Brown Sugar》 台北信義區黑糖爵士餐廳 | Live Jazz Restaurant

位於台北市信義區的Brown Sugar除了提供各國料理與創意調酒外, 也有現場演奏爵士音樂的餐廳, 每天晚上皆有精彩的演奏節目, 今天有這個榮幸可品嚐與體驗Brown Sugar的餐點與演奏.
Brown Sugar restaurant is located at Taipei Xinyi District for quite a while. Besides offering international cuisines, creative cocktails and wines, there is also Live Jazz Show every night. Today, I have the opportunity to try out their foods and also their shows.

餐廳地點非常地隱密, 在新光三越A11旁停車場的對面,  也就是在一蘭拉麵附近, 過松仁路後,即可看到Brown Sugar的招牌, 走進兩棟大樓中間的走道抵達後方會看到新裝潢的Brown Sugar 餐廳大門. 餐廳裡有吧台高腳椅, 各種不同低消的沙發區, VIP 區與表演區前方的小圓桌.
It is not easy to find Brown Sugar restaurant, which is located near A11 parking lot and ICHIRAN RAMEN TAIWAN. After crossing Song-Ren road, you would see the sign of Brown Sugar pointing to the path to the back. Entering the restaurant, there are several large sofa areas, dining tables and high chairs near the bar.

 

 

菜單共有三大本- 分別是料理, 酒與飲料. 我跟朋友則都選擇了套餐.
There are three large menus – Cuisine (White), Wine (Red), Beverage (Black). My friend and I chose the dinner set.

 

 

套餐沙拉: 煙燻鮭魚蛋豆腐沙拉佐胡麻醬

English Name: Smoked Salmon, Egg Tofu Salad with sesame sauce dressing
炸的雞蛋豆腐是沙拉較少見的配料, 帶有芝麻香味的胡麻醬搭配口感清脆的生菜. 芝麻香味佈滿整個味蕾, 煙燻味十足的鮭魚則是帶給整體沙拉更多風味.
The fried egg tofu is rare for salad ingredient in Taiwan. The smoked salmon flavor is not covered with the dressing. Fair amount of sesame flavor pairing with crisp salad is perfect for the start of appetite.

 

 

套餐沙拉: “煙燻雞胸凱薩沙拉”

English Name: Caesar Salad with Smoked Chicken Breast
起司豪邁地灑在雞肉沙拉上, 雞胸肉本身不乾澀, 這是一道經典的凱撒沙拉.
Cheese spreads all over the chicken salad. The chicken breast meat itself is not dry. This dish is a classic Caesar salad.

 

 

套餐配湯: 義式南瓜湯與米蘭牛肉洋蔥湯

English Name: Pumpkin Soup & Milan Style Beef Onion Soup
濃郁的南瓜湯搭配義式香料有著傳統風味, 經過奶油的點綴, 讓湯頭口感更加綿密.米蘭牛肉洋蔥湯的“米蘭”二字其實是加了義式香料, 洋蔥提味讓牛肉更加鮮美, 喝一口有點像在喝台南牛肉湯.
The pumpkin soup has thick aroma of pumpkin with fair amount of Italian spices. With the butter garnish on the surface, the soup texture becomes creamier. As for the name, “Milan Style” means the chef adds more Italian spices into this soup. The onions bring out more meaty flavor.

 

碳烤美國菲力牛排佐野蕈醬汁

English Name: Grilled US Beef Tenderloin with Wild Mushroom Sauce Set

餐廳是用瓷盤, 於是點了七分熟,美國菲力牛排也就是所謂的腰內肉, 菲力的特色是油花較少, 瘦肉較多, 也是公認牛肉最軟嫩的部位, 料理單上還有紐西蘭菲力牛排, 但價格較低, 相較之下, 美國牛肉較有迷人的牛肉香味. 厚實的牛排搭配料理裡有台灣較少見的櫛瓜與玫瑰鹽, 在擺盤設計上再加入季節蔬菜與綿密馬鈴薯泥. 切開牛排後迫不及待先咬下一口, 肉質不會過澀. 第二口則是搭配顆粒較大的玫瑰鹽提鮮, 帶出更多香醇風味. 菲力吸收了野蕈醬汁後則更討台灣人喜愛.

Since the restaurant uses porcelain plate, I decide to order the steak with medium cooked. Tenderloin is famous for its tenderness and less fat than others. Comparing with New Zealand tenderloin, the US beef has more meaty flavor. The thick steak pairs with zucchini, pink salts, seasonal vegetables and creamy mashed potato. The steak is grilled at the right level and not dry. Pairing with grind pink salts brings out more meaty flavor. As for the mushroom sauce, it suits most Taiwanese’s flavor.

 

 

圓鱈魚佐菠菜奶油醬

English Name: Pan Seared Toothfish with Spinach Creamy Sauce
Set Price: $ 1,310

少許帶有脂肪的魚皮包圍著無刺圓鱈, 咬一口時, 肉質軟嫩. 菠菜奶油醬並不是將菠菜與奶油醬打在一起, 而是分開, 醬汁也不會過於稀釋, 足夠的奶油香氣搭配帶有少許海鮮風味的鱈魚很適合.
Fair amount of fish skin fats surrounds the fish meat. The fish meat is tender as expected. The spinach sauce is not watery with enough creamy texture. Fish with seafood flavor and creamy sauce pair well together.

 

 

套餐甜點: 黑糖焗烤野莓布丁

English Name: Brown Sugar Creme Brûlée with Fresh Berries
野莓配料並不是在布丁 (烤布蕾) 上裝飾, 而是加入烤布蕾一起焗烤, 讓酸野莓風味元素徹底地注入微甜的烤布蕾.
The berries ingredient is not for garnish purpose. It is added inside creme brûlée and bake together. The creme brûlée has both sour fruity flavor and hints of sweetness.

 

 

套餐甜點: 起士蛋糕

English Name: Cheese Cake with Fresh Fruits
此款甜點的擺盤設計感十足, 黃色的起士蛋糕品嚐較為濃郁, 再搭配香脆哈密瓜, 為這次體驗劃下句點.
The plate design is creative. Cheese cake tastes creamy. The fresh honeydew  brings the ends of this trial taste.

 

 

長島冰茶

English Name: Long Island Ice Tea
(Vodka, Gin, Rum, Tequila, Triple Sec, Lemon Juice, Syrup,Coke)
Price: $ 450
Foodelicious 美味程度:👍👍👍
* 警語: 飲酒過量,有害 (礙) 健康*

長島冰茶裡面並沒有茶, 而是用四大基酒-伏特加, 琴酒, 蘭姆酒, 龍舌蘭酒調配, NTD $450是五年前的價格, 並無漲價, 喝下第一口, 類似檸檬紅茶風味依舊, 但酒精後勁依舊強, 尤其是龍舌蘭與伏特加風味最為明顯.
Long Island Ice Tea doesn’t contain tea. It is used with Vodka, Gin, Rum, and Tequila. NTD $450 is the price 5 years ago and now. The cocktail tastes like lemon black tea flavor. However, the alcohol degree is still high, especially the tequila and vodka flavor.

 

雪白氣球

English Name: Snowy Ballon
(Vodka, Bellabomba, Blackberry liqueur, Strawberry liqueur, Red berries puree, cream, milk, syrup)
Price: $ 420

警語: 飲酒過量,有害 (礙) 健康

雖然名為雪白氣球, 但此款調酒為淡粉紫色. 基酒裡有較少見的奶油蛋黃酒 (Bellabomba), 單喝奶油蛋黃酒會有布丁風味再加上酒精, 加入此款基酒後, 雪白氣球的口感更加圓潤, 但由於多種莓果類的調配, 整體呈現酸甜風味.
Even though the name is Snowy Ballon, the cocktail color is light purple color. The cocktail has Bellabomba, which has a bit egg pudding flavor if drink alone. The cocktails becomes a bit creamy with sour berries and sweet flavor.
