Red Cotton Restaurant opened in October 2024 and is one of the few private dining spots in Taipei that focuses exclusively on Cantonese tasting menus. The restaurant’s signature dish from the set menu is the smoked pigeon.

Red Cotton is located at No. 21, Lane 313, Fuxing North Road, Songshan District, Taipei, Taiwan. It is about a 10-minute walk from Zhongshan Junior High School MRT Station. The restaurant shares its neighborhood with other private kitchens like Xu’s Private Dining and Zou Ji Restaurant.

我在台灣西式餐廳與粵式餐廳吃屏東乳鴿. 例如 “Orchid 蘭餐廳” 的烘烤熟成乳鴿 與 “ 朧粵 Longyue”的桂花燒乳鴿. 這次在紅棉 Red Cotton 吃到的煙燻乳鴿印象頗為深刻. 先是安排主廚 Tanya 端出製作好的煙燻乳鴿讓客人拍照. 再來則每人半隻煙燻乳鴿 , 一腿一翅. 第一口即可感受到適度的酥脆口感與獨特的煙燻風味. 多汁與肉香與預期符合. 請記得與餐廳確認此道菜餚在你們的菜單上.
I had Pingtung Pigeon at both Western and Cantonese restaurants in Taiwan. For example, the roasted aged pigeon at “Orchid Restaurant” and the osmanthus-glazed pigeon at “Longyue Restaurant”. But the smoked pigeonI recently enjoyed at Red Cotton left an vivid impression.Chef Tanya personally brought out the whole smoked pigeon for a brief photo moment before it was portioned and served—half per guest, typically a leg and a wing. The first bite revealed a lightly crisped skin and a distinct smoky aroma, followed by juicy, flavorful meat that met expectations. Please check in advance with the restaurant to ensure this dish is included in your menu.

第一刀叉燒
Cantonese BBQ Pork Shoulder (First Cut)

餐廳店員端上桌時, 我特地搜尋 “第一刀叉燒”. 源自香港大班樓的菜餚. 且採用的部位是豬肩膀的肉, 此款叉燒的專有名詞是 “脢頭叉燒”.“ 第ㄧ刀” 是指精準的刀工, 讓叉燒肥瘦相間. 紅棉的叉燒並非經典像 “晶華軒“叉燒的豔紅色, 反而是接近豬肉原本的顏色. 口感並不會過於油膩, 瘦肉存在感比肥肉高. 不會過甜的甜度也與其他台北粵菜餐廳不同. 整體不錯吃, 可以作為紅棉的招牌菜餚之一.
When the staff brought this dish to the table, I specifically looked up the term “First Cut BBQ PORK”. It is a dish that traces its roots back to The Chairman in Hong Kong. It uses a premium cut from the pork shoulder. The name “First Cut” refers to the precise knife work used to achieve the ideal fat-to-lean ratio.At Red Cotton, the BBQ Pork isn’t the usual vivid red you might find at classic Cantonese restaurants like “Silks House.” Instead, the color leans closer to the natural tone of pork. The texture is not overly fatty, with lean meat taking center stage. It’s also less sweet than most versions served at Cantonese restaurants in Taipei. Overall, it’s a well-executed dish and could easily become one of Red Cotton’s signature offerings.

魚蓉雪燕冬瓜羮
Winter Melon with Golden Thread Fish and Tragacanth Resin

之前在 “九記” 吃到的是季節性菜餚 – 火鴨海鮮冬瓜盅 , 是屬於清甜但有鴨絲與海鮮的輔助. 這次在紅棉品嚐到的則是爲不同版本的冬瓜湯. 冬瓜羮口感如預期般絲滑. 魚蓉賦予的鮮味交錯於濃郁且甘甜的冬瓜風味.
I had a seasonal dish — Winter Melon Soup with Roasted Duck and Seafood — which leaned toward a light and naturally sweet profile, accented by strands of duck and seafood.This time at Red Cotton, I tasted a different type of winter melon soup. The winter melon purée delivered the expected silky-smooth texture, while the addition of minced fish brought a layer of briny freshness that intertwined with the soup’s rich, mellow sweetness.

炸三臭
Fried Sticky Tofu (Cantonese Style)

我個人比較偏愛台灣版的炸臭豆腐. 炸三臭則是同樣有臭豆腐靈魂 , 但帶有多層風味. 以鹹魚的鹹鮮風味最為明顯. 此款臭豆腐菜餚也可以考慮放在你們的許願菜單裡.
Personally, I prefer the Taiwanese-style deep-fried stinky tofu for its bold, fermented punch. The “Fried Trio Stinky Tofu”, however, retains the soul of stinky tofu while introducing layers of flavor. The most notably is the salty umami of preserved fish, which dominates the palate. This is a dish worth considering for your “wish list” menu.
一夜干午仔魚拆肉煲仔飯
Salted Threadfin Claypot Rice

炸得酥脆的一夜干午魚肉與魚皮有著明顯海鮮風味. 鑄鐵鍋的鍋粑並不會過硬.很有趣的是此款煲仔飯是甜點前的最後一道菜餚. 如果能將此菜餚移到燉牛尾菜餚之前會更好.
The deep-fried threadfin fish delivers a distinct seafood aroma, with both the flesh and crispy skin showcasing robust marine flavors. The rice crust at the bottom of the pot offers a pleasant crunch without being overly hard.Interestingly, this rice was served as the final savory course, just before dessert. From a pacing perspective, it might be more balanced if this dish were served prior to the braised oxtail, allowing the meal to flow with greater coherence.
花椒小卷
Squid with Peppercorn

朋友稱此款小菜的花椒香氣爲 ”含蓄“. 只吃小辣的我反倒希望花椒賦予的香氣與麻度可以更高.
A friend described the peppercorn aroma in this appetizer as “subtle”. As someone who typically enjoys only mild spice, I actually found myself wishing for a bolder presence of both the numbing sensation and the aroma that peppercorns can offer.
砵酒牛尾
Stewed Oxtail with Porter

運用甜度高且濃郁的波本酒來燉牛尾. 入味且嫩香.
The oxtail is braised with highly aromatic and sweet Bourbon whiskey, resulting in a dish that’s deeply flavorful and tender. The richness of the bourbon adds a warm, lingering sweetness that enhances the savory depth of the meat.
