台北 168 牛排館敦化店 2019 換新主廚也換新菜單, 168 牛排餐廳開始新章節 (New Chapter), 不再是一成不變的牛排餐廳.
Taipei 168 Steak House Dunhua Branch changed its executive chef and its menu. It starts its so-called New Chapter instead of old-fashioned Steak House.

台北 168 牛排館敦化店位於敦南 SOGO 百貨 7 樓, 最靠近忠孝復興 12 號出口, 附近餐廳有 “Stagiaire 實習生餐廳” 和 “裸湯拉麵”, 敦南 SOGO 有停車場, 相當方便.
Taipei 168 Steak House Dunhua Branch is located at Dunhua SOGO Department stores 7F. It is closed to Zhongxiao Fuxing No. 12 Exit. The nearby restaurants include “Stagiaire Restaurant” and “Pure Ramen”. SOGO department has its own parking lot.

About N°168 Prime Steakhouse

從電梯走出即可看到餐廳, 這次有深紫色看板寫著 “A New Chapter”, 我四處張望, 廚房和包廂格局依舊, 仍然適合家庭聚餐, 最大的不同莫過於熟成室, 我只看到一塊熟成牛排, 取而代之的是一整個櫥窗的熟成鴨, 也許這個改變與新主廚 Cage 有關係, 他曾擔任 “L先生義法餐廳“ 和 ”蘭餐廳“的主廚, 但重要的是他要如何讓一家老字號的牛排餐廳轉型.
You would enter the restaurant right after stepping out of the elevator. The dark purple stand mentioned “A New Chapter”. I looked around and the restaurants design remained the same. The most difference would be the Aged Room. Instead of aged steaks, there are more aged duck in the aged room. Maybe due to the new Executive Chef Mr. Cage Ou was the previous executive chef at “Orchid Restaurant” and “Monsieur L Restaurant”.

168 牛排館敦化店與許多餐廳 (例如: “ULV Restaurant and Bar”) 一樣皆有提供氣泡水與礦泉水,我來過敦南分店兩次, 一直都不知道 168 牛排館敦化店有常溫水, 直到隔壁桌要求常溫水, 也許這是一個”全世界都知道, 只有我一個人不知道”的訊息吧.
Same as many other bistros (such as “ULV Restaurant & Bar”), 168 Steak House offers sparkling water and mineral water. I have been to 168 Stea House twice. This is the first time that I know the restaurant offers regular water.

佐餐麵包

原本以為168 牛排館敦化店會像 “Chou Chou”一樣是奶油加鹽之花, 出乎意料是焦糖奶油, 最用心的亮點是黑色底盤(?)是冷凍, 保持焦糖奶油的硬式狀態, 與鬆軟麵包一起入口, 一抹焦糖香氣相當討喜, 並不會過甜, 吃完麵包後, 店員也會親切地問麵包需不需要續.
I was surprised to see the caramel butter instead of the butter with Fleur de sel, like at “Chou Chou”. The other surprising part would be the dark plate is frozen cold to reserve the hard texture of the butter. I like the not-too-sweet caramel flavor pairing with the soft bread. Also, you can ask for more breads while waiting for the next dish.

168 小點

Amuse Bouche

168 小點充分表現出主廚新主廚 Cage 的風格, 內容每次皆會不同, 168 牛排館敦化店員端上三款 168 小點, 擺盤如同 “蘭餐廳”頗具設計美感, 食材與作法則與 “nku Taipei” 差不多複雜. 綠色圓型小點是青豆泥為基底, 撒上少許西班牙臘腸, 品嚐時, 臘腸肉味倒是不明顯, 反而是小點上的薄荷帶來些許清新. 另一個甜點我原本以為是油封鴨蛋之類, 孰不知是紅蘿蔔泥, 連同酥脆竹炭米餅一起入口, 風味是以竹炭風味為主導.
Amuse Bouche has three small dishes, more like tapas. Each dish might be different from time to time. The design is beautiful. The ingredients and composition is as complicated as “nku Taipei”. The green round shape dish is green bean based. There are small amount of chorizos. However, the overall taste is not full of meaty flavor, instead , it is a bit of refreshing due to the mint on the top. The other dish is ,mashed carrot along with charcoal rice cookies. After eating, the charcoal flavor dominates the tastebuds.

第三道168 小點相當特別, 這道小點就類似法式料理常見的肉凍, 但並沒有用到內臟, 店員解釋是用豬頭皮, 豬頰肉與豬舌烹調後用模型製作而成, 入口後, 香菜風味多少有被淺黃色美乃滋蓋過. 若是不常吃西餐的人應該會形容這三道小點為驚艷的菜餚小點.
I wouldn’t call the third dish as Terrine or Pâté. It is more like fromage de tête without any organ. Three main ingredients are pig head skin, cheek meats and pig tongue. The mayo covers small amount of cilantro flavor. If you do not eat western cuisine often, you would describe these dishes have quite amount of surprise elements.

 

前菜: 牛舌沙拉

Appetizer: Beef Tongue Salad

前菜四選一, 我選牛舌沙拉, 照菜單字面上的意思, 我原本以為會是類似凱撒沙拉, 以燒烤酥脆牛舌切塊代替培根塊, 但168 牛排館敦化店 2.0 的牛舌沙拉想要呈現的概念則是中式麻辣燙, 這道料理是需要用到筷子, 將薄且軟的牛舌翻開, 裡面包覆著同樣是軟嫩的娃娃菜,店員也解釋可將油封蛋黃戳破當作濃稠醬汁. 整體只是稍微辛辣, 但是軟與軟的口感並不是我的偏好, 我個人喜好是 “和牛 47” 的燒烤牛舌的酥脆口感, 這道菜餚對我來說已經不是所謂的New Chapter, 而是 New Book.
The menu stated Beef Tongue Salad. I assumed that it is similar with Caesar Salad. The grilled beef tongue dices subs the grilled bacon dices. However, it turns out to be more like a Eastern Cuisine Dish. I would need to chopsticks to eat this dish. There are fair mount of Baby Chinese Cabbage under the thin and soft beef tongue slices. The staff also mentioned that the confit egg yolk can be served as thick texture dip sauce. The overall taste has hints of spices. I personally prefer the grilled beef tongue, just like at “Wagyu 47”. For me, this dish is more like a New Book instead of New Chapter.

主餐: 澳洲和牛腹

菜單上並沒有提到澳洲和牛等級與oz, 我也沒有詢問168 牛排館敦化店員, 店員推薦五分熟, 但並不是像 “A Cut Steak House” 的深鐵盤. 當時我決定自己淋上ㄧ旁的油蔥醬, 而不是 Table Service. 和牛腹本身肉香濃郁, 我只建議油蔥醬加一點即可, 因為和牛腹燒烤過後更是鹹香, 肉品軟嫩掌握恰到好處, 並不會過老. 配菜不再是爐烤蔬菜, 而是甜菜根切片, 白花椰菜和洋蔥 (由上至下), 我會建議先喝一口水將肉的鹹香清掉, 再吃這道配菜, 因為白花椰菜也帶有鹹肉香.
The menu doesn’t mention the level and oz of the Austrlian Waygu Beef. And I didn’t ask the staff. The medium Short Plate (aka hanger steak or beef belly) is placed on the plate, unlike at “A Cut Steak House”. I decided to put on the shallot sauce by myself. The steak is already full of meaty aroma and fair amount of salty flavor. I would suggest to put only small amount of shallot sauce. Or else, it would be too salty. The steak is tender as expected. The side dish is no longer grilled vegetable. The side dish is Beetroots, white broccoli and onion. I would suggest to drink water to let the tastebuds rest a bit. The main reason would be the white broccoli also has meaty flavor as well.

甜點- 愛文芒果, 糯米, 萬壽菊

Dessert: Mango/Coconut Rice/ Marigold Leves

這道是採用現做 Table Service, 文末有更清楚的短秒影片, 店員在桌邊加入液態氮, 瞬間煙霧瀰漫, 會讓人目不轉睛, 再倒入新鮮芒果甜點裡, 攪拌後入口, 椰奶展現南洋風情, 搭配糯米相當特別, 我個人蠻推這道甜點.
The dessert is served by Table service. The video at the end shows how the dessert is made. The staff mixed Liquid Nitrogen to create a stunning live show. The staff then pours into the fresh mango dessert. While tasting after mixing, I would taste strong coconut flavor. It represents the South Eastern style. I would recommend this dessert.

 

 

咖啡 & 瑪德蓮

Lavazza Coffee & Cookie

168 牛排館提供 Lavazza, 而不是像華山 “Piccola Botega”提供的 KIMBO 咖啡, 咖啡不會過苦, 奶泡結構也相當紮實, 店家也招待一個瑪德蓮當做佐咖啡的甜點.
Unlike “Piccola Botega”, 168 Steak House offers Lavazza Coffee. The flavor is not bitter and the foam is dense. The restaurant also offers madeleine as a dessert pairing with coffee.
