江牛樓 Kougyurou 是台北米其林入選美食之一. 很難想像日本人開設的大稻埕牛肉麵會在我的台北牛肉麵推薦名單. 文章裡除了推薦理由外, 也有內用登記 SOP.
Kougyurou is one of Taipei’s Michelin-selected restaurants. It’s hard to imagine that a Japanese-run beef noodle shop in Dadaocheng. It is also on my Taipei beef noodle recommendation. In this article, I not only share why it’s worth visiting, but also explain the dine-in registration SOP in detail.

Prologue 序言
江牛樓 Kougyurou 一直在我的待吃美食清單. 至今仍舊需要排隊登記. 於是選了一個晴天到大稻埕, 因為不想下雨天還要撐傘排隊到巷口.
Kougyurou has long been on my must-eat list. And until this day, it still requires lining up to register. I chose a sunny weekday to visit Dadaocheng. The main reason is that I didn’t want to be standing in line with an umbrella on a rainy day.

內用登記 SOP
✅ 現場先排隊 , 11am 開始登記. 當天平日晴天我10:45 am 到現場 , 已經有15 組在排隊. 如果你是週末要去, 10:45am 大概會有 15 x 2 = 30 組. 如果有兩人週末要吃, 我會建議其中一人 10:30am 就先去排隊
✅ 登記時, 店員會問你 “有幾人” , “選幾點用餐” , 與 “姓名與電話後三碼” . 江牛樓有二樓 , 如果超過 3 人 , 他們會問可不可以安排二樓座位. 可以選幾點用餐意思就是你登記完後可以離開, 不用在現場等候. 時間到了再回來報到即可.
✅ 登記後即可離開. 建議到大稻埕逛逛. 我當天是平日 , 人數一位 , 排到的時間是 1:30pm. 請自行注意營業時間.
✅ 記得不要遲到. 我個人是建議15 分鐘提前報到. 有一位店員會不定時出來看登記表單, 提前到有時候可以提前進去吃.
Kougyurou does not accept reservations. Here’s how the dine-in registration works:
✅ Line up on-site. Registration starts at 11:00 a.m. I arrived at 10:45 a.m. on a sunny weekday and there were already about 15 groups ahead of me. On weekends, expect roughly double, which isaround 30 groups by 10:45 a.m. If you’re dining as a pair on a weekend, I’d suggest one person start lining up as early as 10:30 a.m.
✅ During registration, staff will ask the following: Number of guests , Preferred dining time Your name and the last three digits of your phone number
Kougyurou has a second floor. If your group is larger than three, they may ask whether you’re okay being seated upstairs. Choosing a dining time means you can leave after registering. You don’t need to wait on-site and can return to check in at your assigned time.
✅ After registering, feel free to leave and explore Dadaocheng. I visited on a weekday, dining solo, and was assigned a 1:30 pm seating time. Please be mindful of the restaurant’s operating hours.
✅ Don’t be late. I personally recommend arriving at least 15 minutes early. One staff member periodically checks the registration list, and sometimes arriving early means you may be seated earlier.

吃牛肉麵前有 Appetizer
An Appetizer Is Served Before the Beef Noodles
許多台灣牛肉麵餐廳都是單賣中式小菜. 即使是獲得米其林必比登推薦的「天下三絕」,小菜也仍採單點形式. 江牛樓並沒有單點中式小菜 , 凡點牛肉麵即附前菜,概念更接近一套完整的套餐體驗 .
江牛樓有專屬製作前菜的店員 , 並以煙燻槍現場燻製. 打開木盒時 , 白煙繚繞. 西式風格的 Appetizer 有巴薩米克米克醋佐玉米筍, 番茄與時蔬. 牛肉可沾芥末 ( wasabi ) , 醃菜可加進牛肉麵裡. 不得不說 , 整體 Appetizer 設計已經顛覆我對傳統牛肉麵餐廳的既定印象
Most Taiwanese beef noodle shops sell side dishes à la carte. Even Michelin Bib Gourmand , Tian Xia San Jue , still offer small plates separately. In Kougyurou, every order of beef noodles comes with an appetizer, creating a more complete, set-meal-style experience.
Kougyurou even has a dedicated staff member preparing appetizers, using a smoking gun on the spot. When the wooden box is opened, white smoke gently escapes. The Western-style appetizer includes baby corn with balsamic vinegar, tomatoes, and seasonal vegetables. The beef can be dipped in wasabi. The pickles can be added directly into the noodle soup. I have to say, this appetizer alone completely overturned my expectations of a beef noodle restaurant.

湯頭與牛肉皆特優等級
Exceptional Broth and Beef
江牛樓的牛肉麵 (NTD $320) 湯頭無雜質 , 也沒有傳統台灣紅燒牛肉麵湯頭的濃鹹醬香與厚重膠質感. 第一口反而類似日本醬油拉麵的帶有肉香的昆布醬油湯頭. 牛骨經長時間熬煮後, 注入些許台灣牛肉麵的元素. 最後日籍主廚再撒上花椒多一層香氣.
品嚐完牛肉麵後 , 我特別詢問牛肉是來自哪個國家. 當時店員正準備將一大塊牛肉切片, 也很友善地回覆 “美國”. 不同於多數台灣牛肉麵餐廳的選材, 江牛樓主廚選用肉香豐富的美國牛肉. “口感柔嫩、風味飽滿” 是我當時的感受.
Kougyurou’s beef noodle (NTD $320) broth is clean and clear, without the heavy soy richness nor thick gelatinous texture. The first sip actually resembles a Japanese-style kombu soy sauce ramen. The taste layered with gentle beef aroma. Beef bones are simmered for a long time, incorporating subtle elements of Taiwanese beef noodle tradition. The Japanese chef finishes the bowl with a touch of Sichuan peppercorn for added aroma.
After finishing my noodles, I asked where the beef was sourced. As a staff member was slicing a large cut of beef. He kindly answered: “USA”. Unlike most Taiwanese beef noodle shops, Kougyurou chef uses U.S. beef for its rich aroma. My overall impression was “ tender texture and full, satisfying flavor”.
同時可品嚐刀削麵與細麵
You Can Enjoy Both Thick and Thin Noodles
點餐時,店員會先詢問想選擇粗麵或細麵. 粗麵是類似刀削麵, 細麵則是類似日本拉麵. 店員這時也會提到 “如果吃不飽 , 可再免費追加麵. 可以選粗麵或細麵“.
我建議吃到最後, 刻意保留一些湯汁 , 再跟店員說要免費追加麵. 我當時是選粗麵 , 之後再加點細麵. 這種追加方式讓消費者感到暖心, 畢竟從排隊登記到真正吃到這碗牛肉麵,前後已花了將近兩個小時。
When ordering, the staff will ask whether you prefer thick or thin noodles. The thick noodles resemble knife-shaved noodles, while the thin ones are closer to Japanese ramen. They’ll also mention that if you’re still hungry, you can add a free portion of noodles, choosing either thick or thin.
My suggestion would be the following:
Toward the end of the meal, intentionally leave some broth, then ask for the complimentary portion. I started with thick noodles and later added thin noodles. This thoughtful gesture feels especially heartwarming. After all, from lining up to registering to finally eating that bowl of beef noodles, the entire process took nearly two hours.

江牛樓一樓吧台旁有一個小黑板. 二訪時, 朋友點了台灣鴨胸佐金桔醬 (NTD $150) . 份量適合兩人分享. 菜餚的呈盤極具西式 Fine Dining 風格,視覺優雅. 炙燒後的鴨皮酥脆口感與美味讓人回味無窮. 金桔佐醬添增了不同酸香層次風味與台灣風格. 我吃過不算少的西式鴨胸菜餚 , 江牛樓的炙燒鴨胸是前三名. 推薦點!
Next to the bar counter or of Kougyurou, there is a small blackboard. On my second visit, my friend ordered the Taiwanese Duck Breast with Kumquat Sauce (NTD $150). The portion is ideal for sharing between two people.The plating is Western fine-dining style, which is elegant and visually attractive. The seared duck skin is wonderfully crisp and flavorful, leaving a lasting impression. The kumquat sauce adds a bright, citrusy acidity that introduces layered flavors with a subtle Taiwanese touch.I have tried quite a number of Western-style duck breast dishes. Kougyurou’s seared duck breast easily ranks in my top three. Highly recommended.
