位於台北四維路的 Chinois 餐廳2020 新開幕餐廳之一, 每一道菜餚以中文名稱命名, 以西式烹飪手法來完成 Chinois 菜單.
Chinois Taipei is one of the newly-opened restaurants at 2020. Each dish is named with Chinese traditional dishes but with western cooking skills.

Chinois 餐廳離大安捷運站 6 號出口大約步行15 分鐘,大安站附近的停車場比想像中地多 (圖一), 四維路巷弄內的高級餐廳眾多, 包括 “牡丹 天ぷら – 頂級天婦羅” , “Danny & Company” 與 “蘭亭燒肉”, Chinois 餐廳外觀頗為低調, 內部裝潢則是以藍白灰色為主, 與 “Le Blanc”的天空藍色調不同視覺感, 桌上藍色餐巾摺得像日本和服浴衣, 內部裝潢最美的地方莫過於廚房外的圓形玻璃, 餐廳也有單獨包廂適合家庭聚會. 媒體頻報導餐廳合夥人是紅豆食府千金蔡依倫, 主廚則是萬豪酒店 INGE’S Bar & Grill 前主廚 Vincent. 菜單皆是以套餐為主,低消則是每人一份套餐. 與 ”B.B.R. 豐舍“ 最大的不同則是 Chinois 每一道菜餚以中文名稱命名, 以西式烹飪手法來完成. 訂位則是用 inline ( https://inline.app/booking/chinois/chinois-tpe ). 對了, 我必須要說我很少吃正統的八大菜系中式餐廳, 因此我自認文章內容非專業, 只是個人主觀喜好.
Chinois restaurant is near Da’an MRT station about 15 minutes walking distance. There are quite a few parking lots than expected. The restaurant indoor colors are mainly white, grey and blue, which is a bit different from “Le Blanc restaurant “ Sky Blue. The most impressive part would be that you can see the kitchen from the circle shape window. There is also one large private dining room/space too. Chinois restaurant only offers set. the minimum charge would be one set per person. Different from “B.B.R. Restaurant”, each dish in Chinois restaurant is named with Chinese traditional dishes but with western cooking skills. They offer online reservation ( inline ( https://inline.app/booking/chinois/chinois-tpe ). I rarely eat Traditional Chinese restaurants at Taipei City. So, I consider this article is just personal opinion instead of professional suggestion.

梅醬鳳梨, 絲瓜蟹肉小籠包 , 無錫脆鱔餅

Seasonal Fresh Fruit with Dried Plum Sauce, Loofah and Crab Dumpling with Zhenjiang Vinegar, Eel Tartare

這三道 Appetizer 是一起 serve 端上桌, 整體視覺設計有點類似 “Verde 蔬食餐廳”的小點, 梅醬鳳梨與絲瓜蟹肉小籠包 放在具有透視感的木盒上方, 無錫脆鱔餅則是在木盒裡. 店員建議從梅醬鳳梨開始品嚐, 鳳梨鮮甜並沒有被梅子醬蓋過.小籠包上類似魚卵其實是鎮江醋, 入口時, 醋的酸勁完全覆蓋著絲瓜與蟹肉的味道. 我會建議在此時喝一杯水沖淡醋的風味 (水資 /NTD $100). 至於第三道小點, 因為我沒吃過正統的無錫脆鱔餅, 我只能說酥脆的春捲皮比鱔魚更具有記憶點.
All three appetizers are served together. The overall dish display is similiar with “Verde Restaurant”’s appetizer. The pineapple and the dumpling are placed on the top of the container and the eel tartar is inside. The pineapple remains refreshing and sweet, which is not covered by the plum sauce. The roe-design on the dumpling is actually Zhenjiang Vinegar. Sadly, the vinegar overpowers the loofah and crab flavor though. I would suggest to drink water after eating the dumpling (Water Fee: $100/per person). As for the third appetizer, the spring roll is crispy and delightful.

紹興醉雞

Drunken Chicken, Wolfberry & Aged Shaoxing Sauce, Terrine

許多人對雞肉用舒肥烹調方式本來不太喜歡, 也提到醉雞用舒肥方不太能理解, Chinois 餐廳本來就不是正統中式餐廳, 期待吃到正統白斬雞的程度並不高. 只是主廚在陳年紹興酒部分下手有點重, 酒味過濃,需要喝蠻多水才能沖淡味蕾.
Many people do not like sous-vide cooking style, and they also do not quite understand why the chef uses sous-vide on the drunken chicken. But, Chinois restaurant is not a traditional Chinese restaurant though. So, I didn’t expect to eat the traditional drunken chicken at all. However, the shoaling sauce alcohol level is higher than expected. You would need to drink lots of water to wash off the strong flavor.

 

滷南非鮑魚 & 過貓沙拉

Braised Abalone, Vegetable Fern Salad, Ginger Oil, Golden Needle

之前都是冷菜, 此道菜餚開始是屬於溫熱型. 當時服務生講了一句話: “ 我們是想用新鮮鮑魚做成像中式罐頭鮑魚的口感與風味”. 那時我心裡想著 “也許是想將餐廳理念反映在料理上吧”, 我世面見得不多, 這倒是我第一次吃到將新鮮口味做成像醃製罐頭風味的菜餚, 也許是可能剛吃完醉雞, 鮑魚的味道偏淡, 並沒有想像中地鹹.
The waiter mentioned “We would want to braise the fresh abalone. So, its texture and flavor would be similar Chinese canned abalone. Maybe because the drunken chicken flavor is too strong. The abalone flavor seemed to be a bit soften, which is not very salty as expected.

 

貝酥百合皎白筍

Lily Bulb, Water Bamboo, 48 Hour Chicken Broth, Crispy Scallop.

貝酥其是干貝炸成酥脆切絲放置於百合食材上, 單吃沒有油膩感, 而是爽脆沒有海鮮味. 百合與皎白筍是經典絕配, 最令人回味的莫過于濃稠程度逼近醬汁的熬煮 48 小時雞湯, 可惜整體份量偏少.
The crispy scallop is actually the fried scallop cutting into shreds. It doesn’t taste oily, instead it is just simply crispy. The lily bulb and the bamboo matches perfectly well. The most impressive part would be the 48 hours chicken broth at the bottom of the plate. The overall quantity is not as much as expected.

 

糖醋鮮魚

Crispy Seasonal Fish, Beetroot Sweet & Sour Sauce

店員提到食材採用日本迦納魚 (Wiki: 迦納魚 = 真鯛 ), 粉色醬汁來自甜菜根, 秋葵則是賦予濃稠口感, 糖醋味道就如法式料理一樣細柔, 我一度傻傻地期待會像美式糖醋魚那樣的直球衝擊.
The waiter stated that the fish is Japanese snapper. The pink sauce is from the beetroots. The okra offers the thick texture to this dish. The sweet and sour sauce is light. I would expect sweet & sour sauce is as strong as the sweet and sour sauce at USA.

醃篤鮮

Shanghai Creamy Chicken Soup, Soy Milk Puree

我沒吃過醃篤鮮 – 道地上海菜, Chinois 主廚用伊比利火腿代替金華火腿, 湯頭不夠濃郁, 也許是因為豆漿 puree 比例過高? 我反而比較期待之前的“貝酥百合皎白筍” 雞湯在這道菜餚裡.
I never tried this Shanghai Traditional Dish. Chinois chef uses Iberico Ham instead of Jinhua Ham. Maybe due the the soy bean puree is too high, the overall soup texture doesnt taste thick enough. I was actually expected the previous 48-hour chicken broth in this dish.

蔥火靠子排

Scallion-Onion Spare Rib, Pumpkin Puree

菜單主餐有一選項是戰斧牛排供六人分享需預訂, 羊排的豆瓣醬是辣味但是分開放, 水煮美國牛排 (圖一) 也是辣的, 所以我只好點蔥火靠子排, 而且主餐只有這道不用加錢.我個人是期待豬肋排視覺是”更厚一點“ (就像美國BBQ那樣), 整體是鹹味主導.
The Tomahawk Steak on the menu would need to be reserved and also suitable for 6 people to share. The chili bean sauce is placed on the side. The US Prime Steak  (Pic 1) is also spicy with chili oil. So, I ordered the the spare rib as my main course. This is also the only dish that does not add extra charge. I would wish the image of the pork rib would be thicker as the USA BBQ. The salty flavor dominates this particular dish.

 

伊比利菜飯

Iberico Vegetable Rice

我知道我的吃法不正確, 但是主餐豬肋骨的香鹹肉味搭配飯不錯吃, 只是菜飯的特色反而被忽視.
I know that my way of eating this rice dish might be incorrect. But the salty pork matches great with the vegetable rice.

 

芋泥酥餅 & 芋頭冰沙西米露

Taro Mille Feuille & Taro Sorbet with Coconut Tapioca

還好我”只不吃”蒸芋頭, 芋頭內餡或是冰沙我 ok. 甜點視覺感不錯, 也不錯吃. 只是我希望甜點視覺設計可以更細緻豐富一點, 畢竟帶些法式風格的甜點在許多人心目中就是美.
The overall dessert image is great and tastes good. However,I would expect the dessert display image could be more elegant and with more beautiful French dessert characters.

 

柳橙杏仁脆餅

Orange Almond Cookie

視覺頗簡單, 柳橙風味充足, 我個人是覺得用上ㄧ道西米露做結尾算是比較適合.
The orange flavor is strong with simply display. However, it would be better to serve the Taro Mille Feuille dish as the last dish to finish this set.

 

單杯酒 Single Glass Wine

其實我蠻驚訝 Chinois 餐廳用的是無腳酒杯, 畢竟另一家 ”Bottless 非瓶餐酒館 ”的用餐風格是屬於輕鬆, 與 Chinois 餐廳的拘謹用餐氣氛不太ㄧ樣啊. 這杯紅酒單寧高, 當時我要求酒可以先 serve, 沒想到我等主餐等到我的酒都醒了, 單寧變得柔順.
Honestly, I was surprised that Chinois uses tumbler shape wine glass instead of the traditional wine glass. “Bottless Bistro” dining environment is casual. But Chinois restaurant’s dining environment is more uptight. The tannin of this red wine is high. I asked the wine to be served first. However, since the overall dining time is more than 2 hours. The tannin becomes much more softer when I taste the main course.

結論 Conclusion

當天用餐的人頗多, 餐廳包廂滿, 且其他座位九分滿, 因此當天用餐外場人似乎不夠, 廚房內場需要出來協助, 導致用餐時間拉長, 建議留 2.5 ~ 3 小時用餐. 我個人覺得你如果喜歡 “ taïrroir 態芮 “ 或是 verde 蔬食餐廳, 你應該會喜歡 Chinois 餐廳.
There are many people dining at Chinois restaurant that day. The serving time is extended since there aren’t much staffs. I would suggest the guests to expect 2.5 ~ 3 hours dining time though. If you like “taïrroir restaurant” or “verde restaurant”, you would like Chinois Restaurant as well.
