Chou Chou 法國餐廳是台北忠孝敦化捷運站異國料理美食之一, “酥脆田雞腿”和 “油封鴨腿”是兩道 Chou Chou 餐廳的固定招牌料理.
Chou Chou Restaurant is one of the French cuisine restaurants near Taipei Zhongxiao Dunhua MRT station. Its frog leg and duck confit are their signature dishes.

從忠孝敦化捷運站5號出口左轉直走即可看到顯眼的 Chou Chou 餐廳, 與 “Le Blanc 餐廳” 和天母甜點店 “Sweet 16 Patisserie”一樣皆是用水軍藍 (Navy Blue) 與白底做為餐廳招牌. 走進餐廳裡則是有開放式廚房與吧台座位, 跟台北永康街的 “C’est la vie 五味瓶 法式餐館“設計頗為相似. 坐在吧台可以看到主廚, 副主廚和甜點主廚 (Pastry Chef) 從容地做著自己專屬的工作, 與 “FIELD 小田食光” 一樣的大理石桌則是提升整體餐廳的高貴典雅感, 餐廳內也有 12 人座的包廂和適合公司部門聚餐的22席半開放式包廂 (文末影片)
Its restaurant sign is navy blue and white, which is exactly like “Le Blanc” and “Sweet 16 Patisserie”. The restaurant has open kitchen and bar tall chairs just like another French Restaurant “C’est la vie” near Dongmen MRT station. I was seated at the bar tall chair section, so I can see the collaboration between executive chefs, sous chef and pastry chef. The marble table is similar with “Field Restaurant”, which is quite elegant. There are also 12 seats private dining room and large 22 seats dining room as well (video at the end of article)
主廚/老闆林明健目前在台北有兩家餐廳 – Longtail 與 Chou Chou, 兩家走完全不一樣路線, Longtail 是都會男女晚上小酌用餐的無國界料理, Chou Chou 是屬於小資男女的法式平價餐酒料理, 而非多數台灣人想到的分子料理或是像 L’ATELIER de Joël Robuchon 侯布雄法式餐廳的高級餐點.
Executive Chef Lam Ming Kin owns two restaurants in Taipei City. One is called Longtail, which is more like high-cost dining restaurant with fushion cuisine and bar. As for Chou Chou, it is more like price-friendly French Bistro. The price is not even closed to L’ATELIER de Joël Robuchon. The price is way lower than expected.

當天用餐是裸麥麵包搭配鹽之花奶油抹醬, 服務生解釋手工麵包皆是店內製作, 麵包口感鬆軟, 但最出色的是Chou Chou 法式料理精心設計的鹽之花奶油抹醬, 跟 “裸餐酒 (Naked Bistro)” 的煙燻風味奶油一樣精彩, 主廚將少許法國著名的半透明鹽之花結晶灑在米黃色奶油上, 抹在麵包上更為麵包與奶油加分.
Their custom-made their bread in the restaurant. Soft breads are full of wheat aroma. The best part would be their Fleur de sel butter, which is as excellent as the smoked butter at “Naked Bistro”.

酥脆田雞腿是固定菜單, 但是佐醬會因季節不同會有所變動. 田雞腿沾上極為薄麵粉再煎至褐黃色, 並不是油炸, 吃起來不會過於油膩且肉質相當嫩, 非常受到顧客喜愛, 至於酸豆檸檬醬則是增加風味. 當我看到菜單上 “佐鷹嘴豆泥 (Hummus) ”蠻驚訝, 因為是中東料理之一, 鷹嘴豆 (Chickpeas) 的外型像蓮子, 通常將鷹嘴豆煮熟後會加上 Tahini (中東白芝麻醬) , 大蒜和橄欖油一起打成泥, 那天單吃時依舊是以豆泥為主導, 芝麻與蒜味並沒有非常顯著, 感覺有點多餘, 我個人認為酥脆田雞腿和酸豆檸檬醬已經足夠滿足來用餐的客人.
Frog leg dish will always be on the menu, however, the side paste/sauce are different in every season. Chou Chou restaurant’s frog legs are not fried, instead, it is pan-fried with small amount of flour. The skin becomes very crispy and with only fair amount of fatness. The leg meat is extremely tender., along with the Grenobloise. I was surprised to see Hummus on the menu. Hummus is originated from Middle East. Usually, the chickpeas would be cooked with Tahini, garlic, and olive oil. However, I personally think that it would be better to skip the Hummus.

Chou Chou 法式料理餐廳裡有一台乾式熟成冰箱, 放著店內招牌肉品- 宜蘭櫻桃鴨和美國牛肋眼, 基本上櫻桃鴨跟酥脆田雞腿一樣是固定菜單, 配置也是每季會不同. 金屬鍋霸氣地端上桌, 放置中間的鴨腿表層相當油亮與酥脆, 網路上寫著 “宜蘭櫻桃鴨以香料醃製十二小時，再低溫油封慢烤十二小時”, 切開鴨腿時, 有酥脆的聲音, 油脂緩緩地滴到下方的白豆青花菜泥, 我會建議剛開始一併同時品嚐酥脆鴨皮與鴨肉, 享受溫熱適量的鹹香油脂在口中的感覺, 雖然鴨肉吃到中間時有點乾, 但可適量搭配白豆青花菜泥. 也許是因為剛已經吃過酥脆田雞腿料理裡的佐鷹嘴豆泥, 總覺得過多白豆泥掩蓋經典油封鴨腿的酥脆感, 若是少量或是搭配普通的鮮蔬即可, 稍微設計擺盤, 讓主角凸顯出該有的特質.
Chou Chou restaurant has a dry ager refrigerator at the end of hall way. Inside, it has their famous dish ingredient – duck and prime ribs. The duck leg is placed at the middle of the pot. Its shiny and oily skin are very eye-catching. Other bloggers wrote “The duck is marinated with spices for 12 hours, and aged for another 12 hours”. The duck skin has crispy sound as expected. However, the meat is getting drying toward the end. But with the Cannellini and Cauliflower paste would increase its moisture level. But, honestly, I personally think that this dish should pair with simply vegetables or less paste. The paste would soften the crispy skin and tender meat, which is the selling points of this dish.

檸檬塔是近期台灣人愛的甜點, 很多咖啡店 (Fika Fika Cafe) 和 甜點店 (Sweet 16 Patisserie) 都紛紛推出檸檬塔甜點. Chou Chou 的甜點主廚設計將一部份檸檬內餡做成半圓型狀放置在檸檬塔上, 在燈光照射向呈現亮黃色, 檸檬內餡相當飽滿卻不會酸度擾人, 十足檸檬風味, 蛋白霜的裝飾有立體感,這道甜點的塔皮不光是單純的塔皮, 而是有加上萊姆皮碎屑 (Lime Zest) 增加更多風味, 雖然塔皮過硬難切, 但也造就簡約不掉屑的擺盤.
Just like “Fika Fika Cafe” and “Sweet 16 Patisserie”, Chou Chou restaurant also offers Lemon Tart. The lemon flavor custard has fair amount of acidity. The meringue decoration adds more design into this dessert dish. Even though the tart is difficult to cut down, it is still delicious since it has lime zest in the middle.
