Looking to taste various and special Xiao Long Bao flavors in Taipei? Dian Shui Lou’s signature Rainbow soup dumpling is the ultimate masterpiece. For this review, I visited the Nanjing Branch near the Taipei Arena MRT station.

Prologue 序言
關於小籠包部分 , 我幾乎每月去一次鼎泰豐, 點的幾乎都是絲瓜蝦仁小籠包.
我沒有勇氣點其他口味 (例如: 巧克力小籠包與松露小籠包) , 因為都是要點一籠.
你們一定很好奇: 「 怎麼不選“樂天皇朝” , 都是彩色小籠包 」
畢竟樂天皇朝是新加坡集團. 我想選台灣在地餐飲集團開的餐廳, 也就是點水樓.
I am a Din Tai Fung regular. I usually visit Din Tai Fung once a month. And I always order Luffa and Shrimpsoup dumpling.
I don’t have the courage to order a full steamer of special flavors like chocolate or truffle.
You might wonder why I didn’t choose Paradise Dynasty for colorful dumplings. They are Singaporean Group. I preferred a local Taiwanese restaurant which is Dian Shui Lou.

點水樓南京店 訂位
Dian Shui Lou Nangjin Branch Reservation
點水樓南京店地址是台北市松山區南京東路四段61號 , 離小巨蛋捷運站只需 1 ~ 2 分鐘. 點水樓在台北與桃園都有分店. 點水樓南京店不提供線上訂位 , 其他分店則是用 inline 訂位即可. 點水樓南京店是一棟獨棟建築. 裝潢是中式庭園風格. 二樓有包廂, 一樓有可近距離看小籠包師傅做小籠包的吧台座位區與散客區.
The address of Dian Shui Lou Nanjing Branch is No. 61, Section 4, Nanjing East Road, Songshan District, Taipei City. It is just a 1–2 minute walk from the Taipei Arena MRT Station. While the brand has multiple branches across Taipei and Taoyuan City, the Nanjing location does not offer online reservations. Other branches can be booked via the inline platform. This location is a standalone building featuring a traditional Chinese garden-style interior . First Floor is a general dining area and a counter seating section where guests can watch chefs prepare Xiao Long Bao up close. The Second Floor is mostly private dining rooms for groups.

點水樓南京店 – 吧台座位區
Dian Shui Lou Nangjin Branch Counter Seating Section
吧台座位區有一小部分是放 ubereat 與 foodpanda 的外帶區. 這裡並沒有像鼎泰豐ㄧ樣用玻璃隔開, 而是像鐵板燒一樣可以近距離觀賞小籠包師傅製作小籠包. 非常適合外國觀光客.
A small section of the counter seating area is designated for UberEats and Foodpanda takeout. Unlike Din Tai Fung, where the area is separated by a glass wall, this setup allowing you to watch the Xiao Long Bao chefs crafting soup dumplings at close range. It is highly recommended for international tourists.

點水樓南京店 – 茶款
Dian Shui Lou Nangjin Branch – Tea
點水樓與其他飯店餐廳或是高價中式餐廳ㄧ樣皆有茶資. 茶款眾多, 我點的是茉莉烏龍 NTD $80. 店家提供一整壺.
Similar to other hotel restaurants or high-end Chinese establishments, Dian Shui Lou charges a tea fee. They offer a wide variety of tea selections. I ordered the Jasmine Oolong for NTD $80, which is served as a full pot.

點水樓小籠包 vs 鼎泰豐小籠包
Dian Shui Lou Soup Dumpling vs Din Tai Fung Soup Dumpling
許多人都說 “小籠包摺數” 是點水樓與鼎泰豐最大的差異. 鼎泰豐小籠包是以「 黃金 18 摺」作為標準. 而點水樓則是「19 摺」作為特色. 圖片裡左邊是點水樓, 右邊是鼎泰豐. 品嚐後, 發現點水樓的小籠包外皮偏厚 , 相對能支撐住內餡中較為豐沛的湯汁. 點水樓小籠包內餡的豬肉比例較高. 鼎泰豐外皮厚薄與內餡結構比點水樓細緻.
Many say the “number of pleats” is the biggest difference between Dian Shui Lou and Din Tai Fung. Din Tai Fung sets the ‘Golden 18 Pleats’ as its standard, while Dian Shui Lou features 19 pleats as its signature. In the photo, Dian Shui Lou is on the left and Din Tai Fung is on the right. After tasting, I found that Dian Shui Lou’s wrappers are slightly thicker, which helps support the more abundant broth inside. Their filling also has a higher proportion of pork. In contrast, Din Tai Fung’s wrapper thickness and filling structure are more delicate than Dian Shui Lou’s.

一籠七彩小籠包( NTD $490) 會出七種口味 . 彩色外皮都是天然蔬果原汁去染色, 並不是色素.
Rainbow soup dumpling (NTD $490) has seven flavors. Vibrant appearance is colored by all-natural vegetable juices.

點水樓小籠包內餡是選用台灣黑毛豬製作. 小籠包外皮外皮韌度佳, 不易破裂. 品嚐時, 味蕾可同時感受到濃郁肉汁與高湯鮮香層次.整體不會過於油膩. 如果絞肉能夠更細緻,口感將更為滑順, 會再加分.
The filling of Dian Shui Lou’s Xiao Long Bao is made with premium Taiwanese black pork. The dumpling wrappers have excellent elasticity and do not break easily. When tasting, the palate can simultaneously experience layers of rich meat juices and savory broth. Overall, it is not overly greasy. If the minced meat were even more finely textured for a smoother mouthfeel, it would be even better.

Luffa Gourd and Shrimp Soup Dumpling

我曾經在 台北東區的“合府小籠湯包 “ 吃過澎湖角瓜的小籠湯包. 點水樓的翡翠小籠包以角瓜入餡, 口感爽脆 , 與鼎泰豐嫩中帶脆的絲瓜內餡形成鮮明對比. 角瓜切工與比例拿捏得宜. 蝦仁賦予的海鮮風味更加迷人. 在七彩小籠包之中,這一款是我最喜歡也最具辨識度.
I once tried the shrimp and Penghu gourd soup dumplings at ‘Hefu’ in Taipei’s East District. Dian Shui Lou chef uses gourd as a filling, providing a refreshing crunch that stands in stark contrast to Din Tai Fung’s luffa filling, which is tender with just a hint of crispness. The knife work and filling proportions of the gourd are handled perfectly. The seafood flavor from the shrimp makes it even more enchanting. Among the Rainbow Xiao Long Bao collection, this one is my favorite and the most recognizable.
XO醬小籠包
Pork and XO Sauce Soup Dumpling
當台式小籠包遇上港式干貝XO 醬, 風味組合令人好奇. 除了雙重鹹香之外, 還多了些微辣味. 辣味刺激是必要, 避免過膩.
When Taiwanese-style Xiao Long Bao (soup dumplings) meets Hong Kong-style dried scallop XO sauce, the resulting flavor profile is truly intriguing. Beyond the dual layers of savory umami, there is a subtle hint of spiciness. This spicy stimulation is essential to the dish, as it balances the richness and prevents it from feeling too greasy
松露小籠包
Pork and Truffle Sauce Soup Dumpling
我個人對中西合併的小籠包有興趣. 松露風味類似菌菇, 比香菇更濃郁. 品嚐後,總感覺豬肉與菌菇裡還需要另一款醬汁. 搭配中式湯汁並不是我的喜好.
I am personally intrigued by East-meets-West fusion soup dumplings. The truffle flavor is similar to mushrooms, yet it is significantly more intense and richer than shiitake. After tasting, I always feel like the pork and truffle combination requires a different kind of sauce. Pairing it with a traditional chicken broth is not my favorite.
蟹皇小籠包
Pork and Crab Roe Soup Dumpling
在鼎泰豐與晶華軒分別吃過蟹肉小籠包. 點水樓的蟹肉內餡是用沙公. 蟹黃賦予濃郁海鮮風味, 豬肉則是提供鹹香與肉香. 螃蟹在許多人是高價食材, 若是宴客, 可考慮點.
I have tried the crab meat Xiao Long Bao at both Din Tai Fung and Silks House. Dian Shui Lou uses mud crab roe for its filling. The crab meat offers a rich seafood flavor, while the pork provides a savory and meaty aroma. Since crab is considered a premium ingredient by many people, it is a good choice to consider when hosting guests.

櫻花蝦小籠包
Sakura Shrimp Soup Dumpling
粉紅色顏色點綴的小籠包視覺感十足. 黑豬肉餡裡帶有迷你櫻花蝦賦予的鮮味.
The xiao long bao appearance with pink color is visually stunning. The black pork filling is infused with the savory umami of mini Sakura shrimp.
九層塔小籠包
Pork and Basil Soup Dumpling
顏色特別, 九層塔與豬肉並不是我喜歡的組合.
The color is special. The bail and pork combination is not my type.
