台北東區餐酒館推薦 》Stagiaire 實習生餐廳料理與甜點皆美味

2018 年新開幕的 Stagiaire 實習生餐廳台北東區法式餐酒館之一, 許多媒體的曝光讓很多饕客前往這家忠孝敦化站美食餐廳.
Newly-opened Stagiaire Restaurant is one of the Taipei French Bistros. Due to lots of media exposures, there are lots of foodies visit this restaurant.

Stagiaire 實習生餐廳介於忠孝復興站與忠孝敦化站中間, 地理位置在一品大廈後方巷弄內, 附近餐廳有頂呱呱集團代理的 “東京油組総本店“ 和 “裸湯拉麵”, 也相當靠近 “168 Steak House” 所在的敦南 SOGO 百貨. 走進 Stagiaire 實習生餐廳內, 裝潢以性感黑色與時尚金色為主導, 與 “T+T 餐酒館“的時尚沙龍風格有少許不同, 知性深藍絨布沙發與 “小後苑 Backyard Jr.”一樣具有高級餐廳的架勢. 餐廳內也有六至八人長桌座位可當作開放式小包廂用來聚餐, 我覺得最為讚嘆的是Stagiaire 實習生餐廳洗手間比五星級飯店餐廳洗手間更高水準, 除了用 Aesop 品牌洗手乳與護手霜外, 也有白毛巾擦手!
Stagiaire Restaurant is in between Zhongxiao Fuxing and Zhongxiao Dunhuan MRT station. The nearby restaurants are “Abura Soba Tokyo” and “168 Steak House”. The indoor design colors are dominated by black and gold color. It is a bit different from the “T+T Bistro” Salon Design. The sofa color is similar with “Backyard Jr.” at Xinyi District. There are 6 ~ 8 people long table seats for dining. The most surprising part is the restroom. They offer Aesop hand wash and lotion. And they even have the white towels for drying the hands.

Stagiaire 實習生餐廳水資 NTD $60/人, 台北餐廳平均 NTD $80/人, 光是這點就要拍拍手讚嘆餐廳. 首先, 店員親切地端上佐餐麵包與奶油, 並解說法國麵包是店家所養的天然酵母麵團, 兩片麵包皆吃起來相當酥脆, 一旁的乳白色鹽之花稻香奶油並沒有像 “Chou Chou 法式料理餐廳” 凝固程度高, 將奶油抹在佐餐麵包入口, 濃郁奶油香帶有點微鹹風味相當討喜.
Stagiaire Restaurant water fee is NTD $60/person, which is lower than the average water fee (NTD $80/person) at Taipei. They brings out the bread and butter. The staff mentioned that the breads are made with the yeast that made by the chef. Both breads are crispy and great. One of the ingredients of this butter is Fleur de sel, which is a bit similar with “Chou Chou French Restaurant”. But, surprisingly enough, it is full of buttery flavor but not overly too salty.

法式洋蔥湯

French Onion Soup

法式洋蔥湯在台北餐廳相當常見, 我在 “大初鐵板燒”和 “Le Feu 鐵板燒” 皆有喝到. 目前我最滿意的是 Stagiaire 實習生餐廳, 也許與兩位主廚要求完美的個性有關, 一位是曾任亞都麗緻巴黎廳副主廚 Jill 傅昭蓉, 另一位是曾於舊金山, 倫敦米其林三星餐廳學藝的 Owen 魏宏丞. 視覺上湯裡洋蔥絲並沒有因為是套餐湯品而減少, 放置中間的酥脆法式麵包賦予不同口感, 用牛高湯燉煮讓食慾滿足, 整體不會過鹹, 我相當推薦這一道湯品.
It is quite common to see French Onion Soup at Taipei. For example, I drank French Onion Soup at “Da-Chu Teppanyaki” and “Le Feu Teppanyaki”. So far, I am satisfied with Stagiaire Restaurant’s French Onion Soup. Maybe because both chefs, Jill and Owen, have high standard of perfect dish. There are large quantity of sliced onions inside the soup. The toast in the middle of the soup offers difference texture. With small of beef broth, it would fulfill the appetite. Also, it is not overly too salty. I would definitely recommend this soup.

五味菲力牛排, 黑鑽石醬汁

此道料理命名的五味並不是所謂的酸苦辛甘鹹, 而是環繞在美國 Prime 等級菲力牛排 (圖二順時針方向)的乳白色白花椰泥,紅酒乾蔥,馬鈴薯千層, 酥炸羽衣甘藍葉和番茄莎莎醬, 擺盤細心相當具有美感, 黑鑽石醬汁則是松露醬汁,菌菇風味並沒有過重, 五分熟牛排口感不錯, 肉味並沒有想像中地明顯. 雖然不是專業牛排餐廳, 但品嚐起來已超越預期.
The five side dishes are white cauliflower paste, red wine onion, layers of potato, fried kale, and salsa (Picture two clock wise). The plate layout is quite beautiful. The mushroom that comes from the truffle sauce is not too strong. The medium-rare US Prime steak is tender but with only small mount of meaty flavor. Since it is not a professional steak house, the quality is already far more better than expected.

Stagiaire 實習生餐廳與 ”Saveur 歐洲風味餐坊“ 的馬鈴薯千層一樣美味且不軟爛, 暖紅色番茄莎莎醬帶有微甜風味, 深綠色酥炸羽衣甘藍葉因為沾到少許醬汁, 並不是每口酥脆, 目前我吃到最成功的酥炸羽衣甘藍葉是 “JE Kitchen” . 也許是我在 “Wildwood Live Fire Cuisine Restaurant”喝到的烤白花椰菜湯過於出色, 這道料理的乳白色白花椰泥只帶有微弱經典奶油風味. 基本上, NTD $1380 想吃到牛排與這些配菜算是相當超值, 我會推薦給想吃牛排而且沒吃過 ”酥炸羽衣甘藍葉“和”白花椰泥“的人.
The layers of potato from Stagiaire Restaurant is as delicious as “Saveur Restaurant”. The salsa is a bit sweeter than expected. As for the fried kale, “JE Kitchen”’s kale is crispier. As for the white cauliflower paste, it has hints of creamy flavor. Generally speaking, it is worthy to eat this set with only NTD $1380. I would suggest this set to people who are craving for steak, or never try kale or white cauliflower before.

紅色普羅旺斯茶

這款是無咖啡因飲料, 而且茶葉是採用高級進口“瑪黑品牌”, 花果香帶點微酸, 是店內比較特別的飲品.
This is an non-caffeine drink. Stagiaire Restaurant uses the tea leafs from Mariage Freres brand. The tea flavors are mixed with floral, fruity, and hints of acidity.

 

Inycon Growers’ Selection Nero d’Avola 2017 DOC

我到最後結帳才知道餐廳招待我這一杯紅酒, 我覺得應該是老闆看我一個人吃飯很可憐吧, 哈哈. 我相信很多初學者會在酒標上找熟悉的葡萄品種, 例如: 夏多內 (Chardonnay), 但在義大利酒領域因為葡萄品種眾多, 需要學習才會知道全部. 這款 DOC等級 義大利紅酒葡萄品種是 “Nero d’Avola”, 比一般葡萄品種更深色. 酒體結構飽滿紮實, 李子與莓果類香氣逼人, 高丹寧挑逗著味蕾, 跟希哈 (Syrah) 有少許相似, 只是因為台灣現在單杯酒價格已降低,  義大利DOC等級單杯酒價格照理說應該再便宜一點會比較好 (備註: DOCG為最高等級) , 也同時想建議餐廳將等級寫在酒單上.
I realized that the restaurant treats me this red wine. Many first-time wine drinkers might look for the grape type (For example: Chardonnay). But, it would be difficult in Italian wines though. This DOC red wine’s grape type is Nero d’Avola”, which has darker color than most of the grapes. The wine body is full and dense. There are fair amount of plum and berries flavors. The tastebuds could sense the high tannin. It is overall similar with Syrah. But, since this wine is DOC level, the price of the House Wine single glass should be lower. (Remark: DOCG is the highest level).

手工布蕾 (焙茶)

Home-Made Pudding (Roasted Tea)

Foodelicious 美味程度: 👍👍👍👍👍

這道甜點也是餐廳招待, Stagiaire 實習生餐廳的甜點相當有名, 這款手工布蕾是日本焙茶風味, 結構不會過軟或過硬, 整體不會過甜, 苦澀茶香並不會過重, 倒是有烘焙香氣, 會讓人想再點一份來吃, 這份甜點才 NTD $60, 這種水準高的甜點在市面上價格都會是在 NTD $100 以上.
The restaurant also treats me this dessert. Stagiaire Restaurant is famous for its dessert. This pudding has Japanese roasted tea flavor. The texture is perfect, not too soft but yet not too hard. The roasted tea flavor is delightful instead of bitter. The dessert is not overly too sweet. Such high quality dessert usually charges NTD $100 in the market nowadays.
