ULV Restaurant & Bar 是一家新開幕 2019 台北東區餐酒館,  餐飲界同溫層皆知主廚來自侯布雄法式餐廳.
ULV Restaurant and Bar Taipei is a 2019 newly-opened Taipei Bistro at Taipei East District. Its executive chef worked at Taiwan L’ATELIER de Joël Robuchon restaurant.

ULV Restaurant and Bar 位於忠孝復興捷運站和忠孝敦化捷運站中間, 附近不好停車, 我會建議搭大眾運輸交通工具. 可以從忠孝復興站14號出口出來, 往頂好名店城方向走, 左轉進入忠孝東路四段77巷, 再右轉敦化南路一段160巷, 即可看到低調銀灰色 ULV 招牌在右邊.
ULV Restaurant and Bar is located in between Zhongxiao Fuxing MRT station and Zhongxiao Duhuan MRT station. I would suggest to take public transportation. You can exit from No. 14 Exit and walk toward Dunhuan South Road. You would see the low profile silver-gray sign at the alley.

走進 ULV Restaurant and Bar 餐廳內, 我挑起眉毛看著擺放醃製/發酵罐的置物架, 心裡想, “咦 ~ 這應該是“JE Kitchen” 北歐料理 Style吧, 為何會出現在這家餐廳?”. 入座後觀察餐廳內部裝潢, 感覺與 “Stagiaire 實習生餐廳“ 有些相似, 燈光若是能亮一點會更好. 廚房與 “T+T 餐酒館”一樣是開放式, 除了有吧台單人座. 店內也有長桌, 整體氣氛適合約會. 菜單裡有套餐和單點, 也有調酒搭餐菜單和非酒精搭餐菜單. 首先, 我必須要先說我沒有吃過候布雄法式餐廳, 無從比較哪一家比較優秀.
Walking into the ULV Restaurant and Bar, I saw the shelf that is full of fermented /pickled ingredients. It is exactly like “JE Kitchen” ’s Nordic Cuisine concept, which is to aim to make maximum use of ingredients. The restaurant indoor design is a bit similar with “Stagiaire Restaurant”, but with darker light. The kitchen is like “T+T Bistro”, which is a open kitchen. Besides the single bar counter seats, there are also long tables. The overall environment is suitable for dating as well. The menu has sets and single dishes. Moreover, there are cocktail pairing menu and mocktail pairing menu. First of all, I would need to state that I never eat at Taiwan L’ATELIER de Joël Robuchon restaurant. So, I couldn’t tell you which restaurant is better.

開胃小點不定期更換, 這次我吃到的是酥炸雞球, 外型極像我在 “花滔廚房” 吃茄丸裹鯷魚, 但 Size 稍大一些. 這道料理是碎雞肉加Cream Cheese, 炸完後撒上鹹蛋黃粉末, 基本上 Cream Chese 比例高, 所以把鹹蛋黃和雞肉味道都蓋住, 比較可惜. 值得一提的是從主廚運用鹹蛋黃這道食材隱約可看到北歐料理風格 – 永續理念,就是藉由食品醃製或乾燥或發酵, 善用每項食材零浪費的概念.
The appetizer changes from time to time. This time, my appetizer is Fried Chicken Ball, Salted Egg Yolk, and Koji. Generally speaking, the cream cheese in between covers most of the chicken and salted egg yolk flavor. The salted egg yolk presents the Nordic cuisine concept.

裸麥酸麵包, 邦菩禮奶油

ULV Restaurant and Bar 與專業麵包店合作, 溫熱裸麥酸麵包若是能加些堅果會更優秀,邦菩禮奶油我記得是無鹽發酵奶油 (?!), 店家則是在奶油上再添加法國鹽之花.
ULV Restaurant and Bar cooperation cooperates with professional bakery. The warm sour dough pairs great with Pimplie Butter and small amounts of Fleur de del.

 

炭燒小卷, 昆布和蔥

Charcoal Grilled Squid, Kombu and Scallion

店員端上這一份菜餚時, 一人份的小卷比想像中地多, 跟 “Wildwood Live Fire Cuisine Restaurant”最大的不同是ULV Restaurant and Bar是用炭火, 而非木頭. 小卷咬起來比預期地軟, 撒上些許黑蒜粉, 風乾昆布很搭小卷增加更多海鮮風味, 至於醃甜菜根, 我個人覺得有點突兀, 但不影響這道料理的美味. 單點這道菜餚是 NTD $360, 我不確定份量會不會比圖片裡多, 需再詢問店員, 若是你與朋友想單點, 這道料理可以考慮.
The portion of this dish is larger than expected. Different from “Wildwood Live Fire Cuisine Restaurant”, ULV Restaurant and Bar uses charcoal. The squid tastes quite tender and pairs delicious with the black garlic powder. The dried seaweed (aka Kombu) enhances the overall seafood aroma. As for the pickled beetroot, I personally am not used to it. But, it doesn’t affect the great taste of this dish. The single dish price is NTD $360. You and your friend can share this dish.

酥炸吻仔魚,薏仁燉飯和發酵水田芥

Crispy Fingerling Fish, Barlotto and Fermented Watercress

ULV Restaurant and Bar 主廚將海苔粉灑在酥炸吻仔魚上, 除了有誘人酥脆口感外, 海味也相當足夠. 燉飯上是蘑菇風味的巴撒米克醋醬, 雖然是個配角, 但讓整道菜餚品嚐起來就像松露燉飯 , 薏仁燉飯代替義大利米燉飯, 多數台灣人會有兩極化的反應, 正面反應是 “聰明! 做出不一樣的燉飯”, 負面反應是“平常就已經在吃薏仁, NTD $1880 菜單不應該出現”, 我個人是偏正面反應. 單點菜單上也有這道菜餚, 單點價格是 NTD $360. 我會推薦給平常喜歡吃正統義大利燉飯的人.
ULV Restaurant and Bar executive chef spreads the seaweed powder on the fried fingerling fish. Besides the great crispy texture, there are also great seafood flavor. The executive chef uses Pearl Barley instead of Italian rice to make risotto, which is a great move. Since the balsamic sauce has mushroom flavor, the overall dish tastes a bit like Risotto with Truffle mushroom flavor. I would recommend the single dish (NTD $360) to the person who likes to eat Italian Risotto.

 

油淋式豬心, 牛肝菌清湯 , 水蓮, 醃白筍

Pork Heart “Flamebe”, Cepe Consome, Water Lotus and Pickled Bamboo

這道湯品是 ULV Restaurant and Bar 的招牌. 雖然我是坐在看不到製作過程的沙發區, 但後來有看別人 PO 油淋式豬心的製作過程, 製作過程可以說是用危險形容. 店員採用跟 “al sorriso 義式餐廳” 的Table Service 方式, 經過之前的熱油和現在的熱湯洗條之下, 豬心吃起來脆度比嫩度多一些, 湯品本身是帶有沙沙口感, 且濃郁獨特菌菇風味存留於舌尖久久不散. 油淋式豬心這道菜餚在台北異國料理餐廳不常看到, 若之前沒有吃過, 建議可點來分享, 單點菜餚 NTD $260.
This soup is ULV Restaurant and Bar’s signature dish. The process of making Pork Heart “Flamebe” is dangerous. The staff offers table service, just like at “al sorriso Italian Restaurant”. The pork heart is more crispy than tender. The soup itself is not in clear visual. The unique mushroom flavor would stay at the tastebuds for a while. Pork Heart “Falmebe” is not a common dish at Taipei foreign cuisine restaurant. If you never try it before, you might want to order to share with your friends.

香煎鴨胸, 油封鴨心, 風乾黑醋栗 , 洛神

Duck Breast Confit Duck Heart, Blackcurrant, Hibiscus and Hawthron

外觀看起來像心臟的基本上我是不吃, 所以這道料理的油封鴨心我沒有吃. 雖然店員沒有說, 但是我看得出來 ULV Restaurant and Bar 採用豪野鴨, 主要原因是我不久前才在“台北逗號洋行私廚”吃過豪野鴨, 油脂滲透入鴨肉將嫩度提高且多汁, 可惜筋有點難咬, 我沒品嚐這道的風乾黑醋栗&洛神. 我個人喜歡單純肉香, 多數台灣人喜歡主餐加個配菜, 我個人覺得烤球芽甘藍不錯, 反正餐廳有炭火.
I am afraid to eat the heart shape organ. So, I didn’t try this confit duck heart. ULV Restaurant and Bar executive chef uses high cost Taiwanese duck, which I previously tried at “Curio Comma Taipei”. The tenderness of the duck meat is delicious. However, The tendon is a bit difficult to chew on. I didn’t try their blackcurrant, hibiscus and hawthron. I personally like the original meaty flavor. However, most Taiwanese prefer a vegetable next to the main course. Grilled brussels sprouts could be the best option since the kitchen has charcoal.

鑄鐵燒烤雞蛋布蕾

Iron Torched Creme Brûlée

原本以為鑄鐵燒烤雞蛋布雷會像 “Port 23 Taipei” 一樣會是用有吧手的小鑄鐵鍋. 整體不錯吃, 可以說是 Ugly Delicious 的代表作.
I once assumed that the dessert is going to be at the iron pot like at “Port 23 Taipei”. The overall taste is delicious. This is the best example of Ugly Delicious.

飲料可選茶或咖啡, 其實 NTD $1880 套餐可以用更好的茶.
You can select tea or coffee. As for the NTD $1880, the restaurant can pick a better quality tea or famous tea brand.
