Kitchen 10 Taipei 》十方長私廚餐廳將台北私廚重新定義

台北私廚越來越多, 只是私廚這個名詞侷限了許多人想去的意願, 這家台北大安區私廚 – 十方長私廚餐廳則是與西式餐廳一樣, 有午晚餐菜單和可接受單人訂位. 這次部落客朋友工作, 我輕鬆陪吃, 所以會有兩份晚餐套餐, 文章頗長.
There are lots of private kitchens at Taipei City. Kitchen 10 Restaurant’s Chinese name is actually related to Private Kitchen. But the fact is that this is actually just a Western Cuisine Restaurant. They offer Business Lunch and Dinner menu. You can also reserve one-person seat.

2018 年新開幕的十方長私廚最靠近大安捷運站 6 號出口, 我是沿著信義路四段走轉進大安路一段, 十方長私廚就位在 “Le Blanc 餐廳” 後面的巷弄內. 低調餐廳招牌倒是與私廚名詞不謀而合, 進入餐廳時, 原本以為會像 “ 逗號洋行私廚 Curio Comma Taipei“ 只有長桌, 孰不知餐廳格局有分單人高腳座位和適合四至六人的桌椅. 店家是提到十方長私廚是預約優先制, 也是可以直接 Walk-in, 就與其他家餐廳一樣, 我會建議事先訂位.
The 2018 newly-opened restaurant is located near No. 6 of Da’an MRT station. Its location is also near “Le Blanc Restaurant”. At first, I thought the indoor would be like “Curio Comma Taipei“ with long table. However, it has single seats and 4 ~ 6 people seats that is suitable for family dining. You can call to reserve or walk-in. However, I would suggest to reserve seats.

餐前小點

Amuse Bouche

十方長私廚與其他西式餐廳 (例如: “Verde Taipei 素食餐廳“) 一樣皆有提供餐前小點, 店員端上炸火龍果花, 主廚已事先將芥末蛋黃醬置放於表層, ㄎㄠˇ一聲喚醒吃的慾望, 外層酥脆, 內部則是吃起來類似秋葵有脆嫩並存的口感, 主要風味還是以芥末風味為主, 我個人蠻喜歡這道小點. 火龍果花這款食材與米其林一星 “Logy ” 2019 夏季菜單燒烤檳榔花一樣不常見, 我其實很驚訝可以在這家餐廳吃到火龍花果食材, 主廚必須有一定的餐飲經驗才會想出這道餐前小點.
Kitchen 10 Taipei is similar with “Verde Taipei” that offers Amuse Bouche. This dish is fried dragon fruit flower. The crispy appearance is perfect for starter. It tastes a bit like okra, but the flavor is dominated with the mustard flavor from the sauce. Same as “Logy”’s betelnut flower, dragonfruit flower is not common in Taiwan western cuisine restaurants. Honestly, I was surprised to see this ingredient in this particular restaurant.

冷前菜: 煙燻櫻桃鴨, 芒果, 薄荷

Cold Starter: Smoked Duck, Mango, Mint

十方長私廚每三個月換一次菜單, 我跟朋友是8月去吃, 下次換菜單是 9月1日. 巴薩米克醋和煙燻鴨肉已是不敗的經典組合, 倒是乳白色蜂蜜優格醬稍微蓋住三年熟成巴薩米克醋的經典濃甜風味, 比較可惜, 或許主廚選一個醬料即可?!? 番茄與芝麻葉更是西餐料理前菜不可缺少的元素, 主廚則是發揮巧思讓芒果清甜果香風味勾勒出夏季風情.
Kitchen 10 Taipei changes the menu once in three month. My friend and I went to visit around August. The balsamic sauce and smoked duck is a classic combination. However, the honey yogurt sauce covers the 3-years-aged Balsamic sauce sweet flavor. The tomato and arugula always appear in the western cuisine appetizer. The refresh and sweet from mango would be a surprising element.

 

冷前菜: 鮭魚 × 酪梨 × 柴魚

Cold Starter: Smoked Duck, Mango, Mint

這道冷前菜的外型與 “ 廚子 Le Marché de Cuistot” 的水牛花園沙拉有些相似, 以酪梨代替水牛起司. 看似單純的沙拉裡卻有意想不到的鮭魚海味, 再加前菜不常見的飛魚卵和微辛香芥末籽, 老實說, 這道冷前菜在其他西式輕食餐廳 (例如: “AVENUE TAIPEI”) 可以獨當一面. 只是醬汁頗多讓生菜吃起來呈現軟的口感, 若是喜歡創意, 你可以選這一道冷前菜, 若是喜歡經典, 可選上一道煙燻鴨肉.
The dish appearance is similar with “Le Marché de Cuistot” cheese salad. The avocado substitutes the cheese. This salad has interesting ingredients- salmon, roe, and mustard seeds. Honestly, there are too many sauce and makes the salad vegetable too moist instead of crisp. If you like creative dish, this dish is for you. But, if you like classic dish, the smoked duck appetizer is for you.

龍蝦濃湯

Lobster Soup

Price: Extra + NTD $60

只需加價 NTD $60, 即可升級到龍蝦濃湯, 餐廳菜單主餐選項裡有龍蝦套餐, 因此物盡其用, 有了這道龍蝦濃湯, 店家與 “al sorriso 餐廳” 一樣採用 Table Service. 湯品雖然沒有 “50/50 Cuisine Française”濃郁, 但是十方長私廚的龍蝦濃湯算是非常有誠意, 三小時熬煮龍蝦頭和殼, 再放進一些蝦肉與白蘭地泡泡, 海鮮風味與奶油香氣造就這一道看似簡單卻費時的湯品, 我個人推薦加價 NTD $60 升級為龍蝦濃湯.
You would need to add NTD $60 to upgrade to this Lobster Soup. The soup is served with table service, just like at “al sorriso restaurant”. The soup texture is not as thick as “50/50 Cuisine Française”’s lobster soup. But with this level of the price, this soup is definitely worth it. The chef stewed 3 hours with lobster and lobster shell and added in shrimp meats and foam. The soup tastes quite well along with both seafood and buttery flavor. I would definitely recommend this dish.

每日濃湯: 野菇濃湯 & 烤麵包

Daily Soup: Mushroom Soup & Bread

十方長私廚店員陸續端上烤麵包, 油醋醬, 和野菇濃湯. 野菇香氣和奶油風味是熟悉的組合, 湯裡的麵包切塊是裝飾也是不可缺少的食材. 酥脆烤麵包搭配油醋不錯吃.
The mushroom soup tastes more buttery flavor than the mushroom flavor. The baked bread is crispy and tastes above average with balsamic sauce.

 

 

12 小時低溫烹煮豬五花, 梅乾醬, 竹筍

12 Hours Sous-Vide Braised Pork Belly, Pickled Mustard Greens Sauce and Bamboo

主廚端上菜餚時有提到這道料理是以台菜作為發想, 雪白色竹筍切片如同藝術品置放在油亮豬五花上, 值得一提的是梅乾菜與牛骨熬煮成汁, 不再是單一風味, 豬與牛以不同食材結合勾勒出這道有趣的菜餚.
This dish is the visual image of the day. The staff mentioned that this dish idea is originated from a Taiwanese cuisine dish. The white bamboo slices are like artwork placing at the Sous-Vide Pork Belly. The pickled mustard greens are stewed with beef bone into the sauce. Who would know that the pork and beef ingredients can be in one dish together.

 

 

干貝, 生蠔, 海膽醬

Scallop, Fried Oyster, Sea Urchin

這次在十方長私廚吃的酥炸生蠔與“香頌私宅” 有些相似, 裹粉並沒有過厚, 口感酥脆搭配適量海味霸佔著味蕾, 這道菜有三種台灣人最愛的三種海鮮食材- 生蠔, 干貝與海膽醬, 無庸置疑相當滿足. 我個人會推加價NTD $100 這道熱前菜.
The fried oyster is similar with the one at Chanson Bistro. The mouth immediately sense crispy texture with strong seafood flavor. This dish has Taiwanese’s favorite seafood ingredients -oyster, scallop, and sea urchin sauce. I believe that most Taiwanese would be satisfied. I would recommend this hot starter over pork belly dish.

每日海鮮

Daily Seafood

每日海鮮顧名思義是用不同烹煮方式來料理不同魚料. 這次吃的是紙包魚, 魚料則是龍虎斑, 魚皮藏有豐富油脂, 讓原本鮮嫩魚肉口感更加升級, 搭配香料,番茄, 和蛤蠣, 底部的荷蘭醬讓這道料理完全西化. 我個人喜好吃不沾任何醬的魚料.
Kitchen 10 restaurant offers Fish Parcel for the daily seafood. The daily fish is grouper. The fish skin contains lots of fats to upgrade the meat tenderness. The chef adds various spices, tomato, and clams to add more complex flavor. The Hollandaise sauce is at the bottom. However, I personally like simple fish without any sauce.

 

 

羅西尼牛排

羅西尼牛排其實是鵝肝嫩煎菲力, 十方長私廚餐廳則是將鵝肝替換成鴨肝, 如果不吃鴨肝, 比較不適合點這道料理. 這道4oz 牛排料理視覺立體感相當令人滿意, 醬汁流至牛排側邊, 千層馬鈴薯在“Stagiaire 實習生餐廳”有吃過, 十方長私廚的千層馬鈴薯較為軟而不是脆. 店員建議牛排五分熟, 有點嚼勁, 吃第二口時, 才驚覺濃郁肉香才是這道料理的真正特色. 如果要在每日海鮮和羅西尼牛排選一款, 我會選牛排.
Tournedos Rossini Steak is actually Fillet with goose liver. Kitchen 10 Restaurant uses duck liver instead of goose liver. If you don’t eat liver, this dish might not for you. The 4oz steak’s image is quite impressive, especially the layers of potato. The staff suggested medium, which is a bit chewy. The thick meaty flavor and aroma is actually the selling points of this dish. If I have to choose between daily fish and steak, I would choose steak.

十方長私廚餐廳並沒有酒單, 只有單款紅酒與白酒. 這款來自智利的紅酒酒體偏飽滿, 並沒有單寧過於刺激味蕾, 單純莓果香氣百搭紅肉品
The restaurant doesn’t have a wine list. It just has simply red wine and white wine. This Chile red wine body is a medium-full. There isn’t much tannin to stimulate the tastebuds. The berry flavor pairs great with red meats.

由於也有小朋友會到餐廳來用餐, 因此提拉米蘇並沒有酒香.
Since there are kids dining in the restaurant, the tiramisu doesn’t have much alcohol flavor though.

吃起來並沒有過於刺激的酸或是多餘的甜.
It tastes average.
