重新裝潢 A CUT 牛排館 ( A CUT STEAKHOUSE ) 是 2018 台北米其林餐盤餐廳名單之一, 位於國賓飯店地下一樓.
The remodeled A CUT STEAKHOUSE is one of the “2018 Michelin Plate Restaurants- Taipei” restaurants. It is located at B1 of Ambassador Hotel.

國賓飯店位於雙連捷運站與中山捷運站的中間, 走進飯店後左轉, 會看到水藍色的門隨著紅毯階梯往地下室走, 眼前出現類似 “小後苑 Backyard Jr.”的酒牆裝潢, 再加上寶石般亮麗吧台, 整個品酒空間可以稱作亮麗輝煌.
Ambassador Hotel is located near in between Zhongshan MRT station (R11) and Shuanglian (R12). Entering the hotel and then turn left, you would see the navy blue door and walk down to the stairs in red carpet. You would see the wine/whisky wall just like “Backyard Jr.”. With with bright color bar and light, the bar area is far more impressive.
A Cut 餐廳有兩個小包廂和一個大包廂 , 我被安排坐在靠近大理石料理台開放式廚房旁的兩人座位, 剛開始坐下時有少許油煙味, 展示室跟 “No. 168 Prime 牛排館”一樣擺放著各式和牛. 但我會建議坐在餐廳更內部的座位, 藍寶石般水晶燈呼應著 A CUT 牛排館的新主題顏色 – 藍色, 以往的成穩黃光皆換成明亮白光, 雖然是地下室, 但用餐氛圍並不會過於吵雜. 水資為 NTD $90/人, 品牌不再是 S. Pellegrino 跟 Acqua Panna, 我選的是德國品牌 LIZ 礦泉水.
A Cut restaurant has three driving dining room, two small and one large. I was seated near the open kitchen area. However, you could smell a bit of smoke at the beginning. Various Wagyu Beefs are displayed at the custom-made shelf, just like in “No. 168 Prime Steakhouse”. The sapphire color chandelier upgraded the whole dining environment after remodeling. The water is NTD $90 per person. But the selection is no longer S. Pellegrino and Acqua Panna. I selected LIZ mineral water for the dining experience.

一份有兩款麵包,吃完可續, 熱騰騰的歐式麵包雖然沒有麥香, 但整體鬆軟並不會過硬, 餐廳有提供奶油抹醬, 但整體並沒有特別之處.
Each person has two types of bread, if not enough, you can ask for more. Even though the hot breads don’t have wheat aroma, generally speaking, the taste is softer than expected. The restaurant also offers butter. But, the whole dish is just an average starter.
開胃菜 – 蘑菇卡布奇諾湯
Appetizer – Mushrooms “Cappuccino”

有些開胃菜需要多加錢, 例如生蠔. 我選的是不用多加錢的蘑菇卡布奇諾湯. 跟 “No. 168 Prime 牛排館”的蘑菇卡布奇諾湯最大的不同除了用廣口湯盤外, 湯頭明顯地相當濃稠, 乳白色奶泡結構也紮實許多, 奶油風味偏重, 但每一口都是蘑菇顆粒, 是我認為台北最好喝的蘑菇湯.
Some of the appetizers on the menu would need to pay extra (for example, fresh oyster). I choose the mushrooms cappuccino with no extra charge. “No. 168 Prime Steakhouse” has the similar soup, but “A Cut Steakhouse” has better mushrooms cappuccino. The soup plate looks better and more elegant with thicker soup base. The foam texture is more dense with more creamy flavor. Each sip has also fully mushrooms taste. It is so far the best mushroom soup in Taipei City.
Four Types of Salts
店員在上牛排之前會提供四款鹽, 從左至右是夏威夷竹葉鹽, 喜馬拉雅山玫瑰鹽,英國煙燻鹽和法國鹽之花. 市面上較少見的夏威夷竹葉鹽, 我原本以為只是噱頭, 很意外地, 淡綠色顆粒鹽居然有像竹筒飯的香氣. 英國煙燻鹽會比法國鹽之花更適合搭配牛排.
Before serving the steak, the staff would bring out 4 types of salts. From left to right, Hawaii bamboo salt, Himalayan Rock Salt, English smoked salt and Fleur de sel. The most interesting type would be the Hawaii bamboo salt. Surprisingly, the bamboo salts reminds me of the Taiwanese bamboo tube rice. The smoked salt would be more suitable to pair with the steak than Fleur de sel.

250 公克大約 8.8 oz, 我點的是黑胡椒風味, 而不是原味. 厚實牛排表層裹滿閃爍的黑胡椒顆粒, 肉香並沒有被黑胡椒香氣蓋住, 用專屬 A Cut 頂級牛排刀輕鬆切下一塊先品嚐, 三分熟造就粉嫩顏色, 黑胡椒顆粒提味效果佳但不會過辣, 紐約客牛排本身就沒有多餘油脂, 只是我不太習慣幾乎每一口都是有經典嚼勁口感, 但是每一口確實多汁美味. 我選的配菜是香菜萊姆奶油甜玉米, 吃起來以奶油風味為主, 並沒有額外的香菜或是萊姆風味, 我會建議點別的配菜.
250g is about 8.8 oz. I ordered black pepper flavor instead of original. The thick steak is fully wrapped with black peppers. The meaty aroma doesn’t cover the black pepper aroma. You can cut the steak with professional A CUT steak knife easily. The medium-rare beef is evenly pink. The grind pepper is perfect for bringing out more flavor, but yet not too spicy. The Striploin Steak is famous for the dense meat texture and chewy taste. However, I am still not used to “every bite” is chewy texture though. Each bite is juicy and delicious though. I choose the “Coriander-Lime Butter Corn”, which doesn’t have any flavor of coriander nor lime. I would suggest order other side dish.

聽朋友說 A Cut Steakhouse 的舒芙蕾很厲害, 之前在“Fujin Tree Landmark 富錦樹咖啡”點過沒有茶香的鐵觀音提拉米蘇, 這次下定決心要再點跟茶香有關的甜點. 挖起一口淺褐色舒芙蕾, 濕潤口感如預期, 濃郁強烈的茶香在口中散開, 再搭配白桃冰淇淋的酸甜, 也許這就是所謂的平衡感. 至於拿鐵的部分, 苦味太過明顯, 建議換成茶會比較適合.
Friends mentioned that A Cut Steakhouse’s shuffle is delicious. Few days before, I ordered Ti Kuan Yi Tiramisu with no tea flavor at “Fujin Tree Landmark”. Now, I decided to order the Ti Kuan Yi Tea souffle as my dessert. The shuffle is moist and soft, and with full of tea aroma. Pairing with the white peach gelato with acidity is perfect. As for the latte, the bitterness is overwhelmed. I would suggest to order tea.
