台北喜來登 辰園The Dragon Taipei )是台北米其林餐盤餐廳之一 , 這次則是品嚐單點 辰園菜單 桌菜為主, 而不是辰園港點吃到飽.
The Dragon Taipei, which is located at Sheraton Hotel, is one of the Taipei Michelin Plate restaurants. We ordered quite a lot of Cantonese dishes.

辰園訂位

Sheraton The Dragon Reservation

辰園餐廳位於台北喜來登飯店的B1, 離善導寺二號出口只有約5分鐘時間, 走進大廳後, 往左邊走, 下樓梯或是電梯到 B1 即可看到辰園招牌. 餐廳裡面的座位非常多, 這次雖然有 20 人, 但是我們並沒有坐包廂, 我們則是坐在靠近角落的兩張大桌. 辰園訂位可用網路訂位 ( https://reurl.cc/KxNMpn ), 也可用電話訂位 02-2321-1818.
The Dragon Taipei is located at B1 of Sheraton Hotel. It is about 5 minutes walking from Shandao Temple MRT Station. There are lots of seats at the restaurant. We have 20 people but we didn’t sit at the private dining room. You can reserve seats via online ( https://reurl.cc/KxNMpn ) or use phone call 02-2321-1818.

這款 2001年陳年毛尖普洱茶剛開始是夠濃夠甘醇, 不錯喝, 只是越喝越淡, 比較可惜. 我比較不解的是茶資是用 NTD $150/人 來算, 而不是用壺來算, 我們是一桌10 人, 雖然有喝酒, 卻只有一壺茶, 照理來說至少要有兩壺吧?
This tea at the beginning is quite strong and full of tea aroma. However, at the end, the tea flavor is almost gone. We drank wine as well. Since the tea fee is counted as per person, our table (10 people) should have two tea pots.

黃金片皮鵝捲餅

Roasted Goose Skin with Thin Pancake

我上次吃到烤鵝是在 “大三元”, 辰園餐廳一樣是採用台灣鵝, 一樣先是呈現一整鵝, 如預期般地大size , 可惜切工並沒有熟練, 不規則的切片太多. 咬一口捲餅, 舌尖可感受到鵝皮間的油脂, 我必須承認辰園的鵝比辰園的鴨好吃.
Last time I had roasted goose was at “Three Coins”. The Dragon Taipei also uses Taiwanese goose. The whole goose is quite large. However the slicing technique is not delicate enough. After the first taste, the tastebuds can sense the fats from the goose skin. I have to admit that their roast goose tastes better than their roast duck.

脆皮燒鵝腿

我必須說燒鵝腿觀感十分誘人, 也如預期般地嫩且帶有適量肉香.
I have to say that the appearance is quite attractive. And it tastes as delicious as expected.

 

涼拌七彩鵝絲

Shredded Goose and Vegetables with XO Sauce

這一道是當天最多人爭先恐後拍照的菜餚, 色彩鮮豔如同宮廷菜, 刀功細緻, 七彩並不代表只有七種食材, 網路是寫主廚採用鵝肉, 鮑魚, 蘋果, 香菜,北菇,海蜇,柚子,紅椒與青椒, 拌勻XO醬, 之後加進入的松子增加口感, 不同的食材帶給不同的口感, 可惜的是風味主導只有XO醬的鹹香微辣.
This bright and colorful dish is most IG-Friendly dish of the day. The slicing skill is delicate enough. The website stated that the chef uses goose meat, abalone (?!), apple, celery, mushroom, jellyfish, grapefruit, red and green peppers. You would need to mix with XO sauce and add the pine nuts for texture. Each ingredient brings different texture. However, the dominated flavor is still XO salty sauce.

 

酸菜鵝骨蚌細粉

Goose Soup with Tofu and Arrowroot Powder Sticks

我個人雖然對酸菜並沒有的喜好, 但是也不會排斥, 鵝骨架熬煮讓這道湯品有微濃郁口感, 豆腐與冬粉明顯地有吸收足夠的湯汁, 酸菜也不會很搶走濃醇湯頭的風采. 酸菜鵝骨蚌細粉明顯比另一道鴨肉粥好太多!
I don’t have much interest nor against for Fermented vegetables. The soup has thick texture and meaty flavor. The tofu and bean noodle absorbs fair amount of the soup. The dish tastes better than duck congee.

 

脆皮叉燒

Crispy BBQ Superior Pork with Caramelized Sugar
Price: NTD $580

叉燒在台灣很常見, 許多餐廳要將這道菜餚做到出色也是不容易, 目前我記憶最深刻的叉燒是台北米其林三星 “頤宮 Le Palais”, 價格偏高卻也不錯吃. 網路提到辰園主廚採用松阪豬肉(豬頸肉) 部位, 以糖葫蘿概念將炙燒糖衣完整地包覆著肉品, 有趣的是吃起來並不會過甜, 肉也是軟嫩且帶有鹹香. 這道脆皮叉燒算是比較費工的菜餚.
The Cantonese BBQ pork is quite common. It is not easy to find delicious BBQ pork. I still remembered that “Le Palais” BBQ pork is the most delicious but yet the higher price. The website stated that the chef uses pork nest meat. The candied pork is not too sweet. And the meat is tender with meaty flavor.

百花釀油條

Stir-Fried Chinese Pastry with Chili and XO Sauce
Price: NTD $520

我上次吃百花釀油條是在 “鴻寶港式海鮮”, 我個人比較喜歡鴻寶的酥脆XO 醬百花油條, 辰園的百花釀油條是偏軟口感因為有浸在醬汁裡, 鑲入油條的蝦漿也沒有特別飽滿.
Last time, I had this similar dish at “Hon Buo Cantonese Seafood Restaurant”. I personally like Hon Buo’s crispy stir-fried Chinese pastry crispy texture. This particular dish tastes too soft since it is soaked into the sauce. There isn’t much of shrimp paste as well.

芥蘭骰子牛

Sautéed Dice Beef With Chinese Broccoli
Price: NTD $780

讓我比較驚訝的是芥蘭不會偏苦, 這道的芥蘭脆感高, 美國牛肉吃起來軟嫩, 肉偏鹹香, 可惜價格 NTD $780 有點偏貴.
I am a bit surprised that the Chinese Broccoli is not too bitter. The USA meat tastes quite tender and tasted a bit salty and full of meaty flavor. But, NTD $780 is a bit expensive.

 

豉椒炒生腸

Wok-Fried Pork Intestine and Bell Peppers with Fermented Black Beans
Price: NTD $520
Foodelicious 美味程度: 👍👍👍

由於我們一桌有十位, 這道菜其實比較適合 4 ~ 6 位, 再搭配一道飯或是麵食會比較好, 反而是單吃比較沒有記憶點.
Since we have 10 people, this dish is suitable for 4 ~ 6 people. It would be better to pair with starch.

 

XO醬炒龍筋

Stir-Fried Pork Tendon, Onions, and Colored Capsicums with XO Sauce
Price: NTD $600

這道與上一道豉椒炒生腸是同樣的狀況, 應該要搭個飯比較適合.
This is the same situation as the last one dish. It would better to pair with starch.

廣式片皮鴨捲餅

Roasted Duck Skin Wrapped in Pancakes with Scallions and Sweet Flour Paste

台灣粵式餐廳最常看到的應該就是烤鴨, 2019 年我最喜歡的烤鴨在”台北遠企香宮”, 目前 2021 倒是沒吃到令人驚艷的烤鴨. 主廚採用的是宜蘭鴨, 油亮酥脆表皮, 搭配微嫩的鴨肉, 可惜吃起來並沒有驚豔.
The roast duck dish is probably the most common dish at Taipei Cantonese Restaurant. My favorite roast duck at 2019 was at “Shang’s Place”. However, I didn’t taste any surprisingly good roast duck at 2021. The chef uses Taiwanese duck. The oily bright texture is quite crispy. The tenderness is only above average.

脆皮鴨腿

Crispy Duck Legs

雖然鴨跟雞不同, 平平都是腿部位, 我個人比較喜歡”晶華軒”的脆皮吊燒雞.
Even though duck is different from duck, but it is still the leg part. So, I would prefer the roast chicken leg at “Silks House Taipei” instead of this dish.

椒鹽鴨架

Stir-fried Duck Bones with Salt and Pepper

我本來就沒有偏好椒鹽鴨架, 吃起來偏普通.
The dish tastes just average.

 

香滑鴨絲粥

Duck Congee
Foodelicious 美味程度: 👍👍

這大概是我吃過最清淡的鴨肉粥, 我個人比較偏好濃稠且入味十足的粥.
This is probably the lightest duck congee ever. I would prefer the thicker texture Congee along with meaty flavor.

 

黃金片皮烤乳豬

Suckling Pig (Whole)
Price: NTD $8600

這次在辰園吃到的乳豬比 “JUJU Spanish Restaurant” 好很多, 只是我個人還是認為在中式餐廳還是吃燒臘豬肉就足夠, 不需要吃到整隻乳豬.
The Dragon Taipei’s suckling pig is better than “JUJU Spanish Restaurant”. However, I still think that it is better to taste BBQ pork at Chinese restaurant instead of a whole pig.

金磚燒肉

Barbecued Roasted Pork
Price: $480
Foodelicious 美味程度: 👍

遠看還可以, 近看發現盤底油膩到不行, 外層口感是酥脆, 可惜肉的口感並沒有嫩, 除了偏硬外, 還多了些油膩感.
From far away, the appearance looks okey. But, the overwhelmed pork fats are placed at the plate bottom. The texture is not tender enough.

 

金銀蛋時蔬

Stir-Fried Seasonal Vegetables with Preserved Egg and Salty Egg
Price: $480
Foodelicious 美味程度: N/A

我個人不太吃 “熱的皮蛋”, 所以這道我沒有吃.
I don’t eat hot preserved egg, so I didn’t taste it.

 

結論 Conclusion

那天我們在辰園並不是吃港式點心, 而是桌菜, 而且我們不是坐包廂, 辰園是台北米其林餐盤餐廳之一, 當時我是期待吃到更多出色的菜餚, 可惜吃完後表現平平, 有點失望. 我個人不推薦辰園, 因為台北有許多其他粵式餐廳可選擇.
We didn’t taste Cantonese dim sum at The Dragon restaurant. And we didn’t sit at the private dining room. The Dragon restaurant is one of the Taipei Michelin Plate restaurants. I would expect more delicious dishes. However, it overall tastes average. I am quite disappointed. I don’t recommend The Dragon since there are many Cantonese Restaurants at Taipei City.
