台北大安區西班牙餐廳越開越多, Hidden by DN 隱丹廚當代料理則是位於信義安和捷運站附近.
There are many Spanish Restaurants at Taipei Da’an District. Hidden by DN is located near Xinyi Anhe MRT station.

“Hidden by DN”餐廳名稱中的 DN 是西班牙籍主廚兼老闆 Daniel Negreira, 是餐飲業界知名人物, 除了傳統西班牙傳統料理外, 也精通所謂的 “分子料理”, 拆解料理元素重組成具有現代視覺感的料理. 餐廳與 “El Marqués Tapas Bar Spanish Restaurant“ 在同一條街上, 從信義路四段轉進 “寅樂屋咖哩”巷弄內, 經過 “Liquid Bread Company”即可抵達餐廳. 餐廳外觀與室內皆走的是簡約低調灰黑, 除了一樓位置外, 也有地下一樓的包廂 (大約 12 ~ 14座位) .
“Hidden by DN” ’s DN stands for the executive chef Daniel Negreira. He focuses on traditional Spanish cuisine and also Molecular gastronomy. This restaurant is located at the same street as “El Marqués Tapas Bar Spanish Restaurant“. If walking from Xinyi Anhe MRT station, you can turn in the alley where “Torarakuya Curry House” is. After passing by the “Liquid Bread Company”, you can see the Hidden by DN restaurant sign. Both indoor and outdoor design are mostly grayish-black. Besides the seats on the first floor, they also have private dining room (about 12 ~ 14 seats).

English Name: Daily Amuse Bouche – Bread

撥開溫熱方型麵包時, 拿著一小塊麵包放入口中, 享受麵包與橄欖香氣時, 也感受麵包的鬆軟, 自製棍子麵包也相當不錯. 除了橄欖油佐巴薩米克醬醋外, 也有在台灣少見的西班牙 Romesco 佐醬, 橘紅色佐醬上撒有紅色胡椒粉(Paprika), Romesco 佐醬以烘烤堅果與紅椒為主, 單吃對我來說相當辛辣, 搭配麵包則是很奇妙的搭配, 就像我之前吃的 ‘Alra Buko 品牌“的 辛辣乳酪 Cream Cheese, 這道開胃菜同時也會激起對“現代化料理”的好奇感.
Taking a bite at the warm square bread, both bread and olive aroma appeared. Both breads are very soft and fluffy. Besides the usual olive oil with balsamic sauce, they also have Spanish Romesco Sauce/Paste, which is mainly made with baked nuts and red pepper. Pairing with breads are a bit similar like pairing bread with “Alra Buko Brand” Cream Cheese. It is fun and interesting.

 

 

 

菠菜湯

這是另一道有視覺震撼的料理, 廚師如同 Bartender, 將溫熱菠菜湯放進試管裡, 湯頭並不濃郁, 細緻質地中有著單純菠菜風味.
The Spinach soup is placed in the tube. The visual image is full of surprises. The spinach soup is not thick. instead, it has smooth texture with simply spinach flavor.

 

 

松露風味凱薩沙拉 (放山玉米雞)

English Name: Corn Feed Chicken Caesar Salad with Truffle Aroma

法國有知名布列斯雞, 台灣有放山玉米雞, 如名也就是放生野外的雞, 跟布列斯雞一樣只吃穀物. 剛開始先品嚐一小塊雞肉, 意想不到地有鮮嫩濕潤肉質, 帶有甜味, 味蕾從此記得那口感與風味, 之後的松露風味與起司風味完全不及放山玉米雞, 相當推薦這一道料理.
France has Bresse Poultry, and Taiwan has its free range chicken. Similar with Bresse Poultry, this particular free range chicken only eat corns. The meat is unexpectedly tender and moist. Surprisingly, it has hints of sweetness. The taste is unforgettable. I would strongly recommend this dish.

 

 

西班牙傳統風味手作餡餅

每個國家都有類似餡餅這種料理, 中國有叉燒酥, 義大利有Calzone, 西班牙則是有 Empanada. Hidden by DN 隱丹廚這次則是採用台灣鮟鱇魚, Empanada 放在烘培紙上, 剛開始, 餡餅外皮絲毫沒有因為油膩而變軟, 海鮮味並沒有被辛香料蓋住, 只是吃久會過於油膩.
Every country has their own “puffed pastry”. China has BBQ puffed pastry, and Italy has Calzone. In Spain, there is Empanada. The restaurant this time uses local Monkfish/Goosefish as filling. Interesting enough, the empanada is placed at the baking paper without any extra design. The appearance is still crispy at the beginning. The spice flavor didn’t cover the seafood flavor. However, the tastebuds would be cover with the oily feeling. Maybe it would be better if making this puff pastry smaller?

 

 

濃郁西班牙紅蝦燉飯

English Name: Carabinero Shrimp Creamy Rice

看似簡單的薑黃色燉飯覆蓋在紅蝦上, 挖起一小口燉飯, 再加ㄧ小口蝦膏後, 濃郁蝦味與奶油風味包覆著米心頗硬的飯, 一口其實就很滿足. 脆度高的生蝦藏在燉飯底下, 整體相當不錯.
Turmeric creamy rice is placing at the top of the pawn. Scooping one bite of the rice with shrimp paste, the thick shrimp and butter flavor surrounding the rice. The rice’s texture is hard and satisfying. The crispy raw pawn is hidden under the rice. The whole dish is quite delicious.

 

 

我阿嬤的經典料理慢燉AA5等級牛肉

English Name: My Grandmother Style Prime US Beef Stewed
Foodelicious 美味程度: 👍👍👍👍👍

服務生端上橘紅色壓力鍋, 一整鍋份量比想像中的大, 低溫烹調牛肉(尤其是牛肋) 肉質相當軟嫩, 薯泥有特別處理過, 打得相當細緻, 完全沒有顆粒口感, 反而有點像 Sorbet 質地相當光滑. 搭配薯泥後燉汁意外地不會過鹹, 胃口小的女生會吃不完, 至於男生是一定吃得飽, 我相當推薦這一道料理.
The dish is placing inside the orange pressure cooker. This dish’s quantity is larger than expected. The beefs (especially the ribs), which is cooked with low temperature, are tender and juicy. The mashed potato texture is more Sorbet, which is extremely creamy and smooth. The stew isn’t overly salty. I strongly recommend this dish.

 

 

Luis Cañas Crianza 2014

Hidden by DN 隱丹廚的葡萄酒皆是西班牙酒, 就跟 “IL MERCATO 義大利餐廳”一樣都是義大利酒. 這款酒是來自西班牙北部 Rioja 產區, 有95% 是Tempranillo釀造而成. Crianza 這個單字的意思是經過約 6 ~ 12個月的木桶培養. 深紅色的圓滑酒體散發出莓果香氣, 品酌時以濃郁黑莓風味為主導, 單寧並不是很明顯, 搭配我點的牛肉料理相當不錯.
All Hidden by DN wines are from Spain, just like “IL MERCATO”’s wines are from Italy. This wine , which has 95% Tempranillo, is originated from Northern Spain Rioja area. The word “Crianza” means it is aged 6~ 12 months in the oak cask. The dark red medium-full wine body has berry aroma. The blackberry flavor dominates this wine. The tennis is not obvious. It is great pairing with my beef dish.

 

 

甜點: 芭菲凍糕 (Parfait)

English Name: Dessert: Parfait

當這道甜點端上桌時, 我再三與服務生確認這道甜點的名稱, 因為我所知道的芭菲凍糕 (Parfait) 都是像在 “五味瓶 C’est la vie Bistro”的香蕉沙巴雍甜點放置在玻璃杯中. 這道甜點除了鮮豔玫瑰色蛋白霜外, 白色接骨木花更是亮點, 切下一小塊, 綿密巧克力搭配堅果顆粒是很多巧克力愛好者嚮往的口感, 若平常熱愛巧克力, 你會相當愛這道甜點.
I double checked with the waiter regarding this dessert dish. This dessert is called Parfait, which is supposed to be placed at the glass (like “ C’est la vie Bistro”’s Sabayon). Besides the rose color meringue, there is also white elder flower as decoration. The creamy and rich chocolate with nuts are most chocolate lovers’ preference. If you like chocolate, you would love this dessert.

 

 

餐後飲料 – 卡布奇諾

因為連續喝了酒水, 又吃了如此豐盛午餐, 其實當時有點喝不下餐後飲料, 看著飲料Menu, 心想都來到異國料理餐廳, 點咖啡似乎合乎常理, 卡布奇諾上撒著少許肉桂粉, 蓋住咖啡原本的香氣, 有點可惜, 我會建議點他們的台灣茶, 看網路上有不錯的好評.
Honestly, I was a bit full after eating and drinking. I ordered Cappuccino without thinking. The cinnamon powder covered most of the coffee aroma. I would recommend to order their Taiwanese tea instead.
