Piccata是一種義大利烹調肉類料理的方式,舉凡牛肉、豬肉、雞排或是魚排,都可以用這種方式烹調,重點在於檸檬的香氣與酸豆的味覺衝擊,加上奶油帶來的潤澤,搭配少油脂的雞胸排,就是豐盛的晚餐主菜了。Piccata describes meat, usually veal or chicken, that is sliced, dredged in flour, then sautéed in a sauce containing lemon juice, butter, and capers.Traditionally, the Italians use veal (veal piccata); however, the best known dish of this sort in the US uses chicken (chicken piccata).

Remark:
這兩種雖然中文都有「芝麻醬」三字,但英文完全不同,亞洲白芝麻醬為 Sesame Paste,中東白芝麻醬為 Tahini。一打開看到這中東白芝麻醬的模樣、聞味道,馬上就確定它和台灣常見的亞洲白芝麻醬不一樣。顏色明顯比亞洲白芝麻醬淺,而且也沒有亞洲白芝麻醬那麼明顯、濃重的白芝麻味,這中東白芝麻醬的顏色和味道倒讓我覺得比較像葵花籽醬。

 

 

4.Baked Ziti

Remark:
Ziti is an extruded pasta. It is smaller than rigatoni, but larger than mezzani.Ziti is similar to penne, but often has ends cut in a straight line versus diagonally. Penne are usually a little narrower and the ends are cut diagonally, suggesting a quill pen. Ziti are often stuffed and baked, where penne are sauced or used in pasta salads.

 

5. Picadillo

Remark: Crock Pot Picadillo is a flavorful Cuban dish made with ground beef and a sauce made from simmering tomatoes, green olives, bell peppers, cumin, and spices.

 

 

6. Chicken Vesuvio

Remark: Chicken Vesuvio, a specialty of Chicago, is an Italian-American dish made from chicken on the bone and wedges of potato sauteed with garlic, oregano, white wine, and olive oil, then baked until the chicken’s skin becomes crisp. The casserole is often garnished with a few green peas for color, although some more modern variations may omit some of these。

 

7. Corned Beef

Remark:All the tricks to a bright red, lively-tasting sauce, made just as it is in the south of Italy (no butter, no onions) are in this recipe. Use a skillet instead of the usual saucepan: the water evaporates quickly, so the tomatoes are just cooked through as the sauce becomes thick.

10. Harissa
Remark:
Harissa (Arabic: هريسة harīsa, from Maghrebi Arabic) is a North African hot chili pepper paste, the main ingredients of which are roasted red peppers, Baklouti (بقلوطي) peppers or serrano peppers, spices and herbs such as garlic paste, caraway seeds, coriander seeds, cumin and olive oil to carry the oil-soluble flavors. Rose harissa, made with rose petals, is also available
Serrano pepper: The serrano pepper (Capsicum annuum) is a type of chili pepper that originated in the mountainous regions of the Mexican states of Puebla and Hidalgo.[1] The name of the pepper is a reference to the mountains (sierras) of these regions

 

 

11. Keema: 這道在北印度、巴基斯坦的keema curry,也是用絞肉所烹煮的肉醬料裡,裡頭加入番茄罐、椰漿罐、咖哩粉,熬煮出來的肉醬好香好下飯.其實乾咖哩就是肉醬咖哩。 日本人叫乾咖哩,而印度人叫Keema Curry。

1. What’s the difference between filtered and unfiltered wine?

Remark:
When a wine completes fermentation, it’s full of sediment and floating yeast – usually called ‘blind’. This cloudy wine is then filtered twice – the first to remove yeast particles and the second to remove small bacteria – before it is bottled.
Finished wine is essentially a liquid hovering between juice and vinegar, meaning it’s in a constant state of change and always in danger of going bad. As such, removing that additional bacteria helps to reduce the risk of spoilage.That’s not to say that unfiltered wines are inherently full of bacteria, though – there are ways to supress bacterial activity without filtration. This can be done during the second (malolactic) fermentation, although this usually means the wine loses its primary fruit flavours and instead develops nuttier, creamier aromas. Alternatively, unfiltered wine can be stabilised by adding a higher dosage of sulphites.

這次帝王 Dewar’s 就推出一款全新威士忌—Dewar’s  Illegal Smooth,是 8 年的調和威士忌先經過二次陳釀(Double aged),再去過 Mezcal 桶(過桶時間未知)。根據官方說法使用 Mezcal 桶讓這支酒有著「預期外與愉悅的甜美滑順和一絲的煙燻風味」
帝亞吉歐集團早在 2019 年就有推出龍舌蘭桶威士忌。這是它旗下的調和威士忌品牌 Buchanan’s 的產品,使用的是 Don Julio 的龍舌蘭桶。

2. Shopper trends – Adapting to the new normal

Remark: Staples like dried beans saw sales rise 63% for the one-week period ended March 7 when compared to the previous four weeks, according to the market research company Nielsen. Rice sales spiked 58%, chickepeas/garbanzos 47%, powdered milk products 126%, water 42%, and canned meat 58%.Products that experienced a dip in sales included apples (-3%), papayas (-7%) and celery (-19%).

Remark: Pizza Hut is adding a spicy new flavor to its wings. New Nashville Hot Wings feature a cayenne pepper sauce with a blend of tangy, savory and sweet flavors. Papa John’s is adding a new appetizer: Jalapeño Popper Rolls. The baked rolls feature jalapeños and Philadelphia cream cheese wrapped in Papa John’s pizza dough. An order of eight rolls comes with ranch sauce for dipping.

A recent forecast by Nielsen pegs that figure at $143 billion. In 2019, 54 million households purchased food and beverages online in the United States, up 14% from two years earlier, according to Nielsen.
Amazon.com Inc. is the leading online grocery seller with $8.2 billion in sales, trailed by Walmart at $2.44 billion and Kroger at $1.51 billion. Target, by comparison, has $423 million in online grocery sales, said Betsy McGinn, co-author of “The Amazon Roadmap.”
