台北喜來登辰園台北米其林入選餐廳. 這次是二訪台北喜來登辰園坐包廂. 辰園菜單的新菜餚由新主廚伍志杰設計.
The Dragon at Taipei Sheraton Grand Hotel is a Michelin-selected restaurant in Taipei. This was my second visit. The new menu items are designed by the new head chef, Wu Zhi-Jie.

Prologue 序言

這次二訪是坐包廂. 很久以前的 一訪辰園是坐外面的大桌. 這次重複點的菜餚有片皮鵝四吃與片皮烤乳豬 . 建議大家多多使用 “美饌卡” 到飯店消費. 一訪與二訪到辰園消費都靠友人的美饌卡打折
Different from my first visit, I was seated in a private room at the 2nd visit. We reordered some dishes, including the Four Ways of Sliced Roast Goose and the Sliced Roast Suckling Pig. I recommend making good use of the “Humble House Gourmet Dining Card” for discounts.

頭抽煎焗虎蝦

Pan-seared Tiger Prawns with First Draw Soy Sauce.

此道是新菜餚. 最令人印象深刻的是餐廳自製的頭抽醬. 香港醬油種類有生抽, 老抽與頭抽. 頭抽是是黃豆發酵後第一次取出的生抽.

主廚以頭抽為基底, 融合蒜頭,蔥薑, 冰糖與米酒製作成特製醬汁. 再將醬汁與虎蝦一起大火快炒. 外殼口感微焦脆. 虎蝦肉質厚實美味. 味蕾可感受到甜與鹹之間的巧妙平衡. 看似重鹹, 實際上是色香味俱全. 我推薦點!

This is a new dish. The highlight is the house-made “first draw soy sauce.” In Hong Kong-style soy sauces, there are light soy, dark soy, and first draw soy sauce. The chef uses it as a base, blending it with garlic, scallions, ginger, rock sugar, and rice wine to create a signature sauce. The prawns are then stir-fried over high heat. The shells are lightly crisp, while the meat is firm and flavorful. The taste balances sweetness and saltiness beautifully. I would recommend to order this dish.

 

 

堂啫海鹽薑茸焗海星斑

Baked Sea Grouper with Sea Salt & Ginger

此道為餐廳新推出的魚料理. 主廚將海鹽、蔥與薑與野生海星斑一同置入鍋中. 鍋蓋淋上玫瑰露酒且點火. 視覺秀加分不少. 在燜煮過程中, 蔥薑的清香與淡雅酒氣緩緩滲入魚肉, 使風味更顯立體.海星斑肉質細嫩鮮甜,搭配微焦蒜粒提味,層次更加分明。. 如果你喜歡魚料理, 我個人會推薦點這一道.
This is another new fish dish.Another new fish dish. The chef places sea salt, scallions, and ginger together with wild grouper in a pot, then pours rose wine over the lid and ignites it. It adds a dramatic visual element. During the cooking process, the aromatics and subtle wine aroma seep into the fish, enhancing its depth. The flesh is delicate and naturally sweet, complemented by lightly charred garlic for added layers. Recommended for seafood lovers.

上次吃到燒鵝是在 “捌伍添第餐廳“. 黃金片皮鵝是辰園的招牌菜餚之一. 2025.12月的黃金片皮鵝四吃價格是 NTD $5680. 需預訂

四吃: 黃金片皮鵝捲餅

Four Ways to Eat: Roasted Goose Skin with Thin Pancake

店員將一整隻鵝片皮. 刀工比一訪的時候更細心. 舌尖可感受到鵝皮間的油脂, 鹹香薄脆非常美味. 相較之下, 辰園的鵝比辰園的鴨好吃.
The staff expertly slices the goose tableside. Compared to my first visit, the knife work was more refined. The goose skin is thin, crisp, and rich with rendered fat. The taste is savory and satisfying. I find the goose here even better than their duck.

 

四吃: 酸菜鵝骨細粉湯

Pickled Cabbage and Goose Bone Broth with Thin Rice Noodles

每次三吃或四吃時 , 我總是希望其中一吃是湯類. 這次辰園的酸菜鵝骨細粉湯是我喜歡的湯款. 鵝骨熬製後的湯頭溫醇. 酸菜賦予的酸香刺激著味蕾. 吸收湯汁後的細粉再搭配一些鵝肉 , 簡單且美味.
One of my favorite parts of multi-course formats is when one course is soup. The broth, made from goose bones, is mellow and rich, while the pickled cabbage adds a bright acidity. The vermicelli absorbs the broth beautifully. The taste is simple yet deeply comforting.

 

 

四吃: 涼拌七彩鵝絲

Shredded Goose and Vegetables with XO Sauce

色彩鮮豔如同宮廷菜, 刀功細緻, 食材包括鵝肉, 鮑魚, 蘋果, 香菜,北菇,海蜇,柚子,紅椒與青椒, 拌勻XO醬, 之後加進的松子增加口感, 不同的食材帶給不同的口感, 可惜風味主導只有XO醬的鹹香微辣.
Visually vibrant, almost like a palace-style dish. Ingredients include goose, abalone, apple, cilantro, shiitake mushroom, jellyfish, pomelo, and peppers. Pine nuts add texture. However, the dominant flavor is primarily the savory, slightly spicy XO sauce.

黃金片皮烤乳豬

Whole Roasted Suckling Pig

黃金片皮烤乳豬也是辰園招牌菜餚之一. 不論吃西式烤乳豬或是中式烤乳豬, 最期待的是刀切脆皮的酥脆聲響. 油脂豐富不膩 . 醬與蔥賦予甜與鹹之間的平衡. 2025.12月 一整隻黃金片皮烤乳豬的價格是 NTD $9800. 建議有 10 人以上再預訂即可.
Another signature dish. The highlight is always the crackling sound when slicing through the crispy skin. Rich yet not greasy, with sauces and scallions balancing sweet and savory notes. The Price at 2025 December is NTD $9,800 for the whole pig. I would suggest to order this dish if you have more than 10 people.

 

 

 

沙母香焗絲苗

Baked Long-grain Rice with Mud Crab

2025. 12 月的價格是 NTD $3800. “絲苗” 是絲苗米. 不同於其他中式餐廳的台灣米, 主廚選擇用長型絲苗米. 適合製作廣式煲仔飯或蒸飯. 最特別的是餐廳以雞湯焗蟹再加米. 入口很明顯有蟹的海鮮風味與鹹香外, 適量的溫醇雞湯讓此道料理更有層次. 如果當天沒有點澱粉類, 可以考慮點這一道.
Price (Dec 2025): NTD $3,800. Unlike many Taiwanese restaurants that use short-grain rice, this dish uses long-grain “Silk Seed” rice. It is ideal for Cantonese claypot-style cooking. The rice is baked with crab and chicken broth, delivering both seafood umami and a gentle, layered richness. A great option if you haven’t ordered other starch dishes.

 

 

古法金錢雞 (無雞肉)

Traditional Golden Coin Chicken
**No Chicken, Only Skewered Pork and Liver

古法金錢雞是一道經典粵式懷舊手工燒味, 目前我只在辰園吃過. 菜餚名稱雖然是 “古法金錢雞” , 食材卻無雞肉. 主廚將糖漬肥豬肉, 瘦叉燒與雞肝堆疊, 串起後, 如同古代陸劇裡的銅錢造型. 入口後, 類似熟悉的叉燒甜鹹風味佔據味蕾. 雞肝無腥味. 這一道菜餚適合對傳統菜餚有興趣的人.
This is a classic Cantonese nostalgic dish. Interestingly, it contains no chicken even the name has “chicken” word in it. Instead, it features skewered layers of candied pork fat, char siu, and chicken liver. This dish is shaped like ancient Chinese coins. The flavor leans toward the familiar sweet-savory char siu profile, with no gaminess from the liver. Recommended for those curious about traditional dishes.

春風得意腸粉

Crispy Shrimp Rice Rolls

近年許多粵式餐廳將創意發揮到港式點心 “腸粉” . 腸粉皮搭配酥脆油條. 飽滿蝦漿比預期地多. 沒吃過創意類型腸粉的人可點.
Many cantonese restaurant seemed to be creative on the rice roll lately. In this dish, it is definitely a creative twist with crispy dough fritter inside. The shrimp filling is more than expected. If you never tried creative rice roll, you should order it.

 

三蔥牛仔粒

Beef Cube with Three types of Scallion

份量不多. 三蔥包括青蔥,紅蔥與大蔥. 牛肉外層偏微酥. 吃起來嫩鹹香.
There isn’t much quantity. The beef is tender, lightly crisp exterior. The taste is tender with savory flavor.

餃皮偏過黏. 我還是比較喜歡傳統的蝦餃.

I wish that there are more scallops.

在辰園比較適合點桌菜或是比較少見的港點.
I would suggest to order larger dish or unique style of dim sum.

 

陳醋蜇頭

Jellyfish Skin with Aged Vinegar

酸度適合作為開胃菜.
