Gen Creative Taipei 》不要以先入為主的觀念來品嚐這家餐廳

Gen Creative 餐廳台北大安區米其林餐盤餐廳, 三位不同國籍的主廚們各有特色, 重點是與朋友分享後的料理平均價格與美味程度有 match.
Gen Creative Taipei is one of the Taipei Michelin Plate Restaurants at Da’an District. Three chefs from three different countries creates various dishes at the menu.

台北 Gen Creative 餐廳最靠近信義安和捷運站二號出口, 往敦化南路方向走 10 ~ 15 分鐘即可抵達, 隔壁就是停車場更為便利. 經過 Gen Creative 時, 即可從落地窗看到內用的客人, 餐廳內部以暖色為主, 與 “JE Kitchen” 莫蘭迪冷色系截然不同, 正前方是高腳桌椅, 左側為沙發區, 右側則是有像 “Chou Chou 餐廳”一樣的吧台區, 朋友跟我一樣喜歡看廚師團隊們工作, 因此入座在吧台區. Gen Creative 菜單並不是套餐制, 而是單點料理為主,因此我會建議與朋友分享, 酒單項目則是相當長. 不同風格的菜餚由台灣籍主廚 Eric , 韓籍主廚 Han, 瓜地馬拉籍主廚 Melanie 打造而成. 我直接從我最喜歡的菜餚開始寫!
Gen Creative Restaurant is near Xinyi Anhe MRT No. 2 Exit. You would only need to walk about 10 ~ 15 minutes to the restaurant. There is also a parking lot near Gen Creative. The indoor main color is warm instead of “JE Kitchen” cold color. The left hand side is sofa area and the middle is high tables and chairs. The left hand side is counter area, just like at “Chou Chou Restaurant”. My friend and I are seated at the counter area. Gen Creative Menu is single dish instead of set dish. Therefore, I would suggest to share with friends. The menu is created from Taiwanese Chef Eric, Korean Chef Han, and Guatemala chef Melanie. The wine list is quite long as well. I would start writing with my favorite dish.

中卷

Squid
Price: NTD $680

這道料理主要食材為茄子, 檸檬和墨魚汁.菜餚端上來時, 最吸引我的是置放在海鮮主角旁看似Ricotta Cheese 的食材, 我承認當時店員解說時我沒有在注意聽, 此刻我在寫這篇文時必需 Google. 主廚將高成本”高效能油脂轉換粉末”與中卷油結合成為雪白色粉末, 搶先單吃一小口, 完全沒有刻板的沙沙口感, 而是在口裡融化時, 味蕾即可感受到濃郁的海鮮直球風味. 第二個令人印象的是中卷做成像麵條的視覺效果, 將底部軟嫩茄子與微嫩中卷拌勻入口. ㄧ整道料理吃下來, 朋友和我都認為主角海鮮風味明顯, 適合 2 ~ 3 人分享, 所以價格平均下來也合理, 可以推薦給任何喜歡吃海鮮的人.
The dish is created with Squid, Eggplant, lemon, and Squid Link. However, the catch eye ingredient would be the white powder, which is mistaken of Ricotta Cheese. The chef combines MALTOSEC and squid oil into the snowy white powder. The powder would melts into the mouth. In this particular dish, the thick seafood aroma and flavor dominates the tastebuds. The second catch-eye image would be the look-alike noodle, which is made with slice of squid. Please note that blending all ingredients together before eating. My friend and I both consider this is the dish of the day. The dish is suitable for 2 ~ 3 people to share. The average price would be quite reasonable. I would recommend this dish to people who like to eat seafood.

味噌炸湯

Miso Fried Soup
Price: NTD $330

這道料理主要食材為昆布, 白味噌, 豆漿奶酪. 原本以為是與 “ Logy 餐廳茶碗蒸”一年四季都出現在菜單上, 但實際上 Gen Creative 主廚是用一樣的炸湯概念卻用不同形態貫穿在一年四記得菜單. 看似炸豆腐搭配昆布和蔥絲就像一道平民小吃, 後來得知主廚將味噌湯與吉利丁結合而成湯凍, 再油炸成金黃酥脆外皮, 入口時就跟吃“鼎泰豐小籠包”一樣有熱騰騰且爆汁的口感, 在驚豔的同時, 味噌風味在口裡散開. 網路上有人覺得 NTD $330 有點昂貴, 我認為湯凍用油炸風格出現相當少見, 我個人會推薦這道料理給喜歡簡單風味卻以費工手法呈現的人.
The dish is created with Konbu, White Miso, and Soymilk Panna Cotta. I thought that this exact dish appears at every season menu, just like “logy” signature dish. However, the fried soup dish concept is the same, but the appearance is different. The image looks like fried tofu. But in fact, it is made with miso soup and gelatin. While eating this dish, it feels like tasting the juicy soup dumpling at “Din Tai Fung“. At the same time, the tastebuds would sense the thick miso soup flavor. People might think that NTD $330 is expensive. But in my opinion, it is rare to see soup seared into the crispy appearance. I would suggest this dish to people who like creative cooking method and display.

甜點: 舒芙蕾

Souffle
Price: NTD $480

這道料理主要是鐵觀音舒芙蕾, 鳳梨冰淇淋, 巧克力與蘭姆酒. Gen Creative 的蓬鬆鐵觀音舒芙蕾與 “A Cut Steakhouse” 崩塌鐵觀音舒芙蕾等級不同, Gen Creative 主廚強調舒芙蕾的濃郁鐵觀音茶香, 將湯勺裡的的蘭姆酒風味巧克力放入溫熱舒芙蕾裡, 一併入口, 酒香與鐵觀音茶香多層次堆疊於舌尖. 我也喜歡另一個主角鳳梨冰淇淋, 即使冰冷溫度降低味蕾感覺, 但冰淇林吃起來依舊鳳梨香十足, 卻沒有強烈酸甜風味, 我會建議兩人分享 (若愛吃甜食也是可以自己一個人吃).
The dish isIron goddess tea, Pineapple, Blond Chocolate and Rum. Gen Creative’s souffle fluffy appearance is different from the collapse souffle at “A Cut Steakhouse”. The strong tea flavor and the great rum chocolate layers up at the tastebuds. I also like the pineapple ice cream as well. I would suggest for 2 people to share (You of course can eat all by yourself).

烤牛骨髓

Bone Marrow
Price: NTD $330

這道料理主要是牛骨髓, 紅蔥頭, 風輪草, 猶太辮子麵包. 麵包是與 Purebread Bakery 合作, 非常鬆軟美味. 牛骨髓視覺上與 “Smith & Wollensky Taipei” 的烤骨髓不同, Gen Creative 烤牛骨髓裡吃起來像非常軟嫩牛筋, 紅蔥頭與牛肉永遠都是經典搭配, 鹹香入口是一種享受, 點杯紅酒搭配也不錯.
The dish is combined with bone marrow, Shallot Marmalade, Savory and Challah. Gen Creative cooperates with Purebread Bakery for the bread part. The bone marrow appearance is different from the bone marrow at “Smith & Wollensky Taipei”. Gen Creative none marrow tastes a bit like extremely soft beef tendon. Shallot always pairs great with the beef. Maybe you could order a red wine to pair with this meaty dish.

法式麵疙瘩

Parisian Gnocchi
Price: NTD $380
Foodelicious 美味程度: 👍👍👍

這道料理主要是梅爾黃檸檬, 芥蘭青醬,山茼蒿和佩科里乾酪. 外觀與塊狀麵疙瘩不同, 這道料理是起司風味為主導, 山茼蒿如同炒川七口感並不會軟爛, 也許因為乾酪成本高, 可惜份量沒有預期地多.
This dish is made with meyer lemon, kale pesto, chrysanthemum,and pecorino. The appearance is different from the classic Gnocchi. The cheese flavor dominates this dish. The vegetable is not mushy, instead, it is crisp. However, the quantity is not as much as expected.

 

屏東豬五花

Bossam
Price: NTD $660
Foodelicious 美味程度: 👍👍👍

這道料理主要包括台灣豬五花, 泡菜,小黃瓜 和豆瓣醬. 這道料理概念很明顯是眾所皆知的韓式包菜五花肉. 當店員端上桌時, 份量足以讓四人分享. 雖然 Gen Creative 與 “Logy” 用得皆是台灣豬五花, Gen Creative 的豬肉偏 Q 彈, 油脂相對較多, 以吃韓國菜餚方式, 豬肉, 泡菜, 小黃瓜和豆瓣醬放到生菜上入口, 韓國泡菜的辣味稍微會搶走豬肉鹹香風味, 如果喜愛豬肉鹹香, 豆瓣醬和泡菜放少一點會比較好. 至於你問我喜歡吃 “nku Taipei 柴燒料理餐廳” 的伊比利豬肉還是台灣豬, 各有風格吧!
This dish is made with pork belly, Ssäm Sauce, cucumber and kimchi. The concept is obvious from the famous Korean dish. This quantity is enough for 4 people to share. Gen Creative’s Taiwanese pork is a bit on the firm side along with more fats than expected. My opinion is that if you prefer meaty flavor, you might want to add less spicy kimchi and cucumber.

胡蘿蔔蛋糕

Carrot Cake
Price: NTD $340
Foodelicious 美味程度: 👍👍👍

這道甜點料理元素包括胡蘿蔔, 焦化奶油 ,奶油乳酪, 和馬斯卡邦起司.胡蘿蔔蛋糕在台灣不常見, 甚至我在台灣異國料理餐廳都沒有吃過胡蘿蔔蛋糕. Gen Creative 主廚很聰明將蛋糕分塊, 分食較為方便. 這道甜點吃起來我最滿意反而是看似 Brownie 扎實口感但實際上蓬鬆口感.
This dessert includes carrot, Brown Sugar, Cream Cheese, and Mascarpone. It is rare to see carrot cake on the dessert menu. Get Creative chef is smart to separate the cakes into small pieces instead of one large whole piece. My favorite part about this cake is the fluffy texture though.
