Prologue 序言
我只吃小辣. 我很少跟朋友去吃麻辣鍋, 因為不確定朋友的“小辣程度” 與我能接受的辣度是不是同一個 Level. 四川重慶吃辣的地區通常不是我會旅行的地方. 我對 川雅 Chuan Ya 的刻板印象就是 “那是一家超辣的四川料理餐廳” . 實際上, 川雅並不是每道菜餚都有辣度, 而且很適合只吃小辣的人.
I can only handle mild spiciness. I usually don’t go for spicy hot pot with friends because everyone’s definition of “mild spicy” can differ greatly. Regions like Sichuan and Chongqing are not typically my travel destinations.My initial impression of Chuan Ya was that it would be an extremely spicy Sichuan restaurant. However, in reality, not every dish is spicy. It is actually quite suitable for those with a low tolerance for heat.

這次參觀有 12 人座位的大包廂, 台北 101 近在眼前. 我跟朋友是在餐廳散客座位區, 也可以看到台北 101 與其他景觀. 最貼心的是兩人座位區都是併坐且面對台北景觀. 川雅很適合約會.
During this visit, I saw a private room that accommodates 12 people, with Taipei 101 right in front of me. My friend and I were seated in the main dining area, which also offers views of Taipei 101 and the surrounding skyline. Two-person tables are arranged side-by-side, all facing the view. It would make this restaurant a restaurant for dates.

答案是 “Yes! 川雅很適合吃小辣的人“. 我對 川雅 Chuan Ya 的刻板印象就是 “那是一家超辣的四川料理餐廳” . 實際上, 川雅並不是每道菜餚都有辣度, 而且很適合只吃小辣的人. 網路介紹是川雅以「 精緻官府川菜」為核心. 用餐完後, 我對川雅餐廳的印象是「 川菜卻淡雅 , 而非直球般的辣味衝擊 」
Yes. Despite its Sichuan roots, Chuan Ya offers many dishes without intense heat and is well-suited for those who prefer mild flavors. While Sichuan cuisine is often associated with bold spiciness, Chuan Ya presents a refined interpretation of “imperial-style Sichuan cuisine”, where flavors are elegant and layered rather than aggressively spicy.

每人可以從試管聞茶葉來選擇. 茶有咖啡因與非咖啡因. 最令我驚訝的是到中間用餐時, 餐廳直接換另一壺新茶重新泡. 避免茶香與茶風味變淡.

許多人對四川料理仍有刻板印象, 對川菜不太了解. 因此做了桌卡. 用餐好感度增加! 而且卡片到最後都可以帶回家

此道也是同桌共享的菜餚. 餐盤呈現帶有細膩的 Fine Dining 美感,令人聯想到Circum-的餐盤設計. 不同於韓國泡菜偏重鹹與長時間發酵的風格,這道採用川菜特有的「跳水泡菜」手法,以短時間醃製與發酵.
我最喜歡黑白木耳 (圖二). 口感爽脆,伴隨微酸的刺激感喚醒味蕾. 冬瓜球與百香果賦予甜美風味 (圖三) .
Presented with fine dining aesthetics reminiscent of Circum. Unlike heavily fermented Korean kimchi, this uses the Sichuan technique, which is quick pickling and fermentation.

經過餐廳解說才知道 “官府川式湯類” 有清湯, 奶湯, 紅湯與素高湯. 這道湯的製作方式類似法式清湯 ( Consommé ). 湯頭選用老母雞, 金華火腿與豬骨經過八小時慢燉. 再將湯裡的雜質去除. 湯看似清淡, 實際醇厚. 值得一提的是新鮮冬瓜切成絲, 如同燕窩般的口感.
Prepared like a French consommé, using old hen, Jinhua ham, and pork bones simmered for eight hours. Clear yet deeply flavorful, with winter melon threads resembling bird’s nest in texture.

Standout dish showcasing Chef Wong’s many years of cantonese cuisine cooking experience. The squab features a glossy, crisp skin with subtle sweetness. The most impressive part would be the signature smoky aroma of Zhangcha-style .

仔細一看, 澎湖明蝦撒上「串串燒烤粉」, 再加以炙燒.盤中點綴的是熬製許久的濃郁龍蝦湯頭醬汁. 營造出優雅的暖色系視覺感. 微焦蝦肉扎實且鮮味不減, 適量辣度刺激著味蕾, 不嗆辣是優點.
Lightly charred prawns topped with Sichuan spice powder, paired with a rich lobster-based sauce. The spice level is mild, enhancing rather than overpowering the seafood’s natural sweetness.

“官府川式湯類” 有清湯, 奶湯, 紅湯與素高湯. 熬煮方式與拉麵湯頭類似. 雞骨與豬骨熬煮八小時, 淬煉出如濃厚拉麵般色澤乳白. 煙燻豆腐與臘肉切片皆是亮點. 蝦乾賦予的海味意外地與醇厚湯頭融合. 如果餐廳沒有解說, 我猜不到這道溫潤佳餚竟是出自以麻辣聞名的川味.
