台北信義區餐酒館 》 JK STUDIO | TAIPEI BISTRO

很多市政府捷運站餐酒館都位於巷弄內. 不同於其他台北東區餐酒館, JK STUDIO 新義法料理餐廳有提供平價午餐套餐.
There are many Bistros near Taipei City Hall MRT stations. Different from other East District Bistro, JK Studio offers low price Business Lunch Set.

我是最近才開始在新聞與社交媒體上得知這家餐酒館, 店內坪數大, 也有長桌, 除了窗邊的座位外 , 其他桌椅靠得很近, 擁擠的程度類似Starbucks, 包廂可容納約十位顧客左右, 也可提供活動包場.
JK Studio started getting media attention lately. The indoor space is large and has long table for large party. Besides the tables near the window, most tables and chairs are quite closed, just like Starbucks. They also have private dining room, which can fit in 10 + customers.

 

 

JK STUDIO 新義法料理餐廳的主打料理是牛排, 由於附近幾乎都是單價NTD $200 元以下的便當店或是餐廳, 所以JK Studio 有提供平價商業午餐, 最低價格為NTD $199, 若想點套餐, 需要加錢.  這一家的性質跟台北世貿附近的 Musée Kitchen & Bar 有點類似.
JK STUDIO, which offers Italian and French cuisine, is famous for its steak. However, the nearby small restaurants offers lower than NTD $200 lunch. So, JK Studio created this particular Business Lunch Menu, which lowest price is NTD $199. The operation style is a bit similar with Musée Kitchen & Bar. 

 

 

舒肥奶油青衣海魚排

English Name: Sous-vide Scarus Ghobban (Parrotfish)
Set Price: NTD $399 + $ 69 = $468

因為魚鱗有著亮麗的藍綠色澤, 青衣魚別名為“鸚哥魚”, 料理方式通常是清蒸.舒肥 (Sous-vide) 法文是真空的意思, 中文則是真空低溫烹調法, 若在家裡沒有舒肥料理機, 可以將肉品放進真空包裝內, 再放進低溫約45~60度C的水中長時間慢熟.
This particular fish is greenish blue color. The usual cooking method would be steamed. Sous-vide means that food is vacuum-sealed in a plastic pouch and then placed in a water bath or steam environment for a long time.

 

 

隨著長時間低溫烹調, 青衣魚的油脂緩緩地均勻分佈, 並不會造成邊緣或外層較過於乾硬, 吃下的每一口幾乎鮮嫩程度一致, 沾上少許由檸檬汁,香料和白酒製成的佐醬, 讓味蕾感受到酸度的刺激.
The fish fat brings the moist to every inch of the fish evenly. The appearance or the edge wouldn’t be too hard nor dry. Most bites are tender. As for the sauce, it has lemon juices, spices and white wine. It can bring fair amount of the acidity.

 

 

最精彩的配置則是新鮮玉米筍, 有些餐廳為了降低成本而使用玉米罐頭, JK Studio的主廚則是選擇採用天然食材. 茭白筍與蘆筍脆度也是十足, 綿密馬鈴薯泥帶來不同的口感. 也許因為近期都是吃帶有豐富油脂的鮭魚或是鮪魚, 這次吃這款料理反而覺得配置比魚排精彩.
The most interesting part would be the small fresh corn. Most restaurants would lower its cost and use canned corn. But JK Studio uses natural ingredients. The bamboos and asparagus are crisp. Mashed potato brings different texture to this dish.

 

 

套餐: 玉米湯 & 香檸雞柳條 & 冰紅茶

English Name: Corn Soup & Chicken Nugget & Iced Black Tea

玉米湯跟 El Marqués Tapas Bar那道煙燻紅椒馬鈴薯泥一樣, 皆是用鑄鐵鍋蓋著, 玉米湯並不會濃郁, 也沒有罐頭玉米粒, 但湯裡仍舊有少許的玉米香味, 搭配嫩雞柳肉也是恰到好處, 錫蘭紅茶則是餐後飲料.因為主餐部分原本就搭配錫蘭紅茶, 若是兩人一起用餐, 建議不要點套餐, 而是另外點一份完整的前菜.
The corn is not thick and doesn’t have canned corn. But the soup still has hints of corn flavor. The chicken nuggets is surprisingly tender. I would recommend not to order set. The main reason would be the main course already comes with drink (coffee or black tea). You and your friend can order 2 main courses and another appetizer.
