鍋台銘 x 黑毛和牛。頂級鍋物為新開幕台北大安區高級火鍋美食, 招牌火鍋是 “鍋台銘總裁鍋” . 這次有這個榮幸品嚐到另外一款- 雙人火鍋套餐.
Guotaiming Hot Pot Restaurant is a new high-end hot pot restaurant at Taipei Da’an District. This time, I have the honor to try out their “Hot Pot Set for Two”.

 

餐廳位於忠孝SOGO 百貨後方, 交通相當方便, 明亮且以木色系裝潢為主, 雖然沒有獨立包廂, 但一樓與地下一樓總共約 90 座位, 除了常見四人座位, 地下一樓也有單人火鍋區, 文末影片有用餐環境影片.
The restaurant is located at the back of SOGO department store. The indoor design is bright and wooden color decoration. Even though it doesn’t have private dining rooms, but the total seats are around 90 sets (1 F and B1). Besides the usual 4-people sets, there are also single seats at B1. The video at the end of article has the dining environment video.

 

 

桌上電磁爐為崁入式, 方便客人操作火侯. 由於火鍋食材眾多, 桌上立牌詳細紀錄著每樣食材的烹煮時間, 抽屜裡也有三分鐘小沙漏, 餐廳也細心地將調味料蓋上維持品質, 自助式飲料除了麥仔茶和青檸水外, 也有準備薄荷風味的熱康福茶, 我個人相當推薦熱康福茶, 舒緩味蕾.
The restaurant uses induction electronic cooker instead of gas, which is easier to control. The table tablet also instructed each ingredient requested cooking time. There is a 3-minutes hourglass in the drawer. The staff covers each spices with lids. There are three types of drinks – wheat tea, lemon water, and hot mint tea. I would recommend the hot mint tea since it ease the tastebuds.

舒骨雞白鍋 & 金門高粱酸白菜鍋

English Name: Chicken Broth and Pickled Cabbage Broth
Price: + NTD $120 + $120 = Extra $240

雙人套餐可選兩種湯頭, 店家的麻辣湯頭是以18多種天然香料熬煮. 但我跟朋友選擇較少見的舒骨雞白湯頭(左)與金門高粱酸白菜湯頭(右). 舒骨雞白湯頭製作相當費時與費工, 需先將雞爪, 雞胸架, 雞骨烹煮一次後, 再換全新食材繼續第二次以微火燉煮, 過程總共需要12 小時. 每勺一口煲湯, 散放出懷念的雞湯香味, 其溫醇精華與膠質讓人口齒留香.至於金門高粱酸白菜湯頭, 主廚特別採用金門高粱醃製的白菜, 再加上豬骨與雞腳熬煮, 少許脆度高白菜深藏在純白色滑順湯頭中, 和市面上酸白菜白肉鍋較不同的是酸香風味並不會過於刺激味蕾. 若喝不完可以打包回家, 跟上引水產一樣可以用湯頭煮粥. 我非常推薦這兩款湯頭.
The customer can select two types of soup broth. Their Mala soup broth is made with more than 18 natural spices. However, my friend and I select the less-seen Chicken broth (left) and Pickled cabbage broth (right). The chicken soup broth is stewed with chicken bones, chicken breast bones, and chicken feet for total 12 hours. Each sip is full of the traditional chicken soup aroma. Its collagen presents the essence of chicken soup. As for another soup, the crisp cabbages are pickled with Taiwanese white wine. The acidity didn’t stimulate the tastebuds too much. The broth itself is stewed with pork bone and chicken feet. If you didn’t finish the broth, you can ask the staffs to pack for to-go. Both broths are worth trying.

 

各式風味鹽巴

English Name: Flavored Salt

最讓我驚訝的是店家準備高達四種不ㄧ樣風味的鹽來搭配頂級食材, 其中包括紫色法國紅酒鹽, 純白法國鹽之花, 褐色西班牙煙燻鹽和地中海黑鹽. 我習慣海鮮吃原味, 肉類加最單純的鹽之花提味.
The most surprising part would be the restaurant prepares four different types of salts to pair with the high quality food ingredients. It includes purple color red wine salt, white color Fleur de sel, light brown smoked salt, and black color Mediterranean salty. I prefer the original seafood flavor without any salt. As for the meat, I prefer to add Fleur de see just for the simple taste.

 

 

M9 澳洲和牛雪花 18oz

English Name: M9 AU Wagyu Peeled Short Plate

“雪花肉”這三個字在台灣火鍋店相當常見, 但只有少數頂級火鍋店會清楚標示 “M9 澳洲和牛雪花”, 澳洲和牛等級分類 (M1 ~ M9) 是以牛肉上的大理石紋, M9 則是油花分佈最密集的最高等級. 均勻ㄧ致大小的牛肉片擺放在純黑長方形盤上, 再搭配艷紅與純白色, 視覺感極佳. 通常建議只需涮幾下即可, 油脂融化讓肉質軟嫩, 相當不錯.
Only a few high-end hot pot restaurant, such as Guotaiming Hot Pot Restaurant stated clearly, would state clearly “M9 AU Wagyu Peeled Short Plate” on the menu. The level qualification is based on its marble/fats on the appearance. M9 is the highest level. With such high quality, you only need to cook for less a minute. The fats melt into the meat to make it more tender as expected.

 

 

美國 Choice 牛小排 18oz

English Name: US Choice Short Rib

無骨牛小排如鮮紅牡丹花般擺盤, 立體視覺凸顯出肉片稍有厚度的優點, 油花佈滿整個肉片, 一開始忍不住迅速夾起一片浸入鍋中, 一不注意, 高溫迅速將油脂溶化甚至會分為2片, 我會建議將肉片放進濾網或是勺子中, 再放入炙熱湯頭中, 過不到30秒後即可享受, 口中的牛油香味並沒有被濃郁湯頭蓋過, 我相當推薦這一款肉品.
Boneless ribs are placed as peony flower shape, which shows its thickness. I would suggest to put the meat in the large spoon then put into the broth. Or less, the fats would be easier to melt and separate into 2 pieces. Surprisingly, the broth flavor didn’t cover meaty flavor. I would strongly recommend this dish.

 

 

松阪豬

English Name: Matsusaka Pork
Foodelicious 美味程度: 👍👍👍

乾燥玫瑰色般的色澤, 每一片肥瘦相間, 擺盤如同花瓣般綻開, 肉的厚度比先前兩款肉高, 肉較有嚼勁, 但是我個人比較喜歡軟嫩的口感.
The fats are spreads evenly in each thick-sliced pieces.The texture is quite chewy. However, I personally prefer tender though.

 

 

海鮮盤

English Name: Seafood Combo

一整個海鮮拼盤大到像花籃般, 我心裡想: “難怪菜單上說雙人套餐可三人共鍋, 兩人一定吃不完”, 所有海鮮食材皆是用急凍方式保持新鮮. 這時服務生開始解釋桌上立牌上有寫哪種食材煮多久, 也從抽屜中拿出三分鐘沙漏指導, 最貼心的服務莫過於若有任何問題, 可以桌邊服務.
The size of the seafood plate is almost as large as the flower basket. I immediately thought, “No wonder the menu stated that three people can share this particular set”. All seafood ingredients are frozenly immediately after catching in order to keep its freshness. The staff would explain each ingredient cooking details. However, if the customer have any question, you can request for table service assistance.

 

 

服務生提到因為蝦的Size較大, 會建議以倒掛方式在鍋緣, 先煮蝦頭. 三款蝦我跟朋友一致認為野生大草蝦最美味, 肉質最紮實. 鱸魚則是採用金目鱸, 基本上我跟朋友將鱸魚片放進鍋中長時間烹煮, 肉質依舊相當嫩, 可見肥美程度相當可觀.
The best way to cook the whole shrimp would be to cook the shrimp head first. My friend and I borsht prefer the large shrimp, which the texture is dense. The sea bass is also tender due to its quality.

 

 

我會建議廣島牡蠣與生食干貝請服務生協助. 因為廣島牡蠣需要煮熟才能食用, 熟牡蠣如氣球般從乾扁到鼓起, 內含滿滿的海鮮湯汁, 高級生食級北海道干貝更是需要無時無刻檢查熟度.
It would be better to request table service for the oyster and scallops. The oyster would need to be cooked through in order to be juicy. As for the scallops, you just need the scallops to be medium-rare level.

 

 

綜合菜盤 & 附餐

我跟朋友都選擇麵 – 冬粉與關廟麵, 有如此精彩的湯頭, 一定要搭配麵! 綜合菜盤裡較特別的是新鮮香菇, 菜盤組合會以當季鮮蔬為主.
My friend and I select green bean noodle and Guanmiao Noodle. The reason would be that noodles are great pairing with the broth essense. The various vegetables are also seasonal.

 

 

總裁私房小菜

English Name: Appetizer
Foodelicious 美味程度: N/A

目前總裁私房小菜尚未在菜單上, 麻辣雞腳與麻辣豬肚都相當辛辣, 我並沒有品嚐, 我朋友提到兩種小菜是名符其實的下酒菜.
The spicy chicken feet and pig belly appetizers are not at the menu yet. Since my friend mentioned that it is a bit spicer than expected, so I didn’t try it.
