饕客朋友們一起聚餐, 主揪人與阿香工作坊討論這次客製化的私廚菜單, 我沒有訂位方式, 這一篇文章只是紀錄簡單我那天品嚐的預約制家常江浙菜桌菜.
Foodies gather around and enjoy foods. The hostess discussed the custom-made private kitchen menu with the restaurant owner. I don’t know how to reserve seats. This article is simply just take notes of what I tasted that day.

阿香工作坊 地址

A-Xiang Private Kitchen Address

阿香工作坊地址為新北市永和區豫溪街74巷2弄3號2樓, 而非像 “海派上海小吃” 在熱鬧地段的餐廳店面, 離頂溪捷運站約 15 分鐘路程. 請注意私廚是位於民宅內, 需要客人自行按樓下電鈴. 阿香工作坊會協助開門.
A-Xiang Private Kitchen’s address is 2F, No.3, 2nd Alley, 74th Lane, Yuxi St., Yonghe District, New Taipei City. It is not located at the busy street, such as “Hai Pai restaurant”. It is about 15 minutes walking distance from Dingxi Metro station. Please note that this private kitchen is inside the apartment. You will need to ring the door bell. They will open the door for you.

阿香工作坊 包廂

A-Xiang Private Dining Room

阿香工作坊包廂可坐 8 ~ 10 位, 適合家庭聚餐. 桌椅比其他台北私廚的桌椅高級且頗舒適, 洗手間也非常乾淨.
The Private Dining Room can be seated with 8 ~ 10 people. It is comfortable for family gathering. The chairs and tables are better and more comfortable comparing with other Taipei private kitchens. The restroom is clean as well.

Braised Beef Brisket and Beef Tendon with Radish

阿香工作坊的招牌菜之一是燉煮蘿蔔牛腩牛筋. 這道菜的特色在於主廚選用了青蒜作為調味, 而非傳統的青蔥, 有適量蒜香提味, 但不會久留於味蕾, 餐廳提到牛腩牛筋皆是上次在 “牛肆” 吃到的台灣溫體牛, 有著軟嫩口感與香醇肉香, 蘿蔔在燉煮過程中吸收了精華, 更顯得多汁美味, 比 “喜相逢”的紅燒牛腩牛筋煲美味, 令我忍不住品嚐 2 碗.
This braised radish with beef brisket and tendon is a signature dish at A-Xiang Private Kitchen. Instead of using green onions, the chef opts for green garlic, which adds a moderate garlic flavor to the dish without overpowering the taste buds. The restaurant mentions that the beef brisket and tendon are sourced from Taiwan’s locally raised cattle, similar to what you had at “Niu Si” before. They have a tender texture and a rich meaty flavor. The radish absorbs the essence of the broth and becomes juicy, making it even more flavorful than the braised beef brisket and tendon pot at “Xi Xiang Feng” I couldn’t resist having two bowls of it.

Stewed Pork Meatball with Tomato

我在台北吃過許多砂鍋獅子頭菜餚 ( 例如: “晶華蘭亭餐廳” , “泰和樓” , “南村 私廚‧小酒棧” ). 這次在阿香工作坊吃到的是我最滿意的獅子頭菜餚. 不同於其他餐廳, 阿香工作坊主廚選用了溫體豬肉作為食材 , 並加入洋蔥與蕃茄, 獅子頭多汁且有綿密口感, Size 頗大, 也非常地美味 , 吃起來很過癮 , 建議跟餐廳討論菜單時, 要點這一道招牌菜餚.
I tried many Stewed Pork Meatball at Taipei restaurants (For example: “Silks House Lan Ting” , “Tai He restaurant” and “44 SV Bistro”). I am quite satisfied with this stewed pork meatball with tomato dish at A-Xiang Private Kitchen. The chef uses locally raised pork for the dish and adds onions and tomatoes to enhance the flavors. The meatballs are juicy and have tender texture with large size. I would recommend discussing this signature dish with the restaurant when discussing the menu options.

Chicken Broth with Fish Maw and Chinese Cabbage

上次品嚐到滿意的花膠雞湯是在 “喜來登請客樓“, 白菜圍繞著全雞與花膠,我是個愛喝雞湯的人, 阿香工作坊的雞湯醇厚不膩, 我對雞肉與白菜倒是其次, 真心希望雞湯能夠多一些.
The recent satisfied chicken broth was at “The Guest House “ at Sheraton Hotel. The whole chicken and fish maws are surrounded by the Chinese cabbage. I always love chicken broth. A-Xiang’s chicken broth is thick and not greasy.While the focus of the dish may be on the chicken and cabbage, I wish to have more chicken broth serving.

Braised Bitter Gourd with Dried Plum Vegetable

這一道梅菜苦瓜冷盤是「 開胃盆頭菜」之一, 江浙菜的盆頭菜指的是類似西式前菜或開胃菜的小份量菜餚. 梅菜和苦瓜這兩種食材通常不是我主動點選的首選, 之前在 “logy” 吃過山苦瓜, 在 “Taïrroir 態芮”吃過苦瓜冰淇淋, 都是有許多食材堆疊且降低苦度. 在阿香工作坊的梅菜苦瓜冷盤中,梅干菜的獨特味道將苦瓜的苦味完美地掩蓋住,呈現出令人驚艷的口感。整道菜餚爽口宜人且略帶鹹香,完全出乎我的預料。
Braised Bitter Gourd with Dried Plum Vegetable is one of the small size appetizer. I don’t usually order bitter gourd nor dried plum dish. I tried the bitter squats at “logy” and bitter gourd sorbet at “Taïrroir”. However, they tend to use lots of other ingredients to cover the bitterness. A-Xiang chef is able to complement and balance out the bitterness of the gourd by one single ingredient – dried plum. The combination of flavors and the surprising taste experience are delightful. It’s always a pleasant surprise when a dish exceeds expectations.

Shrimps with Pine Nuts and Japanese Yam

台灣中式餐廳都有很多出色的以手剝蝦仁為主角的菜餚 , 例如 “榮榮園”的清炒蝦仁 與 “喜相逢“ 的龍井蝦仁, 這次在阿香工作坊品嘗到令人印象深刻的松子山藥劍蝦仁. 咬一口蝦仁, 味蕾能即時感受到迷人鮮味, 松子賦予不同的脆爽口感, 而山藥將這兩種食材巧妙地結合在一起。這道菜餚不像常見的料理那樣油膩,反而展現出細緻的美味和視覺感。
Chinese restaurants in Taiwan have many hand-pulled shrimp dishes (For example: “Rong Rong restaurant” stir-fried shrimp and “Xi Xiang Feng” shrimp with Longjing Tea flavor). I taste the impressive Shrimps with Pine Nuts and Japanese Yam dish at A-Xiang Private Kitchen.Taking a bite of the prawn, my taste buds were immediately delighted by its captivating freshness. The pine nuts added a different crispy texture, while the yam skillfully combined these two ingredients together. This dish stood out with its delicate flavors and visual appeal, unlike typical greasy dishes.

Braised Green Wrasse and Tofu

這一道的青衣魚 Size 可媲美飯店餐廳等級 , 相比之下,我在之前在「85天地」吃到的青衣魚則是切成塊狀. 豆腐充分吸收了醬燒的鹹香風味,並與青衣魚所散發的精華相融合。蔥、蒜、薑和酒等調味料的適量使用使得整個菜餚保持了平衡。青衣魚入味豐富,同時也保持了鮮嫩的口感, 不錯吃.
The size of the Green Wrasse in this dish can rival that of restaurant-grade quality. In comparison, the Green Porgy I had at “85 TD restaurant” previously was cut into chunks. The tofu fully absorbed the savory flavor of the braised sauce and blended harmoniously with the essence of the Green Wrasse. The moderate use of seasonings such as scallions, garlic, ginger, and wine ensured a balanced taste throughout the dish. The fish was richly seasoned while maintaining its tender texture, making it quite delicious.

Braised Crispy Bean Curd

這道也是「 開胃盆頭菜」, 遠看以為是像 “鼎泰豐” 的烤麩, 薄豆皮滷得鹹香且美味.
This dish is also the appetizer. I thought it was the braised wheat gulten at “Din TaI Fung”. It turns out to be the delicious braised crispy bean curd.

Scallop & Abalone with XO Sauce ( spicy seafood sauce)

Even though the size of scallop and abalone are small, those are still expensive ingredients. Adding fair amount of XO Sauce, the seafood and spicy flavor and aroma mixed well together.

Cucumber & Black Fungus

這一道涼拌川耳冷盤也是「 開胃盆頭菜」, 木耳多過於小黃瓜.
This is also one of the appetizers. There are more black fungus than cucumber.



Braised Pork Knuckle and Sea Cucumber

我本來就很少吃烏參, 豬腳則是有濃郁醬香.
I rarely eat sea cucumber. The braised pork knuckles has thick flavor.
