭風土品牌於西元幾年成立? 請問是先由牧場開始經營, 再發展出日本滋賀縣近江牛專門餐廳? 目前千成亭風土與牧場是採用契作方式?
Ohmi Beef means Wagyu Beef from Shiga Province. When was Sennaritei Food Brand established? Does Sennaritei start from operating their own ranch then develop the Ohmi Beef restaurant at Shiga Province, Japan?

日本滋賀縣的千成亭風土品牌是始於昭和32年(西元1957年), 最開始由一間精肉舖開始經營, 之後成為了在地知名的肉品供應商, 目前除了自家牧場外, 也有與當地牧場契作, 來保持近江牛的穩定供應, 經過 50 年歷練與成長, 現今旗下已有多間日本近江和牛餐廳與電商. 常去日本旅遊的台灣人會覺得 “千成亭風土品牌”名稱似曾相識, 原廠也提到許多台灣旅客到日本滋賀縣近江地區旅遊, 皆會安排到千成亭、伽羅、麵匠 CHAKAPON等餐廳品嚐近江牛  (以上皆為千成亭風土餐飲事業旗下餐廳品牌, 換句話說, 苗林行代理的千成亭風土品牌在日本與台灣的知名度頗高.
Sennaritei Food Brand, which was originated from Shiga Province, Japan, was established at the year of 1957. It all started with the meat shop. With 50 years of experience and growth, Shennaritei has its own ranch and cooperates with local ranches for steady quantity of Ohmi Beef. It also develops restaurant and online business. Interesting enough, Taiwanese tourists always plan to go to Sennaritei restaurants to taste the Omhi beef during their Japan trip. In another words, Sennaritei brand is very well-known in Japan and Taiwan.

2. 日本和牛依照地名來分類有非常多 (例如:飛驒牛,宮崎牛..etc), 近江牛為世界知名日本最高級三大和牛之一, 請問千成亭風土品牌會有專屬的日本近江和牛證書? 請問拿到近江牛證書需要哪些條件?
Shiga Ohmi Beef is one of the three world-wide famous top quality Japanese Wagyu Beefs. I was informed that that there is a “Shiga Province Ohmi Beef Certificate”. Can you briefly tell me the standard?

多數人只知道日本產和牛屬於頂級牛肉, 而頂級饕客則知道日本三大最高級和牛只有近江牛,神戶牛與松阪牛. 能拿到近江牛認定書的條件為黑毛和牛種, 生長於滋賀縣, 在滋賀縣官方指定屠宰場宰殺, 和牛等級為A4, A5, B4, B5 等級以上. 千成亭風土品牌每款販售的和牛部位皆有近江牛官方認證貼紙與10碼個體識別編號的近江牛證書 (圖二 & 圖三), 可在網路上查詢讓消費者更安心.
Most people only knows that Japanese Wagyu Beef is high quality beef. However, a foodie would know there are only THREE top quality Waygu Beef – Ohmi Beef, Matsusaka Beef and Kobe Beef. In order to receive “Shiga Province Ohmi Beef Certificate”, there are strict qualifications – Black Cow Species, Grow at Shiga Province, Butchered in Certified Butcher Shop in Shiga Province, and its beef level has to be A4, A5, B4 and B5. Each Sennaritei Beef products has government certified sticker and 10 digit batch numbers to check on the website (Pic 2 & Pic 3)

3. 苗林行販售的千成亭風土品牌近江和牛有哪些特色?
Miaolin Foods is known as high-quality ingredients Importer in Taiwan. What are the selling points of Sennaritei Food Ohmi Beef?

與其它滋賀縣和牛品牌最大的不同是千成亭風土“只”販售30個月齡左右且沒有生育過的母牛. 根據原廠專業說法, 美味程度為未經產牛(處女牛) > 去勢牛(閹牛) > 雄牛, 處女雌牛因活動較少也未經生產過程, 肉質更為柔和. 苗林行也加以補充, 台灣海關不得進口日本和牛骨頭, 因此會先在日本屠宰場去骨. 苗林行販售的千成亭風土品牌和牛規格則是去骨30個月齡以下且未經生產過的近江母和牛.
Comparing with other brands at Shiga Province, Sennaritei Food only breeds around 30 months old virgin female cow. According to Sennaritei executive chef, The delicious level of beef from high to low would be virgin female cow > steer > bull (male cow). Virgin female cow does not go through pregnancy and has less activity. Therefore, the meat texture is extremely tender. Miaolin Foods also mentions that Taiwan custom bans the Japanese beef with bones. In conclusion, Miaolin Foods offers boneless, under 30 months old virgin female Ohmi Beef from Shiga.

4. 哪些和牛的部位是日本受歡迎, 但在台灣尚未開始流行? 和牛哪個部位是最昂貴?
Which part of Omhi Beef is already popular in Japan, but not yet trendy in Taiwan? Which part of the Omhi Beef is the most expensive?

多數台灣人對和牛部位最熟悉的紐約與菲力, 也讓人第一時間想到 “A Cut 牛排店“ 或是 ”168 牛排“ , 只有饕客們會聯想到運用和牛全身部位的 “梵燒肉餐廳” 或 “和牛47餐廳”. 千成亭風土原廠提到目前日本最流行吃的和牛部位反倒是採用油花較少的部位, 例如使用和尚頭 (位於牛後腿的內側)部位來做成壽喜燒 , 而不是最貴的部位 “菲力”. 苗林行也與日本餐飲流行同步, 將這次的講習會主題設定為 “美味深度探究 赤身肉的奧秘” (油花較少的部位稱為赤身).
Most Taiwanese only know Japanese Wagyu Steak, which you mostly eat at “A Cut Steak House” or “168 Steak House”. The most expensive part of beef is Fillet. However, Sennaritei Food mentions that beef parts with less fats (for example: Knuckle) is popular at Japan, but not yet trendy in Taiwan. For example, they use Chuck Roll to make Sukiyaki. Therefore, Miaolin Foods sets this event topic as “Demo of Ohmi Beef With Less Fats”.

苗林行除了常見的菲力, 紐約客和沙朗外, 苗林行目前全部的部位 (內臟與骨頭除外) 皆有空運進口, 包括市場較少見的日產和牛部位, , 例如背肩與和尚頭. 目前梵燒肉,  肉割烹,  N°168 Prime Steakhouse 牛排館(敦化店),  一頭也黑毛和牛專門店餐廳皆有採用苗林行所販售的日本近江和牛
Besides Fillet, Strip Steak and Sirloin steak, Miaolin Foods also offers all parts  (except viscera and bones). Miaolin Foods also offer less common parts, such as Chuck Roll and Knuckle. In Taiwan, Vanne YORONIKU restaurant, Nikukappou Yuu, 168 Steakhouse and Ittouya restaurants all use Miaolin Foods’ Sennaritei brand Ohmi Beef.
