煙燻鱒魚金杯
Smoked trout with dark rye croustade
主廚 Xavier 運用黑麥製作出深褐色的小金杯, 口感比一般金杯更為酥脆. 入口時, 首先感受到鱒魚卵鮮明的鹹鮮風味. 內餡台灣鱒魚所帶出的濃郁迷人煙燻香氣, 與黑麥麵包的穀物香氣融合且並存. 這是當天我最喜歡的開胃小點.
Chef Xavier uses rye to craft a dark brown mini tart shell, which is similar with Kueh Pie Tee. The texture is crispier than the usual tart. On the first bite, the vivid briny flavor of the trout roe comes through The Taiwanese Trout filling delivers a rich smokiness that b melds with the grainy aroma of the rye. This was my favorite appetizer of the day.
綠蘆筍,黃酒慕斯
Green Asparagus & vin jaune mousse on morel sablé
羊肚菌沙布列餅層層堆疊起綠蘆筍, 黃酒慕斯與宜蘭金棗醬. 外型輪廓讓人聯想到法式經典甜點聖多諾黑(Saint Honoré). 黃酒慕斯特別融入了台中產的羊乳酪作為食材. 入口時 , 有明顯的綠蘆筍爽脆口感. 再與慕斯的絲滑口感交織融合. 金棗醬的果香與酸甜為這道開胃小點增添了一抹亮眼的風味層次與特色。
The morel sablé is layered with green asparagus, vin jaune mousse, and Yilan kumquat jam. Its appearance is similar with the French classic dessert Saint Honoré. Uniquely, the vin jaune mousse incorporates locally sourced goat cheese from Taichung as part of its ingredients. On the palate, there’s an immediate crispness from the green asparagus, which then intertwines with the silky texture of the mousse. The kumquat jam adds a bright touch of fruity sweetness and acidity, elevating the flavor profile and giving this appetizer a distinctive, memorable character.

Liver Parfait in crispy choux
泡芙內餡有濃郁卻細緻的雞肝醬. 以甜菜根及紅葡萄汁做成的酸甜風味果凍作為表層點綴. 造就結合不同風味組合的雞肝泡芙.
The choux pastry is filled with a rich yet delicate chicken liver parfait. On top, there is a sweet-and-tangy jelly made from beetroot and red grape juice. This creates a chicken liver choux that beautifully balances contrasting flavor elements in one refined bite.

煙霧繚繞的擺盤呈現出十足的戲劇美感. Bonbon 裡有意想不到的番茄大黃澄清湯.入口帶來清爽酸甜的風味, 層次分明且令人印象深刻.
The smoke-filled presentation delivers a striking sense of theatrical beauty. Inside the delicate bonbon lies an unexpected surprise, which is a clarified tomato and rhubarb consommé. On the palate, it offers a refreshingly bright sweet-and-sour profile, with distinct, well-defined layers of flavor that leave a memorable impression.

The first bread served in the La Vie tasting menu is a rye bread with rich, earthy grain aroma. Its texture is light and fluffy. When spread with the savory kombu butter, it becomes a distinctive and delicious highlight.

日本真鯛口感嫩, 與醃漬白蘿蔔爽脆形成對比. 魚肉經過醃漬後, 更加細緻, 且賦予適量且鮮明的海鮮風味. 並不會輕易地被茴香與佛手柑清湯覆掩蓋. 可惜的是一旁的海膽冰淇淋雖有滑順口感, 卻少了預期中的濃郁海鮮風味.
The Japanese madai (sea bream) offers a tender texture that contrasts with the crispness of the pickled daikon. After curing, the fish becomes even more delicate, carrying a clear and well-balanced seafood flavor that isn’t easily overshadowed by the fennel and bergamot consommé. However, the uni ice cream falls short of delivering the rich seafood flavor that one might expect.

印度香米與椰子水製成如腸粉般的表層, 輕柔包覆著法國白蘆筍. 主廚再撒上融合味噌的酸種麵包屑. 白蘆筍是台北 Fine Dining 餐廳常見的季節性食材. 法國白蘆筍經過炭烤後留下烤痕. 品嚐時有爽脆口感與經典清甜風味. 盤底有富山白蝦的日式鮮甜點綴. 不同層次口感, 甚至不同的鮮甜風味組成這一道菜餚.
A delicate rice sheet is crafted from Indian basmati rice and coconut water, gently wrapping around French white asparagus. The chef finishes the dish with a sprinkle of sourdough breadcrumbs infused with miso.White asparagus is a seasonal ingredient frequently featured on Taipei’s fine dining menus. In La Vie Restaurant, the French white asparagus is lightly charcoal-grilled, leaving distinct grill marks while preserving its signature crisp texture and delicate sweetness. At the base of the dish, Japanese shiro ebi (white shrimp) adds a touch of umami sweetness. The dish beautifully layers different textures and subtle variations of sweetness, creating a delicious and well-constructed dish.

這道料理靈感源自法國城市 Grenoble經典菜色「 Grenoblois 」. 我特別搜尋後, 發現主廚在細節上做了獨特調整. La Vie 主廚並不是用鮮味較重的魚, 而是用焦化奶油嫩煎的日本魟魚. 單吃魟魚時, 呈現溫和, 少了強烈的海味. 經典食譜中的芹菜、酸豆、手指檸檬與麵包丁依舊保留. 但主廚更進一步加入法國風乾培根與淋上豬背脂,賦予鮮明的肉香。酸模泡沫帶給味蕾清新風味, 跳脫經典框架, 展現出屬於 La Vie 的獨特風格.
This dish draws inspiration from the classic “Grenoblois” preparation, a specialty from the French city of Grenoble. After some research, I discovered that the chef at La Vie made a few unique adjustments in the details. Instead of using a fish with a strong umami presence, the chef opts for tender Japanese skate, pan-seared in browned butter. When tasted on its own, the skate offers a mild, delicate flavor, noticeably less briny compared to the traditional version. The classic sauce components, which includes celery, capers, finger lime, and croutons, remained the same. The chef takes it a step further by adding French dried bacon and a drizzle of pork lardo, infusing the dish with a distinct, savory meatiness. A finishing touch of sorrel foam brings a refreshing note to the palate. Overall, this dish presents a unique expression of La Vie Restaurant.

這一道炭烤藍龍蝦並不是套餐裡的二選一, 而是加價 NTD $1288 成為第 10 道菜餚. 可以一個人點, 同桌一起分享. 炭烤藍龍蝦火侯拿捏極佳,藍龍蝦經炭烤後火候掌控得宜,肉質鮮甜飽滿 , 而且份量足夠. 平常餐廳裡搭配海鮮的沙巴雍都是檸檬風味, 這次在 La Vie 品嚐到的則是鹹鮮且帶有海鮮風味的龍蝦沙巴雍. 淋上的龍蝦巧克力醬汁則是架構起這一道龍蝦三重奏的重要元素之一.
This grilled blue lobster is offered as an optional 10th course for an additional NTD $1,288. You can order it individually and share it at the table.The grilling is perfectly executed, with the blue lobster cooked to just the right doneness, yielding plump, juicy, and naturally sweet meat. The portion is also generous. While most restaurants typically pair seafood with a lemon-based sabayon, here at La Vie Restaurant, the lobster sabayon is notably savory, carrying a distinct oceanic depth that complements the lobster beautifully. The lobster-chocolate jusis one of the key elements that binds together this “lobster trio,” elevating the dish into a memorable highlight of the meal.

在 La Vie by Thomas Bühner 餐廳用餐, 會吃到不同國家的經典料理完美結合的料理. 這道料理則是結合德式經典料理「Leipziger Allerlei」 與 法式酥皮圈「vol-au-vent 」. 主廚以嫩煮淡水小龍蝦與小龍蝦黃油作爲「Leipziger Allerlei」的基礎架構. 酥皮圈本體微厚與酥脆挺立. 內餡裡推疊起烤小牛胸腺 , 小白蘿蔔與生菜. 盤面周圍點綴著色彩繽紛的蔬菜醬與泡沫, 增加暖色美感與不同風味.
Dining at La Vie by Thomas Bühner offers the experience of tasting dishes that masterfully blend culinary classics from around the world. This particular creation is a fusion of the German classic Leipziger Allerlei and the French vol-au-vent puff pastry ring. The chef builds the foundation of the dish with delicately poached freshwater crayfish and a rich crayfish butter that anchors the Leipziger Allerlei essence. The vol-au-vent itself is slightly thick, standing tall with a crisp, flaky structure.Inside, layers of roasted veal sweetbreads, baby radishes, and fresh greens create a refined filling. Surrounding the plate, vibrant vegetable sauces and foams are artfully dotted, adding warm-toned visual appeal and enhancing the dish with varied flavor dimensions.

端上桌時, 好奇圍繞著荷蘭小牛菲力是什麼. 原來主廚以熊蔥與豬網油包裹小牛菲力後嫩煎. 油脂與蔥香勾勒出不同於一般牛排的風格. 5 分熟的菲力口感柔嫩, 並不像美國牛排有濃郁肉香. 即使不搭配其他配菜或是醬料, 也可以獨當一面, 不錯吃. One Bite Size 的小牛膝炸餃子有經典牛肉派風格. 另一款香煎馬鈴薯則是加上橄欖與鯷魚調製的橄欖醬作為點綴. 一道菜餚有許多細節是La Vie 餐廳的特色之一.
The chef wraps the dutch veal fillet in scallion and caul fat before gently pan-searing it. The fats and herbal aroma outline a character distinct from a typical beef steak. Served medium-rare, the fillet is tender and delicate, lacking the rich meaty aroma. However, without accompaniments or sauces, this dutch veal fillet holds its own beautifully and is thoroughly enjoyable.The one-bite-sized veal shank fried dumpling flavor and texture is similar with the classic beef meat pie. The pan-seared potato is topped with an olive tapenade crafted from olives and anchovies. Many ingredients and details put together in a single dish is one of La Vie restaurant’s selling points.

輕敲碎開暖黃色的冰球外殼, 連同番紅花優格一起品嚐. 以柳橙汁為主導的清新酸甜, 隨後跳跳糖在舌尖綻放獨特的趣味口感。. 味蕾也可以感受到晚侖夏橙和杏桃的果香風味. 整體不會過甜膩, 這是一道不錯且印象深刻的甜點.
You gently crack open the yellow ice pearl shell and enjoy it together with the saffron yogurt. The refreshing sweet-tart profile is led by orange juice, followed by the popping candy that bursts on the tongue. The palate also picks up the fragrant fruit notes of late-season Valencia oranges and apricots. Overall, it’s not overly sweet. This is a well-balanced and memorable dessert.

The dessert, dressed in charming shades of pink, is visually captivating and delightful. The milk ice cream is crafted from fresh milk sourced from Taiwan’s Jiaming Farm, offering a smooth and refined texture. The rhubarb is transformed into a refreshing, sweet-tart sorbet, while the honey parfait is paired with an airy lavender sabayon. Throughout the dish, the vibrant red berry notes tie together each element of this dessert.
