(Closed Down) Newly-opened TONKOTSU ITTOU is another Japanese Ramen oversea branch. Its specialty is mixed pork and fish soup based. Interesting enough, they now are promoting Taiwan Limited Edition – Spicy 12 Flavorings Ramen.
辛12香拉麵限定版有分標準版跟特製版, 標準版($210)只有一片叉燒, 特製版($260) 則是有三片叉燒和半個半熟蛋.
Regarding the particular special edition, they have standard version (1 sliced pork NTD $210) and upgrade version (3 sliced pork and half boiled egg $260)

拉麵擺設相當地簡單, 色系並不是單一鮮紅色, 而是類似紅磨坊般充滿橘紅與鮮紅色的視覺效果, 濃郁湯頭(?) 在邊緣留下痕跡, 品嚐一口後, 舌尖立即感受到多種辛香料的重大衝擊, 並無察覺到店家所敘述的五種味噌口味, 每種香料各有特色,且搭配出所謂的多層次口感 – 先微辣後麻但不膩. 若喜歡重口味的饕客, 可再搭配店家帶有辣椒籽醬增加更多燦爛且強烈的辛辣味. 其他配置則較為遜色, 拉麵本身較為軟, 半熟蛋則是表現平平, 單薄的叉燒切片油脂較多, 瘦肉並無吸收湯汁精華, 新鮮香菜的主要作用並非平衡辣味或是盤飾, 而是所謂的“提味”, 人在品嚐辛香食物時, 舌尖因為感受到燒灼而變得更敏感, 帶有檸檬清新香味的香菜反而凸顯出”辛12香拉麵”的深度風味, 國外的資深主廚通常拿香菜 (芫荽)搭配野豬肉或是牛排, 提升菜餚整體風味. 若是想要嚐鮮, 可點這款餐點.
The display is simple, however the color style is more like “Moulin Rouge” instead of solely red. The edge and surface of the broth (?) showed its thick base. Without hesitation, carefully sipped a little at the ramen soup. The tastebuds immediately feel the huge impact of different kind of flavorings, but without miso flavors as the news mentions. Each spice has its own character but mixed well to create multi-layer flavors that stays in your mouth for a while. With a mild-tolerant spice food customer, the soup base can fulfill your appetite without burning. If you are a regular spicy food eater, you can add their hot pepper sauce to increase its strength.As for other side dishes, the noodle is soft. The half-boiled egg isn’t at its best quality. All three thin sliced porks have more fats, therefore it is difficult to absorb the soup essence. Surprisingly, the cilantro is not just a garnish nor balance the dish spicy flavor. Cilantro lemon-refreshing character is to “highlight” the spicy flavor.

這是二訪時點的拉麵, 湯頭確實濃厚, 但豚骨風味多於魚介風味許多, 與麵屋武藏比較, 麵屋武藏的魚介湯頭風味較強也比較容易入口, 麵本身也是偏軟, 叉燒肉的部份稍薄, 並不是非常討喜, 半熟蛋的好吃度有增加. 我個人比較喜歡麵屋武藏的濃厚魚介拉麵
This is the second visit. the soup broth is definitely thick. However, the pork flavor covers the fish broth completed. I prefer the fish broth from with MENYA MUSASHI Ramen. The ramen itself is soft. The sliced pork is a bit too thin. But the half-boiled egg is better than last time. I personally like Menya Musashi Ramen.
豚骨一燈在菜單上提到店家使用日本麵粉自行來製作麵條, 但其實麵烹煮的時間才是關鍵, 多數台灣人喜好軟麵, 但是拉麵饕客其實較喜歡硬拉麵, 這也是為何有些日本拉麵店會問客人麵的軟硬度喜好, 往後也希望豚骨一燈會有麵的軟硬程度選擇.
TONKOTSU ITTOU stated that they use imported high quality Japanese flour to make their own noodle. However, the cooking time might be the key point instead of the raw material. In Taiwan, the staff will ask you if you have hard, standard or soft. But sadly, TONKOTSU ITTOU didn’t have this kind of service.
