Prologue 序言
我 N 年前就開始寫 “台北餐酒館懶人包 ” , 也寫下 “我的“ 餐酒館定義.
Many years ago, I started writing “Taipei Bistro Guide” and shared my own definition of what a bistro should be.
♛ 我的台灣餐酒館定義
1.餐廳可以單點菜餚.
2. 台北餐酒館為西式為主, 但也有少部分是中式/日式/韓式餐酒館
3.餐廳販售總共酒款超過 5 款, 不拘限葡萄酒, 威士忌, 精釀啤酒,清酒, 調酒
備註: 餐廳可歸類於餐酒館若符合以上所有項目. 由於台灣與國外用餐文化不同, 我對餐酒館的定義頗為廣泛.
♛ My Definition of Taiwan Bistro
1. The restaurant menu must have à la carte dishes.
2. Most Taipei Bistros are western style. Only a few Taipei Bistros are Taiwanese/Japanese/Korean Bistros
3. The restaurant offers more than 5 alcohol items, which applies for wines, whiskeys, craft beers, and sakes.
Remark: The restaurant is categorized as bistro if qualified for ALL above definitions. Due to the difference of foreign and Taiwan dining culture, I am more opened to the Taiwan Bistro definition.

FABULA 緩緩 地址為 臺北市大安區仁愛路四段71巷8號 . 餐廳位於忠孝復興捷運站與忠孝敦化捷運站的中間. 餐廳有兩人座位與四人座位 , 座位並不會過於擁擠. 包廂可坐 6 ~ 8 人. FABULA 緩緩適合約會也適合朋友聚餐.

FABULA Restaurant’s Address is No. 8, Lane 71, Section 4, Ren’ai Road, Da’an District, Taipei. The restaurant is located between Zhongxiao Fuxing MRT Station and Zhongxiao Dunhua MRT Station.
There are two-person and four-person tables. A private dining room accommodates 6–8 guests. FABULA is suitable for both dates and group gatherings.

櫻桃鴨蘆筍
Cherry Duck with Asparagus

第一個亮點在於主廚選用「熟成台灣櫻桃鴨火腿」, 並非常見的進口西班牙伊比利火腿. 單吃的鹹香風味甚至超越我之前品嚐過的伊比利火腿.
第二個亮點是覆蓋在蘆筍上方那層純白輕盈的奶泡. 那不是一般的 whipping cream,而是以金萱茶與帕瑪森起司製作而成. 視覺上細緻綿密,入口後, 泡沫感在舌尖緩緩化開. 適量茶香搭配櫻桃鴨火腿的鹹香,再結合蘆筍本身的清脆爽口,層次分明且風味平衡
這一道菜餚是當天我最喜歡且最有亮點的菜餚. 推薦點.
The first highlight is the chef‘’s use of aged Taiwanese cherry duck ham instead of the more common imported Spanish Iberico ham. The savory flavor on its own even surpassed some Iberico ham I have tasted before.
The second highlight is the pure white, airy foam covering the asparagus. It is not regular whipping cream but made from Jin Xuan tea and Parmesan cheese. Visually delicate and smooth, the foam melts gently on the tongue. The subtle tea aroma intertwines with the savory duck ham, complemented by the crisp texture of asparagus. The layers are distinct and beautifully balanced.
This was my favorite and most impressive dish of the day. Highly recommended.

胭脂蝦食材在台北西式餐廳菜單很常見.但如何透過醬料與其他配料的搭配,凸顯其生鮮脆甜,才是真正展現主廚功力的舞台
這道菜在擺盤上呈現出細緻的 Fine Dining 美感. 仔細一看, 胭脂蝦並非像以往的呈現單純粉嫩顏色 , 而是覆上一層橘色醬料. 依舊可品嚐到蝦的脆甜, 同時可感受到醬料賦予的紅椒粉香氣與孜然風味. 綠色的巴西里油不僅提升圓潤度, 也堆疊起更多風味. 整體不錯吃. 如果喜歡海鮮, 我個人會推薦這一道菜餚
Carabinero prawns are common on Western restaurant menus in Taipei. The real challenge lies in how sauces and garnishes enhance their natural sweetness.
The plating has refined fine-dining aesthetics. Instead of the usual pink presentation, the prawn is coated with an orange sauce. You still taste the prawn’s crisp sweetness, enhanced by paprika and cumin aromas.The parsley oil adds roundness and builds additional layers of flavor. If you love seafood, I personally recommend this dish.

戰斧豬排給饕客的印象是點給 4人以上一起分享的菜餚. FABULA 緩緩的炭烤戰斧豬排更適合 2 ~ 4 人一起分享. 餐廳已將戰斧骨頭與肉分開, 不用拿起骨頭豪邁地吃.
炭烤烹調方式讓肉香更加立體. 主廚選用赤味增醃製戰斧豬排 , 醬汁同樣也是由赤味噌融合蒜香調製而成. 戰斧豬排的筋與肉口感皆柔嫩 . 風味不會重鹹, 而是隱約呈現獨特豆類發酵的風味.
一旁的蘋果糖葫蘆則為整道料理增添趣味與節慶感. 切開蘋果糖葫蘆糖衣薄外殼, 發現是完整的蘋果. 蘋果吃起來是甜嫩而不是清脆, 而且有肉桂香 ,讓這一道炭烤戰斧豬排添增更多層次的風味.
Tomahawk pork chop is often associated with sharing among four or more people, but FABULA’s version is suitable for 2 ~ 4 people. The bone is separated from the meat, so there’s no need to hold it dramatically while eating.
Charcoal grilling enhances the meat’s aroma. The pork is marinated in red miso. And the sauce is also made with red miso blended with garlic. The texture is tender, and the flavor is not overly salty but highlights hints of fermented bean notes.
The candied apple skewer adds fun and a festive touch. When you break through the thin sugar shell, you find a whole apple inside. The apple tastes soft and sweet rather than crisp, with a hint of cinnamon. It adds depth and complexity to the dish.

FABULA 緩緩有 Happy Hour , 也有販售 Tiramisu. FABULA 緩緩的 Tiramisu 是我跟朋友喜歡的大人型甜點. 干邑甜酒與咖啡酒讓經典 Tiramisu 風味更加立體與美味.
FABULA offers Happy Hour and also serves tiramisu. This is a more “adult-style” dessert that my friend and I enjoy. The cognac and coffee liqueur deepen the classic tiramisu flavor beautifully.

茉莉白桃 – Mocktail

除了葡萄酒與調酒 , FABULA 緩緩也有無酒精調酒(Mocktail ) . 茉莉白桃的茶香明顯, 適量白桃果香是男生與女生皆會喜歡的 Mocktail 類型.
Besides wine and cocktails, FABULA also offers mocktails. The jasmine tea aroma is distinct. The white peach fruitiness is definitely preferred by both guys and girls.

光是看菜餚名稱, 會很好奇以何種烹調手法與擺盤方式呈現.
主廚將紐西蘭牛舌切成骰子形狀, 有著焦脆口感. 原本以為只有單純的鹹香. 實際上底部的濃縮醬汁是由龍蝦頭與 XO醬熬煮的精華, 再加蘑菇快炒. 不用擔心醬汁浪費掉, 餐廳搭配烘烤過的布里歐麵包, 能充分吸附醬汁. 鹹香與鮮味結合, 完全是我心目中的下酒菜.
The dish name sparks curiosity about its preparation and presentation. The chef dices New Zealand ox tongue into cubes with a crispy exterior.
Beneath lies a concentrated sauce made from lobster heads and XO sauce, stir-fried with mushrooms. Toasted brioche is served alongside to soak up the sauce. The savory and umami flavors make it an excellent pairing with drinks.

焦化時蔬
Caramelized Seasonal Vegetables

原本以為只是單純無調味的時令蔬食呈現. 沒想到主廚增添北非哈里薩辣椒醬(Harissa)混和希臘優格製作成的醬, 醬汁增加辛辣風味. 不僅有藜麥的顆粒感, 也有櫛瓜脆感. 印象最深刻是時令蔬食裡有日本金時地瓜, 運用蜂蜜與海鹽加以調味, 成為這一道菜餚的特色.
At first glance, it seems like simply seasoned vegetables. However, the chef adds a North African harissa chili sauce blended with Greek yogurt, introducing gentle heat. There are quinoa for texture and zucchini for crunch. The most memorable element was Japanese Kintoki sweet potato, seasoned with honey and sea salt, which became the highlight of the dish.

柴燒豬肋排 (半份)

柴燒豬肋排適合 4 ~ 6 人分享. 骨頭與肉容易分離, 如同手撕. 用胡桃木柴燒是特色. 塗抹在豬肋排外層的芥末子醬裡有 Tobasaco 的獨特辛香感, 具有豪邁的美式風格. 一旁的生菜可平衡整體菜餚的鹹味.
This dish is suitable for 4–6 people to share. The meat separates easily from the bone. Hickory wood-fire grilling is a key feature. The mustard seed sauce contains a hint of Tabasco spice, giving it a bold American-style character. The side salad balances the richness.

綜合堅果有鹹與甜風味, 很適合邊吃邊等下一道菜餚.
The mixed nuts has both salty and sweet flavors. It is perfect to eat while waiting for the next dish.
火焰法式吐司

Happy Hour 時段也可以點火焰法式吐司 (2:30pm ~ 4:30pm) . 不同於其他家餐廳, 店員在桌邊進行點火且淋上橙酒. 亮點是香草冰淇淋旁邊的馬告啤酒糖漿. 酒香不會過於明顯. 整體不錯吃, 份量夠兩人分享.
This dish is available during Happy Hour (2:30pm ~ 4:30pm). Unlike many restaurants, the staff flambé it tableside with Contreau (orange liqueur). The highlight is the Makauy beer syrup beside the vanilla ice cream. Its alcohol aroma is subtle. Generous enough for two to share.

FABULA 緩緩有單杯葡萄酒與瓶裝葡萄酒選擇. 這次喝的是 Santa Helena Chardonnay 與 Santa Helena Cabernet Sauvignon. 小酌可考慮點單杯即可.
FABULA offers both wines by the glass and by the bottle. This time, we had Santa Helena Chardonnay and Santa Helena Cabernet Sauvignon. If you just want a light drink, ordering by the glass is a better choice.
