FirePlay Taipei Reservation and Parking

台北 FirePlay 餐廳介於芝山站 2 號出口與1號出口, 步行僅需 2 ~ 5 分鐘, 停車場資訊在圖一, 僅晚上營業的 FirePlay 餐廳在巷弄內顯得低調, 步入餐廳最先注意到的是 L 型板前座位和炭烤爐, 四處走動後陸續發現有柴燒窯爐, 不同酒杯與醒酒器, 在入口兩側則是供吃完甜點休息的沙發座椅, 文末影片有更多細節,     若需包場, 沙發則是會撤掉改為長桌 , 非常適合辦品酒會或是家庭聚會. 而且若是需要“非營業時間包場”, 也可直接私訊詢問細節. 我們當天用餐也有不少情侶約會用餐, FirePlay 也很適合約會. FirePlay 開放式廚房只有主廚 Nick, 並沒有副主廚或是廚師團隊, 不受傳統 Fine Dining 的框架束縛, 廚房就是主廚 Nick 的專屬表演舞台. 目前只接受網路訂位 (Link: https://inline.app/booking/fireplay/fireplaytaipei ), 而且訂位為偶數.
FirePlay Taipei Restaurant is located in between Exit 2 and Exit 1 of Zhishan MRT station. The walking distance is only 2 ~ 5 minutes. The parking space information is at picture 1. I noticed the 12 counter seats. Inside the restaurant, they have both Charcoal and Wooden Grilling platform/ovens. There are also various wine glass and decanters. The sofa areas are for customers to relax after eating dessert. There are more details at the video at the end of article. Surprisingly, Chef Nick is the only one that works at Fireplay Kitchen without any chef team nor sous chef. Now, FirePlay only accepts online reservation (Link: https://inline.app/booking/fireplay/fireplaytaipei ), and it has to be even number (For example, 2,4 )

北海道扇貝, XO 醬

Hokkaido Scallop with XO sauce

FirePlay 無菜單料理會隨季節與食材不同而稍作改變, 這次用餐第一道料理是北海道扇貝, 適量 XO醬, 櫻花蝦和蝦夷蔥依序疊上, FirePlay 擺盤設計讓我聯想到在 “logy” 吃到的干貝. 這道料理的乾燥櫻花蝦賦予酥脆口感,味蕾感受到來自XO醬的紅蔥頭濃郁香氣, 彰顯不同層次的對比, 間接覆蓋著飽滿北海道扇貝的薄弱海鮮風味.
FirePlay Omakase Style Menu would slightly change due to the seasonal ingredients. First dish is Scallop from Hokkaido with dried sakura shrimp, XO sauce and green onions. The plating display is similar with the scallop that I tasted at “logy”. The dried sakura shrimp offers the crispy texture. The thick shallot flavors from the XO sauce covers the hints of the seafood flavor from the scallop.

花蓮迷你胡蘿蔔, 芝麻味噌醬

Taiwan Mini Carrot with Sesame Miso sauce

FirePlay 主廚 Nick 採用台灣花蓮迷你胡蘿蔔, 這款炙烤過後的胡蘿蔔沒有過硬口感, 也沒有胡蘿蔔獨特味道, 單吃顯得香甜鮮脆, 搭配芝麻味噌醬頗具東方風格.
FirePlay Taipei Chef Nick uses Mini Carrots from Hualien, Taiwan. The grilled carrots overall do not have classic hard texture. It also doesn’t have the unique flavor from carrots. The carrot tastes refreshing and crisp. With the sesame miso sauce, the carrots becomes quite sweet with strong sesame flavor.

 

台灣梨山甜蔥, 黑蒜醬

Taiwan Large Green Onion (Naganegi) with Fermented Black Garlic Sauce

這一道菜餚是兩人分享. “大蔥也可以當作一道菜餚?!” 是我看到這一道菜餚的反應, 適量黑蒜醬淋在甜蔥上, 撒上在 “犇 牛肉食堂” 常見的烤蒜片, 整體看起來很樸實. 這時聽到朋友提到主廚Nick 曾在新加坡 Restaurant André, 台灣 RAW, 雪梨Firedoor, 日本神戶bb9等餐廳工作過, 主廚 Nick 造就一身炭烤與窯烤深厚功力, 醬汁搭配主食更是需要多年工作歷練. 當我開始先品嚐黑蒜醬時, 味蕾只感受到鹹度, 搭配台灣梨山大蔥再吃一次, 多了一抹甜鹹風味, 互相襯托出最佳效果, 蔥香反倒成為配角, 口味的變化讓我蠻喜歡這一道料理.
This dish is for 2 people to share. “Green Onion can be a dish?!” is my reaction when I see this dish. Fair amount of Fermented Black Sauce is spread on the Taiwan Large Green Onion. The garlic slices, which I saw at “Ben Teppan & Grill Restaurant”, are on the appearance as well. The dish design is quite down-to-earth. At this moment, my friend told me that Chef Nick worked at Restaurant André, Taiwan RAW, Sydney Firedoor and Kobe bb9 restaurants. Besides experienced grilling skills, the sauce pairing is also one of his specialities. When I first tastes only the garlic sauce, it is only salty. However, pairing with the large green onion, the overall taste becomes sweet and salty flavor. There is only hints of unique green onion flavor. I like the way Chef Nick changes one dish’s flavor with sauce pairing.

胭脂蝦, 番茄燉飯, 野生烏魚子

Shrimp, Paella, Prime Mullet Roe

這道料理是一人一份. 端上桌時, 店員刨台灣野生烏魚子碎末於胭脂蝦上, 而不是像 “金蓬萊”將烏魚子切丁. 雖然胭脂蝦經過柴燒過程, 蝦依舊保持著半生熟, 這種類型的熟度常在米其林餐盤餐廳見到 (例如: “Bencotto Taipei” 和 “隱丹廚”), 我個人蠻愛吃這種熟度的海鮮. 主廚準備燉飯也是一點都不馬虎, 採用西班牙 Bomba Rice 與蝦汁一起燉煮, 米心硬度適中, 店員提到, 可將蝦頭切開後會有蝦膏, 拌在飯裡一同入口更是增加整體的鹹香海鮮風味,以鮮味貫穿整道菜餚,  這道料理精彩程度不亞於薩索雞腿.
This dish is solely for one person. The staff shreds the prime mullet roe on the Shrimp appearance instead of cutting into dice. With the grilling process, the shrimp stays half-raw texture, which is mostly seen at Michelin Plate Restaurants (such as “Bencotto Taipei” and “Hidden by DN”. I personally like this type of texture. The paella is also cooked with Spain Bomba Rice and shrimp broth. The rice texture is perfect. The shrimp paste from the shrimp head would definitely enhance the overall salty seafood flavor. This dish is as perfect as the Sasso Chicken Main Dish.

赤鯮

Grilled Red Seabream Fish

這道是兩人一起分享, FirePlay 魚類料理不固定用某款魚, 這次主廚是用赤鯮, 我查了書, “每逢 12 ~ 4月, 尤其過年時節油脂最豐富“, 由於 FirePlay 餐廳並無瓦斯也不插電, 赤鯮則是用燒烤的方式, 單吃就很肥美, 外皮的微焦香襯托出魚肉的嫩,  放置於一旁的醬料裡有香蒜,鯷魚,吻仔魚, 山胡蘿蔔葉, 少許薄荷葉與巴西里, 將醬汁倒在魚上時, 立即嗅到濃郁蒜香與鹹香海鮮味,  整體吃起來並不會過鹹, 而且唇齒留香, 只是要注意有魚刺.
This dish is for two people to share. FirePlay fish dish would change due to the seasons or quantities. Red Seabream , which is a winter/spring seasonal fish, contains fair amount of fats. After grilling, the fish meat is simply tender. The sauce on the side, which has garlic, anchovy, mini whitebait, mint, and parsley, offers the complex flavors. The sauce pairing would enhance the seafood flavor along with garlic flavor. However, the taste is not too salty, and mind the tiny fish bones.

松板豬, 烏斯特醬

Pork with Worcestershire sauce

這道是兩人一起分享. FirePlay 採用台東黑毛豬, 最令人期待的是月見烏斯特照燒醬, 很多台灣人對烏斯特醬 (Worcestershire sauce) 很陌生, 一般市面上賣的家用烏斯特醬幾乎都是酸甜微辣, FirePlay 的黑褐色烏斯特醬除了將蛋黃已先在醬裡浸泡兩小時, 店員指導先將蛋液與醬汁攪拌再淋在松板豬, 因為醬汁裡有加些許味醂與清酒, 柔化了酸甜與辛香的主導風味, 香醇醬料出乎意料地增強松阪豬的鹹香肉風味.
This dish is for two people to share. FirePlay restaurant uses the black pigs from Taitung, Taiwan. The most interesting part of this dish would be the Worcestershire sauce. The household Worcestershire sauce from the supermarket would have sweet and sour along with small amount of spice flavor. However, in FirePlay Restaurant, the chef puts small amount of sweet sake and Japanese sake to soften the Worcestershire sauce flavor. Also, the egg is already soaked at the sauce for two hours. The sauce enhances the salty and meaty flavor of the pork unexpectedly.

 

薩索雞腿, 雞肝, 咖哩

Sasso chicken, Chicken Liver, Curry

這道是兩人一起分享. 多數人看到 “薩索雞”時, 第一個反應都是進口雞肉, 其實 FirePlay 用的是法國品種但在台灣雲林土生土長的薩索雞,薩索雞是法國紅標認證標準(The Label Rouge)的高級食用雞品種. 主廚 Nick 用一夜干方式將薩索雞腿風乾, 外皮滋潤油亮, 切開時有ㄎㄠˇ一聲, 挑逗著食慾, 油脂在刀上留下痕跡, 燒烤雞腿的肥美賦予外酥內嫩的完美比例, 雞肝則是用油淋方式, 火一瞬間爆發, 我都替主廚 Nick 捏了一把冷汗. 雞內臟脆度高, 不嗆鼻的南洋咖哩醬則是當作是雞肉與雞內臟的沾醬, 巧巴達則是與天母野上麵包合作, 也可沾醬吃, 醬料會不定期更換.  老實說, 我很想自己吃完這一道值得推薦的料理, 完全不想與其他人分享.
This dish is for two people to share. Most people see “Sasso Chicken” would think that this chicken meat is imported. In fact, FirePlay’s Sasso Chicken that is a France chicken species that are grown in Yulin, Taiwan. This particular chicken species has the Label Rouge certificate, which means high quality. Chef Nick uses salted -dried method (mostly seen in Japanese Restaurants) for Sasso Chicken thigh. The golden-brown chicken skin is crispy and its meats are juicy and tender. Perfect would be the adjective that I use to describe this particular chicken meat. As for the chicken liver, the cooking method is similar with the method that I saw at “ULV Restaurant and Bar Taipei”. It amazed me to see this type of fire up- close. The chicken liver is crispy along with curry sauce. The breads are provided by Nogami Bakery at Tiamu. Honestly, I could finish the whole dish by myself instead of sharing with others!

義式蛋白霜, 馬斯卡彭起司, 烤堅果

Meringue, Mascarpone cheese, Nuts

這是一人一份甜點. 吃完主餐薩索雞腿後, FirePlay 主廚示意店員將燈調暗, 音樂是主廚自己挑選,火燒君度橙酒豪邁地淋於義式蛋白霜上 (圖一為 FirePlay 餐廳提供), 感官饗宴, 就如歌劇到最後才是高潮迭起的Moment. 柔和慕斯與太妃糖甜香搭配出乎意料地美味, 烤堅果則是增加不同的口感, 吃起來意猶未盡,  連甜點都充分表現主廚 Nick 的個人風格.
This dish is solely for one person. Chef Nick performs a great fire show by lighting up the Cointreau and pour over the Meringue (Picture 1 is provided by the restaurant). The fluffy mousse pairs great with the sweet toffee flavor along with nutty texture. This signature dessert dish in indeed delicious and represents Chef Nick’s personal character.

由於已經是晚上, 我怕喝咖啡會睡不著, 因此我選擇烏龍茶, 由 “山山來茶”所提供, 茶香十足, 喝起來並不會過於濃郁.
Since it is already night time, I select tea instead of coffee. The tea is SHA SHA Tea brand. There are fair amount of tea aroma but with little of tea caffeine.

 

Vigneti Del Salento Zolla Salice Salentino

FirePlay 有提供酒單, 這款酒的葡萄品種是義大利當地品種 – 80% Negromaro 20% Malvasia Nera, 熟透李子香氣與風味為主導,喝起來並不是高單寧 這款紅葡萄酒是點來搭配松板豬與薩索雞腿這兩道菜餚.
FirePlay Taipei has wine menu. This Italian wine has 80% Negromaro and 20% Malvasia Nera, which are local Italian grapes. The rip plum flavor dominates both tastebuds and nose. It is not high tannin. This wine is to pair with the pork and the Sasso Chicken.
